Cauliflower with chicken

METHOD OF PREPARATION:

We cut the cauliflower into pieces and put it in a pot to boil with a little salt. In a tray we put the chopped pieces, add a little spice (according to taste), add water and put the tray in the oven until the meat is half done.

After it is ready, we take the cauliflower and put it over the meat, we put the sliced ​​pepper, the tomatoes, the garlic cloves cut into pieces, we sprinkle a little breadcrumbs and we put them in the oven for 15 minutes.

Remove the tray, grate the cheese and bake for another 15 minutes.

After that, take out for the last time and pour into the tray a composition made of sour cream and the 2 eggs and put in the oven for another 15 minutes.

I confess that I have made cauliflower croquettes before, but not in the oven version. Yesterday I tried the option below and you should know that they were good because they are light and go great with a slightly spicy sauce. They are not as dry as I expected, probably because they are also with cheese.

Ingredients (for measurement we use a 250ml cup):

  • 1 little cauliflower
  • 1/2 cane breadcrumbs
  • 1/2 cup grated cheese (preferably cheddar, if not a harder cheese)
  • 2 eggs
  • salt pepper
  • oregano

1. Wash the cauliflower well, break the bouquets and boil them in salted water. Then chop it with a blender. I don't know if you noticed, but a blender is welcome at any housewife's house. In fact, a food processor would be suitable because it has everything and I dare to propose a model from Philips, I also have it and I use it to the fullest :).

Returning to the recipe we need 3 cups of chopped cauliflower. In a bowl put cauliflower, breadcrumbs, eggs, grated cheese, salt, pepper and a little oregano.

Form with your hand greased with a little oil croquettes (you can give them a round shape if you want) which we bake in a tray lined with baking paper at 200gC for 10 minutes on one side and another 10 on the other. I greased the pan with a little oil.

Serve with garlic sauce, ketchup, mayonnaise or whatever you like :).
