Ingredients

Flesh from half a mango (reserving a few slices to garnish)

1 small piece of fresh turmeric

Squeeze of lime juice (plus a little zest to garnish)

8 California walnut halves

A handful of raspberries and blueberries

1 tablespoon of coconut flakes

1. Place the mango, turmeric, banana and coconut milk into a blender and blitz until smooth. Add lime juice to taste and blend again until combined.

2. Pour the smoothie into a bowl and garnish with the reserved mango, berries, walnuts, passion fruit, lime zest and coconut flakes.

I said, no way. It’s way more authentic in our home, easy, less-expensive, and … I love this plaque.

People feel more inclined to sit back, relax, and …stay awhile when we make a home-cooked meal.

How to Make It

Preheat broiler with oven rack in middle position. Place flour, egg, and breadcrumbs in separate shallow dishes. Sprinkle chicken with 1/2 teaspoon salt and pepper. Dredge chicken in flour dip in egg, and dredge in breadcrumbs.

Heat 1 1/2 teaspoons oil in a large skillet over medium-high. Add 2 cutlets cook 1 minute on each side. Place on a baking sheet coated with cooking spray. Repeat procedure with 1 1/2 teaspoons oil and remaining cutlets.

Top cutlets with cheese broil 1 1/2 minutes. Heat remaining oil in skillet. Add zucchini sauté 1 minute. Add remaining 1/8 teaspoon salt, tomatoes, and garlic sauté 4 minutes. Serve with chicken, and top with basil.
