Baked vegetables

We peel the potatoes, wash them and boil them in cold salted water. When they have boiled, drain them well of the water, let them cool a little, then slice them into suitable slices in thickness.

We wash the zucchini, remove the extremities and slice into thin slices.

We wash the eggplant, remove the extremities, sprinkle it with salt and let it drain.

Heat a frying pan with oil. When the oil has heated, fry the eggplant slices, browning them nicely on both sides. We take them out on a paper napkin to remove the excess oil.

Then fry the zucchini, browning it on both sides. Then remove the washers on a paper napkin.

Finally, fry the potato slices, browning them on both sides and also take them out on a paper napkin.

Wallpaper a tray with baking paper and place the vegetables in a row of potatoes, a row of zucchini, a row of eggplant and then repeat the vegetables.

Sprinkle Parmesan cheese in abundance and place the tray in the preheated oven at 200 degrees.

Serve hot vegetables.
