Wash the sheets well.
Put them in boiling salted water for 2 minutes. Remove them and to keep their color, put them in cold water with ice cubes.
Drain and set aside.
Finely chop them and press them between your hands to drain the water well.
In a bowl put the chopped and drained leaves, the grated carrot, the cleaned and chopped onion.
Add eggs, sour cream, low carb flour and mix well.
Heat the coconut oil in a pan with a tablespoon of oil.
Put a good spoon and form pancakes in hot oil.
Let them caramelize well before turning them over.
Remove to a plate.
Add oil if necessary.
Serve hot with a salad and feta cheese.
