Green peas with sausages

At least once a month I have to make pea food, it saves me when I run out of culinary ideas. It cooks quickly and I like its green-energizing color. Thanks to cousin Melania who gave me peas.

  • 500 gr green peas
  • 400 gr sausages with ham + oltenesti
  • 2 onions
  • 2 tomatoes
  • 100 ml oil
  • green parsley
  • thyme
  • salt

RECIPE PREPARATION Green peas with sausages:


  1. Lightly fry the cleaned and diced onion in oil together with the round sausages [I put what sausages I found next to the house]

  2. Add the cleaned and washed green peas + chopped tomatoes.

  3. Pour the water to cover the peas. Boil over low heat until it is penetrated.

  4. Sprinkle with thyme and green parsley.

You don't need a lot of spices, the sausages are enough.


Lentil Ingredients:

  • 400 grams of lentils (I used green, organic lentils, but it doesn't matter which one is used)
  • 2 onions
  • 2 cloves garlic (large)
  • 2 carrots
  • 1 celery stalk (celery stalk)
  • 1 large tomato
  • 2 tablespoons concentrated tomato broth
  • 3 tablespoons olive oil
  • 3-4 bay leaves and pepper
  • chopped green parsley
  • optional: smoked or fresh sausages, about 2-3 servings
  • optional: 250 ml. of chicken soup

Lentil Food Preparation:

The lentils are washed well with cold water, drained and boiled in a pot of salted water to which was added 1 onion cut into quarters and 1 bay leaf. Foam and boil over medium heat until soft (may take 25 minutes to 40 minutes, depending on the range of lentils used). Drain in a strainer the lentils of water in which it boiled, remove the onion and bay leaf and rinse (in a strainer) with cold water.

While the lentils are boiling, clean, wash and chop the onion, carrot and celery, crush the 2 cloves of garlic and scald, peel and chop the tomato.

1. In a large, deep saucepan or skillet, heat the oil and fry the sausages until golden brown (picture 1) then set aside on a plate. I used my chicken sausages (click on the recipe link), if you want a fasting lentil dish, skip this and jump straight to step 2.

2. Add the onion, carrot and celery to the remaining fat in the pan, together with the crushed garlic (picture 2). Fry the vegetables, stirring often, until the onions are soft.

3. Add the lentils, mix and cook for 3-4 minutes (picture 3).

4. Add the sausages back to the pan (if used) and pour the chicken soup and enough hot water to cover the lentils about 1-2 cm. If you are fasting, you can give up soup and simply use water. Add 1 teaspoon of salt, the remaining bay leaves and freshly ground pepper to taste (picture 4). Cover with a lid and simmer for 10 minutes over medium to low heat.

5. Finally, add the chopped tomato and broth (picture 5). Boil the food for another 2-3 minutes, cover and wait a few minutes for the liquid to be completely absorbed (the lentils will swell and the food will drop by itself).

Match the taste with salt and pepper, sprinkle with chopped green parsley and the food is ready.

If you want a meal that will alleviate your hunger and taste buds with seasonal ingredients, rely on peas.

It has all the qualities to make it a star along with pasta, red potatoes or crispy bacon. Here are the pea recipes we have for you.

Pasta with peas and ham

Ingredients (for 4-6 servings):

450ml fat cooking cream

6-7 slices of ham broken into strips

Boil the pasta al dente, drain it and keep 60ml of the water in which they boiled.

Meanwhile, boil the cream over high heat until reduced by half (about 8 minutes). Add the pasta and peas and cook for 2-3 minutes until the cream starts to stick to the pasta. Add the grated Parmesan cheese and season with salt and pepper.

Pour the stored water in which they boiled the pasta to make the sauce lighter. Only now add the prosciutto and mint leaves, stirring lightly. Serve them hot!

New peas and potatoes with bay flavors

You can use this as a garnish, but it's full on its own. If you want a more pregnant spicy taste, sprinkle pepper only at the end, before serving. We liked the vibrant colors of this dish.

Ingredients (for 4-6 servings):

200-300g new potatoes, washed and rubbed with a sponge

Put the potatoes in a saucepan with bay leaves, salt and water to cover them almost completely. Bring to a boil, cover with a lid. After boiling, let the potatoes simmer for 15 minutes, until slightly softened.

Drain a lot of water from the pan, add the peas and salt to taste. Cook everything over medium heat for 7 minutes until the peas soften slightly. The water should drop.

Mix a tablespoon of butter and a little pepper. Serve hot with the rest of the butter and pepper sprinkled on top.

Israeli couscous with green peas

A quick and filling recipe for any meal. It's ready in a quarter of an hour and you have enough time for the steak.

Ingredients (for 6-8 servings):

700ml concentrated chicken soup

Bring the chicken soup to a boil, and when it boils, add the couscous and peas. Reduce the intensity of the fire and let them boil together until they soften and the liquid drops. Add fresh mint, salt and pepper to taste.

Small pea recipe: ingredients, preparation

Ingredient:

  • 100 grams of soybeans
  • 100 grams of ground walnut kernels
  • 50 grams of breadcrumbs
  • 50 grams of ground oatmeal
  • 1 onion
  • 3 tablespoons yeast flakes
  • spices (salt, pepper, thyme, smoked paprika, garlic powder, oregano)

Method of preparation:

Peas and soybeans are boiled in separate pots. Remove the peas and squeeze the soy water. Then grind the peas and soy in a blender.

Add the chopped oatmeal, walnut kernels, chopped onion, yeast flakes, spices and mix well.

Shape with wet palms and brown on both sides, in a pan or on the grill, 1-2 minutes, over high heat.

Put a pot of water to boil. When the water boils, add the small browned ones and let them boil for 3-4 minutes, then take them out on paper towels. Another option is to put them in the oven for 20 minutes.

There are several options for the recipe of small vegetarians. Another combination is tofu, soy and psyllium bran. It is important to add the ingredients you like until you get the recipe to your taste.


Sausage packages

Do you remember my chicken sausages? Because it's spring, because I wanted a delicious and quick appetizer, the idea came to me to pack them in rice sheets with some assorted vegetables and to make with them & # 8230 the spring packages! :)) I laugh, because in general I'm not very enthusiastic about fusion trends in the kitchen, but I must confess that I also liked the aperitif a lot. Some very tasty, very fresh spring packages came out and the flavors complemented each other wonderfully. So, if one day you feel in a playful mood and open to the new, these spring packages will not take up too much time, instead they will accentuate your good mood :).

  • 8 thin, fresh sausages (non-smoked)
  • 8 disc-shaped rice sheets, about 20 cm. diameter
  • 1 red pepper
  • 3 sprigs of green onion
  • 6 moon radish (tomatoes)
  • 1 clove of garlic
  • 1 cm. of freshly grated ginger
  • 1 teaspoon sesame oil
  • 1 tablespoon light soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons lime juice
  • 1 teaspoon hot sauce
  • frying oil
  • sauce: sweet or spicy ketchup, I used a sweet ketchup sauce, hot sauce, soy sauce, 1 teaspoon of rice vinegar and 1 teaspoon of sugar

Preparation Sausage packages:

1. Fresh sausages are pan-fried or grilled (I chose the grill). As I already said, I chose the chicken sausages (here is the sausage recipe), they fit the pork sausages just as well, just to be fresh (raw) and non-smoked.

2. The fried sausages are removed on absorbent paper, removing the fat during cooking, and the peppers, green onions and radishes are cut into thin slices (picture 1).

3. Put the finely chopped vegetables in a bowl, add the garlic and ginger given by the finest grater, sesame oil, lime juice, hot sauce, sugar, soy sauce and salt and pepper to taste. The result will be a delicious salad, good to eat as such, not just to pack in packages (picture 2).

Here is the package with rice sheets that I used, the sheets in the package are dry and quite rigid.

4. One at a time, moisten a sheet under a stream of cold water until it becomes malleable, easy to pack, place on a clean kitchen towel and add a sausage and a suitable amount of salad (picture 1).

5. Bring the edges of the wet rice sheet over the filling and roll as tight as possible, avoiding a lot of air inside (picture 2).

6. The formed packages are placed on a plate without touching each other because they are sticky in this phase (picture 3).

Heat the frying oil (a sunflower or rapeseed vegetable oil, peanuts, etc.) in a pan to a medium to low temperature and fry the packets one at a time, avoiding touching each other or crowding into pan. Attention, the oil must be abundant, about 3-4 cm. in the frying pan. The packages are fried on all sides until they become golden and crispy.


The packages are removed on absorbent paper and served immediately, warm, with your favorite sauce (I recommend a sweet and sour sauce).


Low green beans with sausages

We need:
& # 8211 a jar of green beans (450 g)
& # 8211 a little white onion
& # 8211 2 cloves of garlic
& # 8211 two tablespoons of flour
& # 8211 little oil
& # 8211 paprika, salt, vegeta, basil, green parsley
& # 8211 broth
& # 8211 sour cream (optional)
& # 8211 sausages (I chose Rose sausages)

Finely chop the onion and fry in oil (enough oil to cover the pan). When the onion is bottled, add the flour, fry a little together and then quench with broth.

Put the beans, half a glass of water and enough broth to cover the beans well. Season with garlic. Bring to a boil over low heat until a little water drops and a delicious sauce remains.


Beans with sausages

Put the cleaned and washed and finely chopped onion in a little oil together with the diced pepper. We use the & # 8222Fry & # 8221 function of the device for 10 minutes.
Add the sausages cut into pieces and mix until they harden as well.
Wash the beans well beforehand (I put them in a sieve and keep them under cold water until they are well washed with the water in which it was preserved) we put them in the bowl, then we add the tomato paste a little salt and a little pepper, half a cup of water and cover by starting the Stew function from the device for 30 minutes.
If we cook on the stove, cover the pot in which we cook with a lid and let it boil for 20-25 minutes.
You can also see from the picture below what the steps are, although it is as easy as possible to cook this food, whether you make it in a pot on the stove or use a cooking appliance.

And that's about it, in maximum 40 minutes since we started preparing the ingredients we have a delicious and consistent food.

Cut onion rings, choose the largest. Heat a little olive oil in a pan and sauté the onion rings until golden. Turn them on the other side, and add the eggs so that the yolk remains whole and does not drip onto the pan, but sits on top of the onion rings. Keep them on the fire until the eggs are ready. The yolk should remain liquid.

For this preparation you need:

& ndash 8 slices of smoked turkey (or chicken)

& ndash 1 green onion cut into rings

& ndash 300 g crushed Brussels sprouts

Saute the turkey pieces in a large pan, over medium heat, with two tablespoons of olive oil, until golden. Take them out of the pan and set them aside. Put the chopped onion and a teaspoon of olive oil in the same pan. Sprinkle with salt and pepper and cook until the onion turns golden. Add Brussels sprouts and vinegar. Keep on the fire for about 5 minutes, until the cabbage becomes a little crispy. Put the turkey or chicken pieces and mix well. Break the eggs over the vegetable mixture so that the yolks remain whole. Reduce heat and cook until eggs are cooked to taste.

Food recipes: Egg muffins
You need:

& ndash 12-15 eggs

& ndash 200 g vegetables to taste (tomatoes, bell peppers, broccoli, zucchini, etc.)

& ndash 200 g ham, sausages or boiled meat

& ndash salt, pepper, spices to taste

Preheat the oven to 190 degrees. Grease the silicone muffin tins with olive oil. Cut the vegetables and cook until golden. Cut the meat into cubes. Place a row of meat on the bottom of the forms, add the sauteed vegetables, grated cheese and green onions. The muffin space should be 2/3 full. Beat eggs with a fork, season to taste and pour the mixture into each form. You can easily mix the contents with a fork. Bake for about 15 minutes. The muffins should rise and have a golden color.


For starters we will boil macaroni in a roomy and tall pot with water and salt and they will boil according to the instructions on the package.

In the meantime, we'll take care of the rest ingredients.

Onion cleaned and finely chopped we will put it to harden in butter and oil heated in a high-walled Teflon pan (because we will use it until the end), until it becomes translucent, then mushrooms cleaned of skin and cut not finely chopped slices (because we want them to be visible in macaroni) we will leave them to harden until they soften along with onions.

We will add as well tomatoes which were scalded in boiled water ca. 5 minutes, then peeled and finely chopped, letting them boil until reduced fluid from them, until a S.O.S, adding a little along the way boiled macaroni juice, ( thus the sauce will thicken better from the starch left by the pasta).

spice sauce with salt, pepper, dried oregano to taste, then add pieces of sausages which I fried for approx 5 minutes separately in another pan with 1 tablespoon olive oil (because it also leaves fat from them), macaroni drain the juice in a strainer, mixing everything with a spatula.

Sausage macaroni will be served hot on large white plates spread with grated Parmesan cheese on top and finely chopped fresh parsley.
