Asa cum v-am povestit de atat de multe ori (si continui sa o fac cu lacrimi in ochi, pentru ca a fost cea mai frumoasa perioada din viata mea) sunt foarte legata de amintirile legate de Aschileu, satul de unde e Buni Sia si unde am petrecut muuuulte vacante. Vacanta de iarna a fost mereu “marcata” de taierea porcului, un eveniment la care noi, copiii, nu participam cu nimic, dar eram mereu chemati la marele final: Friptura “Pomana porcului” 🖤

Pomana porcului nu este o friptura faimoasa doar in Ardeal, ci in toata tara. Practic, “Pomana porcului” este o masa traditionala, care se ofera in semn de multumire tuturor celor care au participat si ajutat la procesul de taiere al porcului si pregatirea preparatelor traditionale: carnati, caltabosi, toba etc. La finalul zilei, cand totul era curat, ca si cum nu s-ar fi intamplat nimic, doar camara si afumatoarea erau pline, se facea aceasta friptura delicioasa.

Friptura Pomana porcului are mai multe tipuri de carne si carnati, unii pun si organe, insa de regula se pune fleica, ceafa, carnati si carne macra, gen muschiulet de porc.

Eu va arat azi varianta noastra de Friptura Pomana porcului, pregatita in Multicooker-ul Crock-Pot Express cu gatire sub presiune. Se pregateste foarte usor si totul se intampla datorita complexului aparat Multicooker Crock-Pot Express cu gatire sub presiune. Folosind functia BROWN/SAUTE, acesta functioneaza ca o tigaie, in care rumenim bine-bine bucatile de carne (in untura, desigur). Apoi, nu ne ramane decat sa adaugam mujdei de usturoi si vin si sa setam aparatul pe functia STEW/TOCANITA.

Multicooker-ul Crock-Pot Express cu gatire sub presiune pregateste o friptura suculenta, care se topeste in gura, in doar 35 de minute! Nu trebuie sa o supraveghiezi, nu trebuie sa amesteci, aparatul face singur toata treaba! La final, nu ne ramane decat sa servim Pomana porcului alaturi de mamaliguta, muraturi si, desigur, si mai mult mujdei! 🖤

Ingrediente pentru 6 portii de Friptura “Pomana porcului”:

  • 350g muschiulet porc
  • 350g ceafa porc
  • 300g carnati
  • 350g fleica
  • 1 capatana de usturoi
  • 5 linguri untura
  • salt, pepper to taste
  • 2 foi dafin
  • cateva boabe de ienibahar
  • 100ml apa
  • 100ml vin alb

Spalam bine carnea si o taiem cubulete potrivite. Carnatii ii taiem rondele. Curatam usturoiul si il trecem prin presa. Amestecam usturoiul cu apa si vinul.

Pornim Multicooker-ul Crock-Pot Express cu gatire sub presiune. Alegem functia BROWN/SAUTE si adaugam untura. Cand untura este topita, punem carnea. Amestecam pana e bine rumenita pe toate partile, 10-15 minute. Adaugam sare, piper, foile de dafin si boabele de ienibahar. Sotam alte 2-3 minute. Turnam si amestecul de apa, vin si usturoi.

Inchidem capacul Multicooker-ul Crock-Pot Express cu gatire sub presiune. Inchidem valva pentru presiune. Alegem din meniu functia STEW. Pe ecran va aparea HEAT, semn ca aparatul se incalzeste si acumuleaza presiune. Cand s-a incalzit, va afisa timpul de gatire 35 minute si presiune HIGH.

Cand expira cele 35 de minute, aparatul va intra automat in functia KEEP WARM, care pastreaza mancarea calda pana in momentul servirii. Lasam presiunea sa se elibereze natural, adica nu atingem aparatul, ci ne ocupam intre timp de mamaliga.

Cand mamaliga e gata, deschidem valva aparatului Multicooker Crock-Pot Express cu gatire sub presiune, cu ajutorul unui cleste de bucatarie.

Servita simplu, alaturi de o bucatica de mamaliguta calda, ma gandesc ca aceasta friptura la cuptor din piept de porc si un carnacior alaturi, preparata in acest mod, poate fi consumata, cu moderatie bineinteles, si de catre o persoana careia probleme de sanatate ii interzic consumul acestui gen de friptura foarte grasa sau de catre o persoana care tine la silueta ei si acum de sarbatori )
