Bring some water to a boil first. When it boils, put the washed tomatoes and cook for 2-3 minutes. Remove them with a spatula, let them cool, then peel them and remove the stalks. Chop two tomatoes into cubes, put the rest in a blender and make juice.
Peeled green onions, cut into slices. Peel a squash, grate it and chop the parsley root and celery. Peel a squash, grate it and squeeze the juice. Wash the pumpkins, remove the heads and cut them into larger cubes. Clean the pods at the ends, wash them and cut them into smaller pieces.
Put a pot on the fire, add the oil, green onions, carrots, celery and parsnips. Pour a little water (or you can fry it if you like), simmer for 2-3 minutes. Add the peppers, pods, add a little water and leave them on the fire for 3-4 minutes. Add the zucchini, mix, then pour about 3 liters of water. Cover with a lid, simmer for about 20 minutes.
After 20 minutes, add the diced tomatoes, season with salt, pepper, paprika and vegetable mixture. Cover, simmer until vegetables are well penetrated. When all is well penetrated, put the juice obtained from the tomatoes and cook for another 5 minutes. Parsley, dill and larch, wash them, remove the tails and finely chop. Remove the soup from the heat. Add the chopped greens, Italian herbs, mix and cover the soup for 10 minutes, to get all the flavors.
Serve hot, either plain, with hot peppers or sour cream if you are not fasting. Enjoy your meal!
I know the recipe from my mother, she makes it very often in summer, especially now that she is fasting, she prepares it more often. I also like it cold, it is refreshing, on these heats only good: P.
Melt the butter or oil in a saucepan and simmer the onion and carrot. Pour over 1 liter of water. When it starts to boil, add the peppers and poultry. Towards the end we pour borscht (according to taste) and the peeled and diced tomatoes. We take the soup from the fire and taste it with salt.

How to prepare pod beans in tomato sauce or broth in a jar:
Wash the green beans in cold water and drain in a strainer.
Remove the ends with a knife and cut the pods into 3-4 cm pieces.
For this recipe you can use raw yellow, green or mixed pods.
Place the cut pods in jars. Don't push them too hard but don't leave too much room for them.
The jars must be sterilized beforehand. I explained here how to sterilize cans.
In each jar put 1-2 cloves of garlic cut in half and half a teaspoon of salt.
Top with tomato juice until the jar is full.
Screw on the lids of the jars.
In a pot, place a packed kitchen towel and place the jars on it.
Fill the pot with enough water to reach the top of the jars.
Put on the fire and simmer for an hour.
As the beans are tender, they reach 60 minutes of timed boiling from the moment the water starts to boil.

Soup with tomatoes, zucchini and pods - Recipes
- 300 g minced beef
- an egg
- a medium-sized onion
- 80 g of rice
- a bunch of parsley
- olive oil
- about 12 medium-sized tomatoes
- two pumpkins
- ground pepper
- tomato concentrate
- 2 tablespoons grated Parmesan cheese
- 1-2 tablespoons lemon juice
Peel, wash and finely chop the onion and fry it in three tablespoons of oil until it becomes a little golden. Wash and finely chop the parsley. In a fairly large bowl, put the minced meat, washed rice, egg (without shell, of course), parsley, grated Parmesan, a tablespoon of tomato concentrate (from the box or tube), about three tablespoons of oil (because it's just beef and it doesn't have fat), salt to taste, add the onion that has cooled in the meantime or it's just warm and mix the ingredients for the filling very well.
We wash the tomatoes, wipe them with water, cut their lids and with the help of a teaspoon, but be careful not to break them, we remove the whole core from them. I washed the pumpkins, cut the heads and cut them into three large pieces, from which I first cut a slice for the lid, and with the help of a knife and a teaspoon, I removed the whole core. We fill the tomatoes and zucchini, we put them in a large bowl, we put the tomatoes and zucchini, we add two glasses of water, they don't have to be covered but only to reach almost half of them, we also add the lemon juice (I put it because pumpkins are sweet and I like to have a sour tint).
