Shrimp Cocktail is one of my favorite starters, especially at Christmas. The recipe is easy, quick and always impressive. The delicate flavor of the prawns combined with the strong flavor of the cocktail sauce (or pink sauce) creates an excellent mix of flavors.
The cocktail sauce can also be used as an accompaniment to other crustaceans and fish in general, but I also appreciate it on some julienned vegetables :)

For the prawns:

  • 500 g peeled shrimp (frozen ones are fine too)
  • 40 g of butter
  • juice of half a lemon
  • Salt to taste.

  • 1 tablespoon of liquid cream
  • worcestershire sauce to taste

Melt the butter in a pan, add the lemon juice, salt, Tabasco and the prawns.
Mix so that all the ingredients are well blended and cook for five minutes until the prawns have turned pink.
Let them cool and dress them with the sauce that you have obtained by mixing all the ingredients listed above well.
Serve in small bowls garnished with a little chopped parsley.


How to make the shrimp cocktail

Blanch the shrimp in boiling water for a few minutes as soon as they have assumed a slightly pink color (1), drain and set aside.

Collect the mayonnaise in a bowl, add the ketchup (2) and mustard, then mix.

Pour the Worcestershire sauce (3) and then the cognac, then mix until you get a smooth and fairly fluid sauce.

Choose the smallest and most intact lettuce leaves, rinse them, dry them and arrange them in 4 single-portion cups (4).

Let's color this day pink with the famous prawn cocktail with which I have been breaking the boxes for two months now :-) As anticipated in IG, it is a very simple recipe, but at the same time it has the power to catapult you over the years in to which this 1980s preparation was popular in restaurants. And it was really good, not an assemblage of the psychedelic cocktail sauces you can find at the supermarket. It was a real joy for the palate, delicate and enveloping. And today thanks to my friend Valeria I am able to propose it again exactly with the flavor of the past! Everyone ready?

- Mayonnaise (homemade or of a quality that is delicate) - I suggest the Heinz in glass, clear and consistent.

- 500g of shelled Argentine prawns

First, quickly boil the shrimp in lightly salted water. I say quickly because they have to stay very soft. If you use frozen Argentine prawns, first defrost them very well and peel them before putting them in the pot. Once the prawns are cooked, drain and set aside to cool. Then prepare a good homemade mayonnaise, or alternatively transfer half a glass jar of Heinz to a bowl. Start coloring with a few teaspoons of ketchup (go gradually) until you get a delicate pink. Then add a few drops of Tabasco to the sauce, starting slowly with two or three and proceeding tasting from time to time. Tabasco really needs to be dosed drop by drop so as not to make the sauce too strong, I recommend! At this point, add the cooled shrimp to the sauce and transfer them to a bed of iceberg salad. Cover with cling film and keep in the fridge for an hour before serving. Easy right? It seems like a big banality but you will hear the result! Seeing is believing!


Shrimp cocktail

1) Start preparing the shrimp cocktail taking a saucepan and pouring a ladle of water, ½ tablespoon of Tabasco and all the wine.

2) Remove the peel from the onion, chop it finely and add it together with the bay leaf to the pot with the other ingredients. Bring to a boil, then lower the heat and let the mixture cook for about 10 minutes.

3) Wash the tails of shrimp, dip them in the hot liquid and cook for 3 minutes. Drain and remove the shell, then let them cool on a plate

4) While they cool, mix the ketchup and tabasco in a bowl.

5) Take the pineapple, remove the peel and the tuft, then cut it into regular cubes. Once this is done, add the sauce and prawns.

6) Set the cocktail in the refrigerator and take it out just before serving. You can choose whether to arrange it in individual cups or in a single serving bowl. It is excellent as an appetizer, even for an important dinner such as Christmas Eve, but it can be the effective preparation of a cold buffet.

Prepare the cuttlefish ink mayonnaise following this process and keep it aside.

Clean the shrimp by removing the shell, leaving the tail attached. Remove the casing and pat them with absorbent paper.

Blend the breadcrumbs with the parsley, half a clove of garlic, a little lemon zest and the paprika.

When the oil is hot, fry 4 prawns at a time for one minute, take them out, one at a time, transfer them to a serving dish and lightly salt them. Completing the frying of the other shrimps.

Serve the fried shrimp with mayonnaise and serve.
