PB Crave Cookie Nookie Peanut Butter Cookies

Ingredients

  • 1 Betty Crocker Peanut Butter Cookie Mix (17.5 oz)
  • 3 Tablespoons vegetable oil
  • 3 Tablespoons Cookie Nookie
  • 1 egg

Chocolate Dip

  • 1/2 Cup Semi Sweet or Milk Chocolate Chips
  • 1/4 Cup PB Crave Cookie Nookie
  • 1/2 Cup Butter-melted

Directions

Mix all ingredients together just until thoroughly blended.

Scoop the mixture into 32 cookie balls.

Place the cookie balls on a baking sheet pan. Flatten the cookie balls slightly.

Bake in a 325 degree oven for a convection/speed bake or 350 for a conventional oven.

Bake for 8-10 minutes.

Place baked cookies on a cooling rack.

Chocolate Dip

Melt these items together.

Dip each cookie in the chocolate mixture.

Allow the chocolate to set up on the cookies for 20-30 minutes.

Cookie Butter Kiss Cookies

Today’s recipe isn’t healthy, low-fat, low-carb or low-calorie. These cookie butter kiss cookies won’t be featured in my cookbook or showcased on Cooking Light or Eating Well. But they are a staple on my mom’s famous Christmas Eve cookie plate, a favorite among our family members and one cookie that makes every single person smile when they eat it. And that’s reason enough for me to share it with y’all!

Now this recipe differs a bit from my moms since I’m pretty sure she still has no idea what cookie butter is. And when I’m spoon-deep in yet another jar, I totally wish I had that same problem. I don’t know why this stuff is SO INSANELY ADDICTING but it is. Well, actually that’s a lie. I know why it is. It’s made from cookies ground up into a creamy butter. You’d have to be insane not to want to stick a straw in it and drink it.

In addition to cookie butter, I also added some of my new favorite peanut butter, PB Crave. They are an all-natural brand of PB that comes in an assortment of the most perfect flavors. To give these a double dose of cookie perfection, I added PB Crave’s cookie nookie, which is peanut butter blended with, you guessed it, COOKIE BUTTER!

I made these on a whim for our ugly Christmas sweater party on Saturday. I didn’t have a whole lot of extra time to make a dessert. So I figured, why not make a simple cookie that my family loves? Maybe it’s the cookie butter or just the fact that I was having a good baking day, but these turned out even better than I hoped. They puffed up like gorgeous crinkly pillows and the chocolate kisses fit beautifully right in the center. And they didn’t just look pretty either. 36 cookies were made for the party and only 3 remained on Sunday morning.

We only had about 15 people over, too. Even though my mom is making 16,000 cookies for the holidays, I’m bringing a batch of these home. Mostly because they are so good and I want to share them, but more because I want to eat them on the ride to Ohio and am craving cookie dough like woah.

Cookie Butter Thumbprints

Yields about 36 – 40 cookies. Slightly adapted from Bake at 350.
Prep time: >10 minutes
Cook time: 12 – 14 minutes

Ingredients:

  • 1/2 stick unsalted butter, softened
  • 1/2 cup PB Crave Cookie Nookie peanut butter
  • 1/4 cup cookie butter
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 36 Hershey’s Kisses, unwrapped
  • + 1/2 cup white sugar for rolling

Directions:

  1. In a large mixing bowl, beat the butter, peanut butter, cookie butter, white sugar, brown sugar and egg together. Beat until soft, fluffy and creamy. Stir in the vanilla and beat. Gradually add the baking soda, salt and flours. Beat to combine.
  2. Cover the dough with saran wrap and chill in a fridge for about 2 – 4 hours.
  3. Once chilled, preheat oven to 350 degrees F. Line a cookie sheet with parchment paper. Add about 1/2 cup of white sugar into a shallow bowl. Shape the dough into 1 inch balls and roll into the white sugar. Place the cookies 1 inch apart from each other.
  4. Bake for about 12 – 14 minutes. While still warm, use a small spoon to press a thumbprint into the center of each cookie. Let cool for about 1 – 2 minutes. Once slightly cooled, press an unwrapped Hershey’s kiss into the center.

Peanut Butter Monkey Bread

Monkey Bread always makes us think of sharing - one big beautiful dessert made up of little bite-size pieces for the whole family to pull apart and enjoy. This recipe has a little extra special ingredient that we want to share with you. Each of those little bite-sized pieces is topped with a scrumptious peanut butter surprise! We like to think of it as a dessert within a dessert.

Peanut Butter Pumpkin Loaf

A moist, protein-packed fall loaf. Perfect for a post-workout snack or even a not-so-naughty dessert!

² Ingredients

  • 3.25 serving (serving = 1/2 cup dry) Quaker Old Fashioned Oats
  • 1.5 serving (serving = 2 tbsp) Hodgson Mill Milled Flax Seed
  • 2 serving (serving = 1 egg) Kroger Whole Eggs (Medium)
  • 3 serving (serving = 1/2 cup) Libby's 100% Pure Pumpkin
  • 3 serving (serving = 1 packet) Truvia Sweetener
  • 2 serving (serving = 1 tsp) McCormick Pure Vanilla Extract
  • 2 serving (serving = 2 tbsp) PB Crave Cookie Nookie
  • 3 serving (serving = 1 scoop) Cellucor Cor-Performance Whey Peanut Butter Marshmallow
  • 2 serving (serving = 3 tbsp) All Whites 100% Liquid Egg Whites

Q Directions

1.5 cups Pure Pumpkin
2 eggs
2 egg whites (1/3 cup liquid egg whites)
3 scoops Cellucor PB Marshmallow whey
1 3/4 cup oat flour (I blended that amount of whole oats, and it actually came out to less oat flour (a little under 1.5 cups) -- so pulse 1 3/4 cup oats for the right amount)
3 tbsp milled flax seed
1/4 cup PB Crave Cookie Nookie peanut butter (microwaved for 30 seconds to loosen)
3 packets of Truvia sweetened
2 tsp vanilla extract

DIRECTIONS:
1) Preheat oven to 350 and grease a loaf pan. I use the "Baking" Pam and it works really well.
2) Combine all wet ingredients first. Then add in dry ingredients until well combined.
3) Bake for 32 minutes and let cool.
4) Cut into 10 equal slices.


Chocolate Peanut Butter Protein Bars

A no-bake recipe guaranteed to give your store bought protein bar a run for their money!

² Ingredients

  • 6 serving (serving = 1/2 cup dry) Quaker Old Fashioned Oats
  • 1/2 serving (serving = 1 tbsp) Hershey's Natural Unsweetened Cocoa
  • 0.4 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  • 0.3 serving (serving = 1 cup) Blue Diamond Almond Breeze Unsweetened Vanilla Milk
  • 1/3 serving (serving = 3 sections) Ghirardelli 100% Cacao Unsweetened Chocolate
  • 1 serving (serving = 1 packet) Truvia Sweetener
  • 4 serving (serving = 2 tbsp) PB Crave Cookie Nookie
  • 4 serving (serving = 1 scoop) Cellucor Cor-Performance Whey Peanut Butter Marshmallow
  • 1/2 serving (serving = 1 level scoop) Cellucor Cor-Performance Whey

Q Directions

Note: For these bars, I use a 'Chicago Metallic Silicone Metallic Dessert Bar Pan' I bought on Amazon. You could also do it in a 8x8 pan or in muffin tins.

Chocolate bottom:
1 square Ghirardelli 100% Cacao
4 tsp coconut oil
1/2 scoop Cellucor Molten Chocolate Whey
1/2 tbsp unsweetened cocoa powder
1 packet Truvia sweetener

Protein Bar:
4 scoops Cellucor PB Marshmallow Whey
1/4 cup + 1 tbsp almond milk
1/2 cup PB Crave Cookie Nookie peanut butter
3 cups traditional oats

For chocolate, place Ghirardelli chocolate and coconut oil in a bowl. Microwave until melted. Stir in other ingredients until well combine. Divide amongst the 12 dessert bar molds to coat the bottom of each. Place in the freezer.

For bars: Combine whey protein and almond milk. It should be a thick mixture. Melt peanut butter in the microwave for 30-45 seconds to loosen up, then mix in with protein. Add in oats. Mixture will be very thick and sticky. Remove dessert bar tray from freezer and divide protein bar mixture amongst the 12 molds. Freeze for 1 hour.

**I always leave these in the freezer and then take one out a few minutes before eating. They can also be stored in the fridge, but may be gooey when you eat it. I find it thaws very quickly so it works best in the freezer.

So far I have tried the Chocolate Peanut Butter, the Chocolate Almond Butter and the Cinnamon Raisin Almond Butter.

I’m not sure how I like it. It’s really grainy! I think it’s the Xylitol! Not crazy about the first 2 flavors. However the Cinnamon Raisin is good and loaded with Raisins! If you like Cinnamon Raisin, you will like it! It does have 14g of protein per 2tbsp that’s double normal Peanut Butter and Almond Butter. It also has superfood: Flax Seed which is high in Omegas! With all the positives, a little grainy can be overlooked!

However I will personally stay away from the Chocolate nuts butters! If I have Chocolate Nutbutter, I want it to be freakin delicious! So far the Cinnamon Raisin is a winner! Stay tuned for the other flavors.

What I am super disappointed about, is I don’t have the Chocolate Coconut Almond Butter! I bet that’s the best of them all! Yes you have the grainy Chocolate Almond Butter, but I bet the awesomeness of the Coconut, offsets it and makes it delicious! I wish I had a jar.

But I do have the rest, so stay tuned!

Ok first let me start by saying I’m not a fan of Caramel or Toffee! I don’t like anything that gets stuck in my teeth! That being said, I like the flavor of Toffee, but not Toffee. I wasn’t looking forward to the Toffee Peanut Butter, but I have to say it is the absolute best so far!! A tad bit better than the Cinnamon Raisin! They still have the grainy xylitol texture! I would like them to cut the amount they put in! You guys really don’t need that much! The flavors rock and don’t need the extra xylitol! I would try cutting it in thirds and then in half and see how much you really need! I bet it’s a lot less than what you are using and it will save on food cost!

**Update** June 4th 2014
I just had the plain Peanut Butter and I have to say its one of the best! The xylitol content is less as it should be and it’s still a little grainy, but not like the first 2 flavors!

I had the plain Almond Butter and it was evenly as good as the Peanut Butter the same comments as above.

I like the cinnamon raisin the best with the exception of the higher xylitol content. If they lower it and tweak the recipe just a little they will be one of the best companies around!
