  • 1 large carrot, roughly chopped
  • 1 stalk celery, roughly chopped
  • 1 head garlic, halved
  • 1 teaspoon dried rosemary

  • 2 bay leaves
  • salt and ground black pepper to taste
  • water to cover

  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian herb seasoning
  • 1 teaspoon dried rosemary
  • 1 teaspoon onion granules
  • 300g cooked rice

  1. Combine turkey carcass, halved onion, roughly chopped carrot, roughly chopped celery, halved garlic head, 1 teaspoon rosemary, thyme, bay leaves, salt and pepper in a stock pot; pour in enough water to cover. Bring mixture to the boil; cover pot, reduce heat and simmer until flavours have blended, about 1 hour.
  2. Remove turkey carcass and pull remaining meat from bones; reserve meat and discard carcass. Remove vegetables and bay leaves from stock using a slotted spoon and discard.
  3. Stir diced onions, diced carrots, diced celery, minced garlic, Italian herb seasoning, 1 teaspoon rosemary, and onion granules into stock; bring to the boil. Reduce heat, cover pot and simmer until vegetables are very tender, 20 to 30 minutes. Add cooked rice and turkey meat to soup; season with salt and pepper. Cook until rice and turkey have warmed through, about 5 minutes.

Leftover Turkey Soup

Use up your leftover Thanksgiving turkey and gravy to make this light but filling soup made with white rice and veggies simmered to perfection in a savory broth.

Recipe Summary

  • 4 cups chicken or turkey stock, preferably homemade
  • 2 medium leeks, white and light-green parts only, sliced into 1/2-inch-thick rounds and well washed
  • Kosher salt and freshly ground pepper
  • 2 large egg yolks
  • 3 tablespoons fresh lemon juice, plus wedges for serving
  • 2 cups shredded cooked turkey or chicken
  • 1 1/2 cups cooked white rice
  • Chopped fresh dill and extra-virgin olive oil, for serving

In a medium pot, bring stock and 2 cups water to a simmer over medium-high heat add leeks and season with salt and pepper. Reduce heat to medium simmer until tender, about 8 minutes.

In a small heatproof bowl, whisk together egg yolks and lemon juice. Slowly whisk in 1 cup stock mixture, then gradually stir back into soup. Cook over medium-low heat, stirring, until creamy, 4 to 5 minutes. Stir in turkey and rice continue cooking until warmed through, 1 to 2 minutes. Season to taste. Serve with dill, more pepper, a drizzle of oil, and lemon wedges.

This Thanksgiving we cooked a giant 20 pound turkey for 9 of us knowing that we would have turkey left to make sandwiches and also transform into new meals!

I’ve used the following varieties of rice for this recipe and each taste a little different, yet all belly warming delicious!

  • White Rice – simmer for about 20 minutes.
  • Brown Rice – brown rice needs a longer simmer time, about 30 minutes.
  • Wild Rice – additional simmering time needed. Approximately 40 minutes.

Chicken soup is the most recommended soup for it’s healing properties, but I believe the benefits of bone broth applies to any stock!

It’s the broth that is filled with nutrients, especially when it’s made from scratch.

Can you Freeze Turkey Rice Soup?

Absolutely! Here are the steps to freeze the soup:

  1. Prepare soup and let it cool
  2. Put in freezer containers, freezer bags or use a vacuum sealer
  3. Add label with date and name of soup
  4. Frozen soup can be stored for 2-3 months
  5. Thaw overnight in fridge when ready to enjoy

Can You Use Prepared Turkey or Chicken Stock?

Yes! If you don’t have homemade turkey stock, then use your favorite brand of prepared turkey or chicken broth.

In addition, ready cooked chicken or turkey can be added in this soup in place of your holiday leftovers.

This Turkey Wild Rice soup is perfect to make with your leftover turkey because it has all the things in it that you probably already have on hand from your Thanksgiving cooking extravaganza: carrots, onion, celery, garlic, and fresh herbs.

I make my Turkey Wild Rice Soup with butter and a little half and half to give it some creaminess. If you want to make this dairy-free, it’s easy to do. Just use oil in place of the butter to sauté the vegetables and either skip the half and half or use a plain non-dairy creamer.

This is an easy way to make good use of a lot of your leftovers. I just love the flavor of this Turkey and Wild Rice soup and it won’t take you nearly as long as it took to make your Thanksgiving feast.

If you use your turkey bones to make stock this soup will really sing, but it’s also great using chicken stock, so use what you have.

Sherry wine compliments the flavor well here, but if you don’t have it that’s okay, your soup will still be delicious.

The first time I had slivered almonds in my turkey and wild rice soup I knew I’d never go back to leaving them out. Another great addition if you have them. They give the soup an unexpected, but welcome crunch.

That is why I love this Turkey Soup! It is a perfect way to use up leftovers and warm up on a crisp fall day. Not only is it flavorful, but includes some of the best ingredients (like rice, carrots, celery and more) to make it flavorful and delicious.

How to Serve Leftover Turkey Soup

A hearty soup like leftover turkey wild rice soup is great served on it's own with a side salad like a fall harvest salad with roasted butternut squash or an apple walnut salad, and crusty bread for dipping.   • Offer to carve the turkey. Do NOT let that turkey go uncarved to the table. If the turkey gets carved at the table, those sexy turkey bones are exposed in front of the entire table and game over. Now everyone is thinking about potential recipes for turkey bones.

During the meal

  • The seat closest to the kitchen is the MONEY SEAT. Before everyone else arrives, discreetly crumple up the napkin and take a drink from the water glass at that seat to lay claim.
