  • 1 kg (2 lb 4 oz) lean beef stewing steak
  • 1 tablespoon olive oil
  • 400 g (14 oz) onions, cut into wedges
  • 250 g (9 oz) carrots, sliced
  • 250 g (9 oz) swede, diced
  • 1 tablespoon plain white flour
  • 2 teaspoons dried mixed herbs
  • 400 g (14 oz) canned chopped tomatoes
  • 600 ml (1 pint) meat stock
  • Salt and black pepper
  • For the dumplings
  • 175 g (6 oz) self-raising white flour
  • 50 g (1¾ oz) 70 per cent fat spread
  • 3 tablespoons chopped fresh parsley

  1. Remove the fat, membrane and gristle from the stewing steak, then cut the meat into 2.5 cm (1 in) cubes.
  2. Heat the oil in a large, flameproof casserole, add the onions and cook them over a medium heat for 5 minutes, or until they are lightly browned, stirring occasionally.
  3. Transfer the onions to a large bowl, then put half the meat in the casserole and cook it for 2-3 minutes until browned, stirring occasionally. Do not worry if there is very little oil in the casserole, but take care not to let the meat burn. Remove the browned meat and add it to the onions, then brown the remaining meat and add that to the onions.
  4. Stir the carrots and swede into the meat juices remaining in the casserole and cook them over a medium heat for 1-2 minutes. Return the meat and onions with their juices to the pan and stir in the flour so that the meat and vegetables are evenly coated.
  5. Stir in the herbs, tomatoes and stock and bring to the boil. Reduce the heat to very low, cover the pan with a tight-fitting lid and simmer for 2 hours -2 hours 15 minutes until the meat is tender, stirring occasionally. Do not allow the stew to boil or the meat will become tough.
  6. Meanwhile, make the dumplings: sift the flour and a pinch of salt into a mixing bowl and rub in the spread. Add the parsley and season to taste. Make a well in the centre of the mixture, pour in 6 tablespoons of cold water and mix with a round-bladed knife to form a soft, slightly sticky dough.
  7. When the meat is tender, adjust the seasoning of the stew to taste and increase the heat a little, but do not allow it to boil. Take a rounded dessertspoon of the dumpling mixture and drop it on top of the stew. Add 11 more spoonfuls, spacing them well apart, then cover the pan and continue cooking for 20 minutes, or until the dumplings are well risen and cooked through. Serve two dumplings with each helping.

Used different ingredients.I didn't add swede instead added sweet potato and celery and used a chicken and veg stock cubes also added lots more herbs, mainly oreganeo, parsley, corriander and thyme also lots of pepper as thought it was a bit bland to my tasting-12 Jan 2009

Recipe Summary

In a bowl, toss cubed beef with flour to coat.

Heat 4 tablespoons butter in a heavy skillet over medium-high heat. Place flour in a bag or bowl, and add beef cubes. Toss to coat with flour. Place coated cubes in the skillet and fry until well-browned on all sides remove from pan and set aside.

Cook onion and garlic in same pan until tender. Return meat to pan with water, parsley, salt, pepper, and bay leaf. Reduce heat to low, cover, and simmer 1 hour, stirring occasionally and adding more water if needed. Stir in potatoes, carrots, celery, and green pepper, and continue cooking another 15 minutes. Remove the bay leaf, and stir in mushrooms.

In a small bowl, mix together baking mix, 3 tablespoons melted butter, and milk until just blended. Drop dough by the tablespoonful into stew. Simmer, uncovered, approximately 10 minutes. Cover, and simmer 10 minutes more, or until dumplings are cooked through, but not dry.

Recipe: Beef & ale stew with parsley dumplings

In this recipe, finely chopped parsley is added to scone-like dumplings to dot on top of a vegetable-rich beef stew.

I like to use sweet swede in this stew but potato or celeriac can also be used. Be sure to choose a nice marbled cut of meat such as chuck or rump steak for tender cooked beef.

BEEF & ALE STEW WITH PARSLEY DUMPLINGS

Preparation time: 30 minutes
Cooking time: 2 hours
Serves 4

Ingredients
500g chuck or rump beef steak, cut into 2cm chunks
2 tbsp flour
½ tsp salt
½ tsp cracked black pepper
2 tbsp olive oil
1 large onion, roughly chopped
Half small swede, about 300g, peeled and chopped into 2cm chunks
3 carrots, about 250g, chopped in 2cm chunks
1 tsp thyme or rosemary
250ml beer – I used a pale ale
250ml beef stock or water
1 heaped tsp wholegrain mustard

Parsley dumplings
1¾ cups white flour
½ tsp salt
2 tsp baking powder
75g cold butter, cut into 1cm cubes
Small bunch parsley, finely chopped
½ cup yoghurt
3-4 tbsp milk

Method
In a bowl, toss the beef pieces in the flour and seasoning to evenly coat.

Heat the oil in an ovenproof skillet or shallow casserole dish. Saute the onion until softened, about 5 minutes. Add the beef and cook until browned on all sides. Add the swede, carrots and herbs and toss to combine. Add the beer, stock and mustard, and mix well. Cover and cook gently on a low heat for 1½ hours.

Make the parsley dumplings. Combine the flour, salt and baking powder in a mixing bowl. Add the cubed butter and use fingers to rub into the flour until the mixture resembles breadcrumbs. Toss through the chopped parsley then add the yoghurt and use a butter knife to combine. Add 1 tablespoon milk at a time mixing with the knife until the dough comes together.

Remove the stew from the heat. Use hands to quickly shape the dough into walnut-sized balls. Arrange on top of the stew, spacing them evenly and allowing room for the scone-like dumplings to spread and rise in the oven.

Place in the oven for 20 minutes until the dumplings are plump and golden. Serve immediately with green sauce and sauteed greens.


Beef Stew with Parsley Dumplings

This beef stew has a special place in my heart. It is the very same beef stew that I have been making since the very beginning of my married/family life. When Joe and I married, I purchased my very first cookbook, Betty Crocker’s Cookbook. I had so much to learn! I remember fondly fumbling around in my little kitchen in our furnished one bedroom apartment. I had never made supper! Everything was new chopping, cooking, and cleaning. It’s a wonder he stuck around so long after enduring so much. My first biscuits were more like hockey pucks than the light fluffy biscuits my mom use to make. I had a lot of disasters. Tuna casserole, Joe? It is still mentioned in hushed tones nearly 25 years later.

Nevertheless, we were content even if the food was poor. When learned “to let it rain.” We laughed at failures knowing that better meals would follow. And they did. When I first made this stew, it was an instant hit and the only beef stew I’ve ever made since. It has a rich beefy taste which pairs so nicely with the parsley dumplings. I do hope you give it a try. It will warm up any home despite the coldest downpour winter has to offer.

1 lb. boneless chuck roast, cut into 1″ cubes
1 tbsp olive oil
3 cups hot water
1/2 tsp salt
1/8 tsp pepper
2 medium carrots, cut into 1″ pieces
1 large potato, cut into 1″ pieces
1 green bell pepper, cut into 1″ pieces
1 stalk celery, cut into 1″ pieces
1 small onion, chopped
1 1/2 tsp salt
1 bay leaf
1/2 cup cold water
2 tbsp all-purpose flour

2 tbsp softened butter
1 cup all-purpose flour
1 1/4 tsp baking powder
1/2 tsp salt
1/2 cup milk

Beef Stew
Heat olive oil in a pan on medium heat until hot. Add the beef and cook, stirring until well browned all over. Add 3 cups of hot water, 1/2 tsp of salt, and the pepper. Heat to boiling, then reduce heat to a simmer. Simmer until beef is almost tender about 2 to 2 1/2 hours.


Stir in carrots, potatoes, celery, green peppers, onions,1 1/2 tsp of salt, and bay leaf. Cover and simmer until vegetables are tender, about 20 minutes. Remove the bay leaf.


Make the parsley dumplings. [Cut butter into the flour, baking powder and salt until mixture resembles small crumbs. Stir in milk. This should make a very soft biscuit like dough. Stir in the parsley.]

After making the parsley dumplings, thoroughly mix a 1/2 cup cold water with the 2 tsp of flour and stir into the stew. Heat to a boiling, stirring constantly for 1 minute then reduce heat to a simmer. Drop dumpling dough by the spoonful into simmering stew. There should be about 10 to 12 dumplings. Cook uncovered for 10 minutes. Cover and cook for an additional 10 minutes.

Directions

Place the flour, salt, and pepper in a large zip-top plastic bag. Add the meat, seal the bag, and shake well to coat in the flour. Add the entire contents of the bag to the crock pot.

Add the carrots, potatoes, and celery to the crock pot.

In a bowl, combine the broth, Worcestershire sauce, garlic, bay leaf, paprika, and Kitchen Bouquet (if using). Mix well the add to the crock pot. Gently stir the mixture.

Cover the crock pot and cook on low heat for 8 hours or until the beef is tender. Remove the bay leaf.

Turn the crock pot to high while you prepare the dumpling batter.

In a bowl, combine the flour, baking powder, salt, beaten egg, milk, and parsley. Mix well.

Drop the batter by spoonfuls onto the simmering stew. Cover the crock pot and cook on high for 1 hour or until the dumplings are cooked.


Beef Stew and Dumplings Recipe

Ingredients

Beef Stew

  • 1 kilogram Brisket (cut into 50cm dice)
  • 1 tablespoon Vegetable oil
  • 2 Large Onions (cut in to a fine dice)
  • 3 Cloves of Garlic (crushed)
  • 0.5 Bunch of Thyme
  • 1 tablespoon Cracked Black Pepper
  • 70 grams Butter
  • 70 grams Flour
  • 250 milliliters Red Wine
  • 500 milliliters Beef Stock (2 beef rich stock pots are good reconstituted)

Vegetable Garnish

  • 4 Large Carrots (peeled, cut diagonally into large chunks)
  • 4 Leeks (cut diagonally into large pieces)

Dumplings

  • 150 grams Self Raising Flour
  • 70 grams Suet
  • 1 Handful of Parsley
  • Salt
  • Pepper

Instructions

Beef Stew

Preheat your oven at 140° or gas mark 3

In a Dutch oven or thick base pan with a lid set on a medium to high heat, add a little oil and heat until the oil is hot.

Season your beef well with salt and pepper, now seal off in small batches. Colour the meat well on all sides, remove and drain and leave on a plate.

When all the meat is well sealed off, add your butter.

Scrape the bottom of your pan, turn the heat down to low and add your onions, garlic, thyme and black pepper and a good pinch of rocksalt.

Replace your lid and slowly cook your onions to soft.

When your onions are soft add your flour. Cook for 4 to 5 minutes mixing well, now add your wine and turn up the heat and then reduce your wine by half.

Now whisk in your stock, keep whisking until it comes back to the boil and you have a nice thick, smooth sauce. Add your beef and all the juices.

Put the lid on and place in the oven for 3 to 4 hours.

Vegetable Garnish

Cook vegetables in batches in boiling salted water till just tender, then drain and put to one side.

When your meat is nice and tender so that you can cut it with a fork, remove any excess fat with a ladle.

Stir your vegetables into your stew just before adding your dumplings

Dumplings

To make the dumplings add the flour into a bowl and add ½ tsp salt.

Stir through the suet and parsley.

Make a well in the centre and add 3 tbsp cold water, mix to a dough, adding more water until the dough is firm but pliable.

Now divide into ten equal balls.

When your stew has about 30 mins to go, arrange the dumplings on top of stew and cover with a lid and cook for 20 mins, then remove the lid and cook for another 10 mins until they’re brown and puffed up.

Finish with fresh chopped parsley, serve and enjoy.

Any you have left you can place into bags and freeze.

Preheat oven to 150°C. Heat 1 Tbsp of the oil in a large, heavy-based ovenproof saucepan over a medium heat. Add onion and carrot, then cook, stirring occasionally, for 5 minutes or until lightly browned. Transfer vegetables to a plate.

Meanwhile, put beef in a large bowl and season with salt and pepper. Add flour and toss well to coat.

Heat 1 Tbsp of the remaining oil in same pan. Add ½ of the beef and brown, turning occasionally, for about 5 minutes or until browned all over. Transfer to a plate and repeat with remaining oil and beef. Return browned beef and browned vegetables to pan. Stir in garlic, tomato paste and pickled peppercorns. Add wine, mushrooms and bay leaf, then bring to the boil. Cover with lid, transfer to oven and cook for 3 hours.

Meanwhile, to make parsley dumplings, combine flour, parsley, salt and pepper in a medium bowl. Add butter and rub in until mixture resembles wet sand. Make a well in centre and add egg and milk, stirring until just combined and a soft sticky dough forms. Increase oven to 200°C. Spoon tablespoons of dough, about 2cm apart, on top of beef mixture and bake for 25 minutes or until golden and cooked through.

Beef Stew with Parsley, Sage, Rosemary & Thyme

Today I opened one of my cookbooks with the intention of making a Tex-Mex stew. However, the recipe called for green peppers, so I had to nix those since they upset hubby’s stomach. Then came the tomato sauce, but I wanted a broth base. The only herb was cumin, and frankly I just wasn’t in the mood for Tex-Mex I guess! I couldn’t get Simon & Garfunkel’s song “Parsley, Sage, Rosemary and Thyme” out of my head and have always wanted to a name a recipe after it. So that’s exactly what I did.

One of the things I love about stews is that you can build the recipe as you go, adding a bit of this and a splash of that, until it makes you happy. I pulled the parsley, sage, rosemary and the thyme off my spice rack. I was ready. I also wanted to keep this fairly simple, not a lot of dicing and chopping, yet end up with a full bodied flavorful dish. I’m pleased to say that I accomplished that with this recipe. I hope that you’ll try it, it’s really easy and quite delicious!

I posted earlier about this beautiful new range I received from Fridgidaire as part of their latest Test Drive initiative. I read about how the front two burners actually have four separate sizes, two sizes on each burner. There’s an outer element and an inner element, each one a different size made to accommodate a variety of different pan sizes. The left control knob operates the left burner of course, but the difference is that if you turn the knob to the left it controls the outer heating element. If you turn it to the right, it controls the inner element. Same goes for the right hand elements and control knob.

As you can see from the control knob pictured (umm, realized after posting this that I had it backwards! The inner symbol is the smaller one. Duh makes sense), I am using the inner heating element of the right burner as that was the closest match in size to my Dutch oven. Because the element actually fits your pan size, food is heating more evenly and efficiently.

After preparing the meat by tossing it with all the herbs, some freshly ground black pepper and Kosher salt, you’ll brown it in olive oil in your [amazon_link target=”_blank” container=”” container_class=”” ]Dutch oven[/amazon_link]. Then you’ll add in the garlic and onion until softened and fragrant (I love how that smells!).

Then you’ll add the dry red wine, beef consomme and chicken broth. Bring it to a boil, simmer a little, then add the chopped vegetables. Then you’re going to cover it and place it in a 325 F oven for 2 hours, checking only once or twice during cooking so as not to let too much heat escape.

Then of course, you’ll eat. And hopefully, your family with thank you as mine thanked me. :)

They are mainly found in plant foods and they can help regulate a good bowel movement while maintaining a balanced weight. Aim for at least 25 grams of fiber daily.

A small amount of salt daily is necessary for the body. Be careful though not to overdo it and not to exceed 6 grams of salt daily
