Fettuccine Alfredo is one of the most basic and delicious pasta recipes EVER & mdashand it couldn’t be easier to make! Our recipe is a little untraditional (there's heavy cream) but it's just as easy to whip up as the rest. In fact, it's so easy you can memorize it! Half a cup butter, cheese, and cream is all you need to make this luscious sauce. (Well, plus some pasta water, but that doesn't really count. & # 128521)
What is Fettuccine Alfredo?
Tracing back to 15th century Rome, this dish quickly became popular throughout Europe, and later America. In the beginning, the sauce was comprised solely of butter, parmesan, and pasta water. Nowadays, there are all sorts of interpretations of the original recipe. Some add cream, some add more cheeses and herbs, and many add meat or fish.
What can I serve this with?
Shrimp Alfredo and Chicken Alfredo are two of the most popular types of Alfredo dishes & mdashboth delicious and hearty adaptations on the original. Steak or salmon would also be delicious, but quite heavy. If you're looking for something on the lighter side, try folding halved grape tomatoes and fresh spinach into the hot pasta before serving.
How do I reheat my leftovers?
We recommend reheating your pasta in a pan over low heat, stirring occasionally. Microwaving the pasta can give your noodles a too-soft texture, and might leave your sauce greasy instead of creamy.

What Is Alfredo Sauce
Now, some may argue that Alfredo sauce isn & # 8217t really Italian- it & # 8217s American. I & # 8217ll give you a quick history lesson. This sauce was born in Rome from a man named Alfredo. His sauce was a simple emulsification of butter, Parmesan cheese, and pasta. The version we know and love today includes garlic and cream for a saucier consistency. So I guess we can call this modernized sauce an Italian-American lovechild.
Not to mention that you can easily hide cauliflower in pasta sauce, especially since it is not one of the favorite vegetables of children. Nutritious yeast can be a good substitute for cheese. And homemade almond milk goes perfectly with butter.
The ingredients below are enough for 2 servings, but you can double or even triple them, if you have more appetizers at the table. Alfredo pasta will be ready in about 25 minutes, so the rest of the time you would have spent in the kitchen you can dedicate to games with the little ones or you can invest it in preparing a dessert that would fit perfectly with this culinary journey on the Italian lands.
1 clove of garlic
1 teaspoon extra-virgin olive oil
1 cup cauliflower (100 grams)
3/4 cup almond milk (175 milliliters)
freshly ground black pepper
1 tablespoon nutritious yeast
1/2 tablespoon lemon juice
120 grams of gluten-free spaghetti
1. Peel the garlic, finely chop it and add it to a pan, in which you have previously heated the olive oil. Let it cook for about 3-4 minutes or until golden.
2. Add the almond milk over the garlic and bring the composition to a boil. Add salt, pepper, cauliflower washed and finely chopped beforehand. Leave to cook until the cauliflower is soft for about 7 minutes.
3. Transfer the composition to a blender and add the yeast, in addition to the freshly squeezed lemon juice. Pass until you get a homogeneous composition.
4. Cook the al dente pasta in a pot of boiling salted water, as indicated on the package. Once cooked, drain well and add to the bowl in which you put the sauce. Mix well and serve. You can also put some freshly chopped basil leaves for a more aromatic taste.

Tips for Making this Alfredo Pasta
- For some reason, I & # 8217ve always used spaghetti when I & # 8217ve made this recipe. Which is funny, because when I make it without the bacon, we usually use fettuccine noodles. But either work well here!
- Don & # 8217t forget to save some of the cooking water. You want to use this water to loosen up the pasta instead of regular water because it has a high starch content because of the pasta. That starchy water helps not only to loosen the sauce, if needed, but to keep the creamy sauce.
- You & # 8217ll want to cook your bacon instead of buying pre-cooked bacon because you need the fat bacon that is left after cooking your bacon to make the alfredo sauce. For this reason, you & # 8217ll want to cook your bacon on the stovetop instead of baking it. I always chop up the bacon before cooking.
- I almost always use unsalted butter for everything, but you & # 8217ll especially want to use unsalted for this recipe because of the saltiness of the bacon and the cheese.
- Always use freshly grated Parmesan when you are making a sauce like this. The pre-grated cheese will not melt as well. I always buy a big wedge of Parmigiano-Reggiano from Costco, but you can find a smaller wedge of Parmesan at most grocery stores.
- I always add a good serving of fresh cracked pepper to my serving. This is optional, but I love it!
