    Pour chopped white chocolate, 1/4 cup creamer, and heavy whipping cream into a microwave-safe bowl.

    Heat on High for 1 minute. Remove and fold 10 times. Let sit for 3 minutes, then fold 10 more times.

    Return to microwave and heat for 30 seconds. Let bowl sit in microwave for 3 minutes. Remove and stir slowly until melted. (If needed, heat for 10-second increments, stirring after each, until melted).

    Press a piece of plastic wrap over the surface of the white chocolate ganache and allow it to cool at room temperature for 3 hours.

    Preheat oven to 350° F. Spray 14 mini Mason jars with baking spray. Bring a pot of water to a boil.

    Place the cake mix, creamer, water, oil and eggs in a large mixing bowl. Blend with an electric mixer on Low speed for 30 seconds, then increase to Medium speed and beat 2 minutes longer.

    Divide batter evenly among the 14 mini Mason jars.

    Set jars on a baking sheet. Place on center rack in oven then carefully pour boiling water into pan, filling it about 3/4- inch high. Do not spill water into jars.

    Bake until cakes are golden brown and spring back when pressed lightly, 20-24 minutes.

    Remove jars from water and set on a cooling rack. Allow cakes to cool completely.

    Cut the domed tops off each cake. Peel plastic wrap off the white chocolate ganache.

    Beat ganache with an electric mixer for 10-15 seconds, just until it becomes fluffy.

Whipped Caramelized White Chocolate Ganache can take an ordinary cake, cupcake or cookie and turn it into something very special. If you haven’t tried caramelized white chocolate yet, you are going to want to now!

It’s official, I am obsessed.

Caramelized white chocolate is my new favorite ingredient. It all started with a dessert we ordered at ABC Cocina. We had a rice pudding that could have been ordinary but a touch of caramelized white chocolate made it anything but ordinary. I couldn’t get the flavor out of my head. I remember Kate waxing poetic about it a while back, but truly I didn’t imagine the love affair that I would develop.

Imagine that white chocolate and caramel had a love child. And it’s even better than that because I don’t even like white chocolate. The touch of sea salt added to the rich caramelized white chocolate takes you on a flavor tour. First sweet, then salt, then heaven. If I could come up with better descriptive words I would, but frankly you just need to get in the kitchen and try it yourself. Other than tending to the oven every five to ten minutes, the process is actually quite easy.

If you want to go over-the-top, make these cupcakes. You remember those? If you want to take the caramelized white chocolate and turn it into a pure form of an unadulterated dessert accessory, stay here. It is rich, creamy and light all at the same time.

This Whipped Caramelized White Chocolate Ganache is one of those things than can take an ordinary cake, cupcake or cookie and turn it into something very special.   • 225g all purpose flour
  • 75g self-raising flour
  • 220g firmly packed brown sugar
  • 2 eggs
  • 185g butter, chopped
  • 1 cup milk
  • 1/3 cup raw honey / golden syrup
  • 180g white eating chocolates, chopped
  • 1 tsp Vanilla
  • 1/4 tsp Salt

Preheat your oven to 300F. Line a standard size Jelly Roll sheet pan with baking paper, set aside.

In a medium sauce pan, combine the milk, syrup, sugar, chocolate pieces and chopped butter. Cook over low-medium heat while continuously stirring. Do not leave the mixture or he chocolate will burn. Once the mixture is smooth and everything has incorporated well, remove the sauce pan from and set aside to cool for 15 minutes.

In a large bowl, sift in the flours.
In a separate large bowl, beat the eggs together. Gradually add the cooled chocolate mixture to the eggs and whisk to incorporate. Once all the chocolate mixture has incorporated into the egg misture, add the sifted flours and whisk well to combine.

Pour the batter onto the prepared sheet pan and bake in the preheated oven for 1 hr – 1 hour and 15 minutes. When done the cake will be firm and will appears set at the centre.

Cool the cake completely in the sheet pan. Once completely cooled, cover and refrigerate for 1 at least hour before cutting into pieces.

Top the cut pieces with piped chocolate decorations.
To make these decorations, melt some chocolate without over heating -just until the chocolate is all melted). Place the chocolate in a piping bag. Pipe the desired shapes on parchment paper and leave to set overnight. Once the decorations are set, make an incision in the cake with a sharp small knife, carefully place the chocolate in the opening without breaking the piece.

Place the cake bites on a nice platter, I like to use tiered platters for cake bites, but you can go for any platter or cake stand you like. Serve cold.

These cake bites are a perfect option for pass around cocktail parties, for afternoon tea get togethers and for any type of entertaining. They are also a fabulous addition to your Desserts Buffet.


White Chocolate Ganache Drip Cake Recipe + Tips

Ever since I shared this recipe and tutorial for semi-sweet chocolate ganache drip cakes, I’ve gotten so many questions about making white chocolate ganache drip cakes. I’m so excited to share these tips with you because I know how finicky white chocolate ganache can be if you don’t get the ratio and timing just right. In fact, the first time I made it (using a super popular recipe that won’t be named) the ganache was so thin and runny that the drips just ran down the side of the cake and pooled at the bottom, even after cooling it to below room temperature! I have since experimented with white chocolate ganache to find the perfect ratio of chocolate to heavy whipping cream, and have found some handy tips for making it extra white and beautiful.

The first thing you need to know about white chocolate is that it’s not a true chocolate, meaning there’s a lack of chocolate solids and therefore doesn’t behave the same as semi-sweet, milk, or dark chocolate. Instead, it’s made from a mixture of sugar, cocoa butter, milk products, vanilla, and some sort of fatty substance called lecithin. Although I’ve never tried making white chocolate ganache with anything fancier than Hershey’s white chocolate chips, you can feel free to go as branded or non-branded as you want. Generic white chocolate chips or a white chocolate bar chopped into small pieces will work just fine.

With the absence of chocolate solids, the ratio of heavy whipping cream to white chocolate chips is going to be different than other ganache recipes. I’ve found a 3:1 ratio to be absolutely perfect (exact recipe below), meaning three parts chocolate to one part heavy whipping cream. Just bring the cream to an almost-boil, pour it over the white chocolate chips, whisk it together until it’s uniform, and you’re good.
