The roll is left in the fridge for 2 hours after which it is packed with a chocolate icing and finely chopped hazelnuts.

- 4 eggs

- 125 gr yogurt with 3.5% fat
- 125 ml oil
- 200 gr flour

Preparation Chocolate cream for cake & # 8211 quick recipe without eggs
In a saucepan (20 cm in diameter) I put water and sugar. I added 4-5 drops of vinegar and put the pan on medium heat. Vinegar has an anticrystallizing role (prevents sugaring). I brought the syrup to a boil and I timed it for 5 minutes (from the moment it started to boil). You will feel the aroma of vinegar in the air (at the end the cream will not have the taste or aroma of vinegar). I mixed occasionally.
After this time I added the chocolate pieces in the syrup (I used Nestle Desert but you can also choose other brands). I mixed the chocolate until it melted completely (still on the fire) and I brought the syrup back to the boil. From the moment it started to boil in the mass, I timed another 5 minutes. Ready! I got a fluid composition & # 8211 creamy & # 8211 a glaze.
I let the chocolate syrup cool for about 30 minutes (on the windowsill). I mixed occasionally. By cooling it thickens. It should NOT be mixed vigorously because it can turn into fondant (sherbet) & # 8211 whitens and crystallizes.

How can you not feel like seeing such a roll?
For this roll with mascarpone and cream strawberries I used a simple roll top and a strawberry cream with mascarpone and cream prepared cold, without boiling. I decided not to wrap the roll in cream but to powder it only with powdered sugar.

These ingredients are enough for a roll of approx. 35-40 cm long from which to cut 16-20 slices.
Whisk the egg whites with a pinch of salt. When the foam has become hard and sticks to the blades of the mixer, we start to add the sugar spoon by spoon, mixing well after each one. At the end we will get a stiff and shiny foam, which makes spikes when we remove the blades from the mixer. Put the tray in the oven, over medium to low heat (or 150 degrees electric oven with ventilation) for about 30 minutes, until the top is browned on top. Remove to a grill and leave to cool, along with the baking paper. Put another sheet of baking paper on the table and turn the top upside down and carefully remove the baking paper.
Cream for whipped cream mix until it begins to gain consistency. Add the sugar and cream cheese and mix until the cream becomes firm and fluffy.
The cream obtained is spread evenly over the counter. Fruit is added, according to preference. I used fresh strawberries, raspberries and frozen blueberries. Roll the top, from the longest edge, as tight as possible. Wrap well in baking paper (or cling film) and refrigerate for at least 1 hour.

Recipe of chocolate cream rolls or chocolate cream cones is one that reminds us of childhood. Do you remember the homemade cake trays for holidays, weddings or baptisms? Among them was always one full of eyes with these rolls, beautifully arranged and simply delicious. I did another one roll recipe, but with vanilla cream. Although I really like it, the chocolate version is more to my taste and I prefer it every time. I think you already know my passion for this food and the fact that I like chocolate more than any other flavor. Because I remembered this recipe, and because I knew you wanted it too, I filmed it step by step.
For this recipe for chocolate cream rolls, I chose to make everything at home. Both the dough and the cream. In the last recipe I used pastry dough, which although it was made at home, many preferred the one from the trade. The puff pastry is hard, lasts and there is a possibility that it will not turn out as it should. I don't like the one in the store because it has margarine in the composition, and I avoid it as much as possible. For this reason I prefer to make my own dough at home. The dough for this recipe is a fragile, butter-based one, without growth agents. It's that crumbly dough that simply melts in your mouth. It resembles the one for tarts and it is very easy to prepare.
- Wheat (26 & # 21536 cm)
- 4 medium eggs
- 1/2 teaspoon salt
- 80 g spinach
- 70 g flour
- 1 teaspoon grated baking powder
- Cheese cream
- 200 g cream cheese (Philadephia type)
- 70 g butter
- 70 g sour cream (fermented, 24% fat)
- 1 teaspoon of paprika
- 1/2 teaspoon salt
- ground pepper to taste
Prepare the chocolate icing
1. Melt the butter and add the dark chocolate. Stir until all ingredients are smooth. Add sugar, tablespoons of milk and mix well.
2. Once a liquid glaze is obtained, refrigerate it for at least an hour, or until it hardens and becomes a very dense glaze.
3. After putting the icing in the fridge, mix it from time to time, every 15-20 minutes, then put it back in the fridge.
4. Beat the whipped cream until it sticks to the target (if using whipped cream , add 1-2 tablespoons of powdered sugar).
How do we prepare the roll recipe with mascarpone and chocolate?
The preparation method is extremely simple and does not require too much time.
Separate the egg whites from the yolks. Mix the egg whites with the salt powder until they become a hard foam.
Gradually add the sugar continuing to mix until you get a glossy meringue. At this point we will give up the mixer and use a para phone.
Add the orange zest, and over the egg white mixture we will put the yolks one by one, stirring after each one.
After we have finished incorporating the yolks, we gradually add the oil.
At the end we sift the starch powder and mix very well with the help of the target.
We put the resulting dough in a tray (ideally you should have one of 35 & times35cm) lined with baking paper and put it in the preheated oven at 180 degrees Celsius, for about 10-15 minutes.
When the top is baked, take it out of the oven, turn it over on a piece of baking paper and peel off the one on the back.
Turn the worktop face up and let it cool.
We also make cream, we mix nutella with mascarpone. Leave the top on the baking paper and spread a uniform layer of cream on it.
We roll with the help of baking paper and thus we get the roll.
Leave the roll in paper and twist a little at the ends. Put in the fridge for at least two hours, then decorate it with chocolate icing that I melted with liquid cream.
We put the roll in the fridge for another 30 minutes, after which we can slice it.
You can glaze the whole roll with chocolate or you can powder it with powdered sugar.
