  4. Let cool till set, then carefully remove the sweets and store in an airtight container with greaseproof paper between the layers.

NY Chocolate Chip Cookies

If you have lived in New York City or visited or have an Instagram account, you have probably encountered the famous Levain Cookie. It’s the perfect mixture of a doughy center and gooey chocolate chips. They kept it simple and that has WORKED for them.

It goes without saying that this cookie started a cultural revolution. Cookie shops started popping up on every single corner and they all tried to be the new Levain. Many places tried to copy them but none came close. The copycats were either too sweet or the wrong shape or not doughy enough. I set out on a mission to find a copycat recipe so I eat those delicious cookies at home (without paying the outrageous shipping fees).

Naturally I started by scouring the blogs to find a recipe that could stand up to the “Levain Challenge”. I tried several and decided none of them were exactly what I was looking for. Many were too sweet and if you are new to SKS, you should know that I am not a fan of things that are sickeningly sweet. I started an experiment to “Frankenstein” together some of my favorite parts in these recipes to create my own version. I literally feel like a mad scientist when I do this! It’s so fun. It took a couple of weeks to get it JUST right but I think we have it. Crunchy outsides with a gooey inside, packed with chocolate chips. The chocolate really is the star of the show. Get ready to live your Levain dreams from the comfort of your own home!

Tips for baking the best Levain Style NY Chocolate Chip Cookies

Here are some other tips that’ll help you bake yummy NY Cookies from scratch that taste as great as they look:

Use that scale!! For the most accurate recipe possible, you definitely should invest in a scale. They are super inexpensive and so useful in the kitchen. Here is a link to my favorite one. Oxo is my fave for most kitchen tools (I’ve worked in cookware for about 4 years haha so I know my stuff haha). This recipe was developed using a scale, so you will definitely get the best results using that. I try my best to convert the recipes to US measurements, but it won’t be as accurate as using my weight measurements. I use the America’s Test Kitchen Chart to convert my recipes.

Get your butter soft but still cold: Make sure you set your butter out for at least 30 minutes. You want it to be pretty cold, so don’t let it sit out all night long. You should be able to press it and see a slight indent.

Salt is your friend! I use kosher salt for all of my baking. If you don’t have that, don’t worry. Use table salt but use a little bit less (about 3/4 tsp). Also for the top I use Maldon Flaky Salt! It’s the best. It adds a perfect crunch. If you don’t have Maldon, you can use sea salt.

Don’t overmix: Only mix the sugars and butter together for 60 seconds. The dough will come together, but over-mixing at this stage messes with the texture of the finished product.

Gauge your flour: I created this recipe when I was living in NY so I used less flour. Then when I came to Utah (higher elevation) I found that the dough was too wet. Add in about 20 grams more of flour if the dough isn’t coming together into one large mass in the mixer. The flour helps the cookies not spread. You want these to be big mounds of dough. Also if you decide not to use the walnuts, add in a little extra, 40 grams or so. I would say 20 grams for the higher altitude/wetter dough and 40 grams if you don’t add the walnuts. It might take some experimenting to figure out what works best in your area!

Don’t skimp on the chocolate: It’s a lot of chocolate chips for a reason. You need to pack those cookies full so they stay nice and mounded! I even add extra sometimes. Try it with white chocolate chips or dark chocolate. So many options and so much CHOCOLATE. Also you probably will need to knead the chocolate chips into the dough. Help the dough have a fighting chance against all that yummy chocolate goodness.

Walnuts (or any other nut), if you like: Add in the walnuts if that is your thing. I am not on the nuts in cookies train, so I leave them out. My mother is obsessed with nuts in cookies so I have made these with walnuts, pecans, and almonds! GO NUTS with the nuts. Just make sure to adjust your flour (see the tip above about gauging your flour).

Shape your dough: When you are shaping the dough, make sure not to create perfect spheres. You just need to pack the dough together in a rough shape. And I mean rough. These helps create the nooks and crannies we love in from the original Levain version. I usually shoot for about 6oz (USE YOUR SCALE) and I pack them together with some gloves on it.

Freeze the dough: I know I know. Waiting is the hardest part. I have tried baking these without freezing the dough and it doesn’t work as well. Again, we want these to stay mounded while baking. So portion out all the dough, pop the tray in the freezer for a minimum of 30 minutes and then bake them, about 6 to a tray. This gives you time to clean up and pour yourself a diet coke (just me??). Also these are great to keep in the freezer for those midnight cookie cravings!

How to make Walnut burfi

  1. Toast the walnuts lightly on a low heat and then cool them completely. Add coconut and then the cooled walnuts to a blender jar and just pulse them.

2. Add sugar and water to a pot and begin to heat. I also added cardamom powder at this stage.

3. Bring this to a rolling boil.

4. Reduce the flame completely and then add the coconut and walnut powder.

5. Mix well and ensure there are no lumps.

6. Cook stirring constantly until the entire mixture begins a mass and turns thick. Add ghee at this stage along with cardamom powder. Mix and cook until the mixture leaves the pan.

7. Turn off the stove. Take 1/4 tsp of this mixture cool it completely. Grease your finger and make a ball. If you get a non sticky dry ball then it is done.

8. Transfer to a parchment paper and cool down. When it slightly hot, grese your hands and knead it until smooth.

9. Cover with the parchment paper and roll with a rolling stick. Cool completely and then slice it.

  • 1/4 cup all purpose flour
  • 2/3 cup sugar
  • 1 egg
  • 3/4 cup cooking chocolate
  • 1/2 teaspoon vanilla extract
  • 2/3 teaspoon baking powder
  • 1/4 cup butter
  • 1 Pinch salt
  • 1/2 cup walnuts

How to make Walnut Brownies

Step 1 Preheat the oven

Firstly, preheat the oven to 165 degrees C for 10 minutes and grease a baking tray with butter.

Step 2 Mix the dry ingredients

Take a big bowl. Sift the flour, salt, baking powder in it. Mix the dry ingredients well.

Step 3 Prepare the batter

In a separate bowl, combine butter and sugar. Use an electric mixer and mix it till the mixture turns light and fluffy. Now add a beaten egg in the mixture along with cooking chocolate, vanilla extract and mix again. Now add flour to this mixture and use a spatula to fold it well. Don't mix or whisk the batter, always fold it well to get the perfect texture. Lastly, add some chopped walnuts and fold again.

Step 4 Bake and serve

Now pour this batter into a greased tray and slide in the oven for 30-40 minutes. Once done, let them cool down and then chop them into pieces. Garnish with chocolate sauce if needed and serve.


Learning how to make rugelach was a secret desire of mine for years. I bought them in my local grocery store and loved them. They tasted like cookies, and occasionally I ate them for breakfast. They were a perfect grab-and-go starter with my coffee, which is why they fell in this chapter. I never thought I could learn how to make them, but through practice I developed this recipe. One leisurely morning, as my husband, Tom, and I were enjoying them with our coffee on the patio, I looked up from my crossword puzzle and said, “Oh my God, I can make rugelach.” You can, too. It’s not hard. Pay attention to the way the cream cheese dough pairs with the chocolate and nuts—that taste is memorable. The sweetness and tartness and the way the chocolate melts and the bottom crisps up—you are going to make these all the time.

1. Combine 1 cup of the flour, 1 tablespoon of the granulated sugar, and 1/4 teaspoon of the salt in a food processor pulse to combine, 10 to 12 times. Add the butter and cream cheese pulse until the dough begins to form small clumps, about 16 times. Divide the dough in half shape each half into a flat disk. Wrap with plastic wrap, and chill for 2 hours.

2. Preheat the oven to 350°F. Process the apricot jam in the food processor until smooth, about 15 seconds. Transfer to a small bowl. Add the walnuts, brown sugar, cinnamon, and remaining 1/4 teaspoon salt to the processor process until the nuts are finely chopped, about 10 seconds.

3. Unwrap 1 dough disk, and roll into an 11-inch circle on a lightly floured surface. Spread 1/4 cup of the jam evenly over the dough sprinkle evenly with half of the walnut mixture (about 1/2 cup) and 1/4 cup of the chocolate chips. Press the filling gently into the dough. Use a pizza cutter or sharp knife to cut the dough round into 16 wedges. Roll up each wedge, beginning with the wide end and ending with the point. Place the rugelach, point sides down, on a baking sheet lined with parchment paper. Repeat with the remaining dough round, apricot jam, walnut mixture, and chocolate chips. Freeze for 15 minutes.

4. Brush the rugelach with the beaten egg sprinkle with the remaining 2 tablespoons granulated sugar. Bake until deep golden brown, 20 to 25 minutes. Cool on the baking sheets on wire racks about 10 minutes remove the rugelach from the baking sheets to the wire racks, and cool completely, about 20 minutes.

Every year, I see Passover-friendly recipes that frighten me: brick-like honey cakes, “sponge” cakes that still haunt my mother (who receives these in lieu of birthday cakes most years, due to the misfortune of having a birthday that falls in the first week of April), dinner rolls that my father likens to “hockey pucks” and macaroons that nobody (besides me) likes. And every year, I wonder: what ever happened to impossible-to-hate flourless chocolate cakes and truffles? Desserts lifted with egg whites? Ground nuts instead of flour? Do people even realize that one of the best peanut butter cookies on earth has exactly no flour in it?

Well, you know what I say? This year in Dessert Epiphany. I promise to stop ranting from this point forward and instead use this post as a repository for the kinds of Passover desserts that you’d be proud to bring to dinner. And for those of you who do not celebrate Passover, fear not, matzo meal only shows up in one of these recipes, and even then, only nominally. (Forgive me, because I have never warmed to the flavor of the bread of affliction in an otherwise-excellent cake.) In short: you don’t need the reminder of 40 years in the dessert to find an excuse to make these, but if you ask me, it’s a good reason as any.

I tried them out last night, and oh, an epiphany they were, and then some. I know what you’re thinking: just like chocolate meringues! Yet, they’re not–the egg whites are not whipped, just whisked with powdered sugar (a recipe for Passover-friendly powdered sugar is below) and really good cocoa, and the result is crispy but stretchy and very intensely chocolaty. Also, it’s gluten-free, dairy-free, and a one-bowl (plus a cutting board) recipe to boot. The recipe is at the end.

If you’ve made this before, you know the deal: don’t show up without it again. If you haven’t, well, why not? Do you dislike caramel and butter and salt and chocolate and crunch? No, you do not. Finally, if you’re reading this and it’s not Passover, go and make them tonight with Saltine-style crackers instead. You won’t regret a thing.

Chocolate-Walnut Cookies (Flourless)

If you strictly follow the rules of Passover, you might not use regularly powdered sugar because it has cornstarch in it. If you cannot find kosher-for-Passover powdered sugar, try making your own (thanks to an old Gourmet recipe): Grind 1/3 cup granulated sugar and 1/2 teaspoon potato starch in an electric coffee or spice grinder until powdery. Yield: About 1/2 cup.

  • 2 3/4 cups (285 grams or 10 ounces) walnut halves
  • 3 cups (360 grams) confectioners’ sugar
  • 1/2 cup plus 3 tablespoons (55 grams) unsweetened Dutch-process cocoa powder
  • 1/2 teaspoon kosher salt
  • 4 large egg whites, at room temperature
  • 1 tablespoon (15 ml) pure vanilla extract
  • A few sea salt flakes to finish (if you wish)

Position two racks in the upper and lower thirds of the oven and lower temperature to 325 degrees F. Line two large baking sheets with parchment paper.

In a large bowl, whisk (or combine in an electric mixer on low speed) the confectioner’ sugar with the cocoa powder and salt followed by the chopped walnuts. While whisking (or once you change the speed to medium), add the egg whites and vanilla extract and beat just until the batter is moistened (do not overbeat or it will stiffen we’re not trying to whip these egg whites as we would for a meringue).

Spoon the batter onto the baking sheets in evenly spaced mounds — I use a just-over-1-tablespoon, or #40 scoop. If you can spare the time, letting them rest at room temperature on their trays for 30 minutes (and up to 60), I find they get a taller dome in the oven, but it’s also fine to bake them right away.

Bake for 14 to 16 minutes, until the tops are glossy and lightly cracked shift the pans from front to back and top to bottom halfway through to ensure even baking. Slide the parchment paper (with the cookies) onto 2 wire racks. Let cookies cool completely, and store in an airtight container for up to 3 days.

Chocolate Walnut Cake is an ultimate old school recipe that came to me from my mother and now I’ll be passing it all you. The very moist and chocolaty this cake is definitely one of the most decadent dessert of all time. A simple recipe that requires perfection which comes from practice requires handful of ingredients that is easily available in your pantry. So put on your aprons and turn on your oven, bake this spectacular cake and surprise your family with your baking skills too.

In this recipe I have used regular cooking oil instead of butter. You can also replace all purpose flour with wheat flour to make it even healthier.

To make this decadent chocolate walnut cake firsr sift flour, cocoa powder, baking powder and salt together. Add one half of chopped walnuts into the dry flour mix and stir with a fork. Keep aside. Powder sugar in a ginder and combine with oil to make a smooth mix. Add egg one by one and mix together with a hand blender till its light and creamy. Add vanilla extract and mix well. Take the dry flour mix and gradually add into the wet mix. Fold in to make a smooth batter. Add milk and give a quick fold again till everything combines well. Take a 9 inch round or square baking pan and either line it with parchment paper or grease it with oil or butter. If you’re greasing it then sprinkle some plain flour and spread all over. Dust the excess flour from the pan and keep aside. Meanwhile set your oven into baking mode and pre heat at 180°C for 10-12 mins. Take the prepared cake mix and pour it into the pan and spread evenly. Sprinkle the rest of the chopped walnuts on the top. Gently tap the pan on the kitchen counter so that the batter settle down completely and the air bubbles break if any. Place the baking pan on the middle rack of your pre heated oven and bake for 40 mins initially. Check your cake by inserting a tooth pick in the center. If it comes out clean, your cake is done or else bake for another 5-6 mins till the tooth pick comes out clean. Transfer the pan on a wire rack and let your cake cool at room temperature. Cut into pieces and serve warm. Tastes best when teemed up with vanilla ice cream.
