Ever since the pan made its way into my kitchen Dominated Stone Pan 28 cm, from the AloShop, the first thought was to try one pan-fried pizza, good and fast, with pork smoked and other complementary ingredients.

It is simply wonderful such a pan with a special, non-stick coating with a hot stone effect, which helps to distribute the heat evenly over the entire surface of the pans.

It does not require grease lubrication, the food will not stick and are much more durable and scratch resistant, thanks to this coating.

They are ideal for use on both gas and induction hobs, electric or ceramic.

And another important aspect is to clean them very easily.

As a result, this pan has already become my favorite in the kitchen.

PS: such pans are also used by the competitors from the Chefs at Knives show and they said they were very satisfied with them.

And to this pan-fried pizza, with pork smoked, in addition to the fact that in a maximum of 15 minutes it was ready, I really liked how the countertop came out, slightly crispy on the outside and very fluffy on the inside.


Pizza in the pan

I had some hesitations regarding the pizza recipe in the pan, for me the pizza is one and good, namely the one baked in the oven, but once tried I can tell you two things it is done in 15 minutes and it is really good :).

Ingredients for a pizza with a diameter of 26cm:

  • 1 or
  • 3 tablespoons yogurt
  • 1/2 teaspoon salt
  • 1.5 tablespoons oil
  • 7-8 tablespoons flour
  • 1/2 sachet baking powder (I put a grated teaspoon)
  • about 50g butter to grease the pan

1. Mix the egg with the yogurt and oil, then add salt and flour mixed with baking powder. The dough is similar in consistency to that of pancakes, not very flowing (maybe the picture will help).

2. Grease a pan with butter (which must have a lid) and pour the dough into it. Grease with tomato sauce, sprinkle with basil and then add what we like ham, mushrooms, peppers, onions, olives and cheese.

3. Cover and simmer for 10 minutes without removing the lid. Don't be afraid it won't burn. After 10 minutes (I left 12 in the idea that in 2 minutes the pan heats up because my pan is made of cast iron) we take the lid and check the pizza with a spatula.

If it is a little red, it's ok, you can leave it without a lid for another minute. If it starts to smoke, it's the bathroom, turn to another food :).

Transfer to a plate and serve. We liked it and asked to repeat it.

In Germany and Austria I have eaten these Bratkartoffeln many times as a side dish to steaks or schnitzels. Basically, there are slices of fried potatoes in the pan to which onions and some smoked meat are added (ribs, kaiser). Some recipes provide for boiled potatoes, others for raw potatoes.

The few tips for the success of this recipe are:

  • potato variety: special fried potatoes or salads ("soaps", not floury) are used to preserve their shape and texture
  • Boil the potatoes in their skins in salted water
  • boiled and peeled potatoes are cut into rounds of approx. 0.5 cm or in cubes with a side of 2-3 cm

From the quantities below results 2-3 servings of Bratkartoffeln. The cooking time of 10 minutes is the frying time and does not include the time of boiling the potatoes in the shell (approx. 40-45 minutes). You can use boiled potatoes from the previous day.

Heat 3 tablespoons of oil in a large frying pan and add the spices, green hot pepper, garlic and bay leaf. Fry together for just a minute, immediately adding the onion and red pepper.

7. After the red pepper and onion have softened (2-3 minutes), add the cauliflower and the chickpeas to the pan. Cook the cauliflower, stirring frequently, preferably in a saucepan, and add 2-3 tablespoons of water.

8. Cook the cauliflower for no more than 4-5 minutes, until it softens a little. At the end, add lemon juice, salt and pepper to taste and chopped green parsley. Mix well and remove from the heat, keeping warm.

Cooking trout in a pan

9. To cook this trout in a pan, heat a pan over medium heat and add the remaining 2 tablespoons of oil. Dab the fish on the skin side with a napkin and place in the pan with the skin down. Keep the trout in the pan with the skin down for 4-5 minutes, until it begins to lighten on the edges.

Place the cauliflower couscous and fish on plates and serve immediately. As a sauce, I made an emulsion of parsley, lemon juice, a little garlic and olive oil, put together in a blender, but you can also serve the fish with a little lemon.

A combination as simple as it is tasty and healthy, based on chicken breast and avocado.

  • a cup of soybeans
  • 1 chicken breast
  • ¼ cucumber, peeled
  • ½ avocado
  • de lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon assorted seeds
  • Verde lettuce

First, boil the soybeans for about 3 minutes, then leave them with the chicken breast and cucumber in a bowl. In a blender, mix the avocado core, some of the lemon juice and olive oil, then add this mixture over the contents of the bowl.
