    In a 6-quart slow cooker, combine the beef, green peppers, and onions. In a small bowl, combine tomato paste, brown sugar, vinegar, chili powder, salt, Worcestershire sauce and mutard. Stir into meat mixture. Cove and cook on high for 7-8 hours or until meat is tender.

    Skim fat from cooking juices. Shred beef, using two forks. With a slotted spoon, place about 1/2 cup beef mixture on each bun.

School started in our neck of the woods of Georgia last week. I made these BBQ Beef Sandwiches for our youngest daughter’s first day of school. I haven’t made this recipe in years. Our oldest is not a big fan of beef, so I didn’t make a lot of beef dishes when she was in high school. Now that she’s away at college, beef is back in the house. And because it’s August in Georgia and hot as you know what, my slow cooker has been working overtime, rescuing me from a hot kitchen. I’ve been making all my greatest hits (see list below), allowing me to make great meals in a cool kitchen. I’m so glad I stumbled on this oldie but goodie in my recipe box, it’s officially back on regular rotation!

How to Make Slow Cooker BBQ Beef Sandwiches

What I love about this recipe, it’s so darn easy! Simply spray your slow cooker with non-stick cooking spray, place roast in cooker. Mix the remaining ingredients in a bowl and pour over beef. Cook on low for 8 hours or on high for 4- 5 hours. When beef is ready, remove, cut into thin slices and place back in cooker for an additional 25-30 minutes on low until heated through. Done.

Serve on your favorite roll/bun and listen for the “oh, wow, this is so good.” And you’ll never hear complaints about serving this as leftovers, this is even better the next day.

  • 4 pounds boneless chuck roast, trim fat and discard
  • 1 1/2 cups ketchup
  • 1/4 cup brown sugar, packed
  • 2 Tablespoons Worcestershire sauce
  • 1/4 cup red wine vinegar
  • 2 Tablespoons Dijon mustard
  • 1 teaspoon liquid smoke flavoring
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 8-12 of your favorite rolls or buns for barbecue sandwiches

Spray slow cooker with non-stick cooking spray then place roast in cooker.

In a medium size bowl, mix the remaining ingredients – ketchup, brown sugar, Worcestershire, Dijon mustard, liquid smoke, red wine vinegar, garlic powder, pepper and salt, mix well and pour over roast.

Cook on low for 8 hours or high for 4-5 hours (cooking times may vary, adjust time according to your slow cooker). When ready, remove roast from cooker, place on cutting board and cut into thin slices, discarding fat.

Next, skim fat from sauce in cooker (sauce will be thin) and discard. Return sliced beef to cooker with the sauce, stirring and coating beef, then cover and cook on low for an additional 25-30 minutes, until beef is heated through.

When ready, use tongs to serve the barbecue beef on rolls/buns. Top with your favorite condiments and serve with your favorite sides – baked beans, coleslaw, potato salad, french fries, veggies and more.

Don’t skip the liquid smoke (Taste of Home states optional)

I never brown my roast for this recipe, but you can – browning always adds great flavor.

To reduce fat, trim the excess fat from your roast before cooking or skim well after cooking.

Toast your rolls/buns if you like.

I like this barbecue beef as is, no condiments, it’s good on its own. My husband always tops his with his favorite barbecue sauce.

This Leftover Brisket Sandwich recipe was born because serving hearty, rich barbecue brisket on a toasted, cheesy bun topped with fresh, tangy coleslaw is our favorite way to devour brisket. The sandwiches are finger-lickin’ good – literally – and you will love that you can make them in advance.

While Brisket Sandwiches may seem complicated, they are actually super simple with most of the cooking time spent in the slow cooker – so you can be off your feet – and so your house won’t be drowning in heat all day – just be swimming in the smell of sensational rich, smoky brisket.

The brisket holds its shape so you can either slice the meat it or shred it, which means you don’t have to worry too much about overcooking your beef brisket because it will hold together to the point of being shreddable. When I cooked this beef brisket, it was sooooo tender but I was still able to slice it AND I was still able to easily shred it as well.

The brisket can be made entirely in advance for these Brisket Sandwiches so if you have friends over, the only thing you’ll have to do is assemble the sandwiches when they arrive.

To make Beef Brisket Sandwiches in advance (pick one):

  • After your beef brisket is cooked, remove the slow cooker ceramic insert and refrigerate it with the brisket and all the juices for 1-3 days – without shredding or slicing it. Not only does the flavor improve, it becomes even more tender and makes prep the next day a snap. When ready to serve, simply skim off the hardened fat then cook on low for 1-2 hours until warmed through then shred/slice.
  • OR Make the beef brisket to completion, including shredding it. If you do this, then I would be sure to reserve some barbecue sauce so you can add some sauce to when you reheat the meat. You can reheat your shredded brisket on LOW in the slow cooker, stove or oven.


  • Don’t skip on searing the roast. It gives this recipe a better flavor and texture.
  • Use any bbq sauce you like- store-bought or homemade.
  • Add additional seasonings if you like.
  • Additional liquid is not needed in this recipe or else it will end up being too watery.
  • If the roast is too watery, just reduce the liquid on the stovetop by cooking it without the lid for a few minutes.

Add all the ingredients plus 1/2 cup beef broth (low sodium) in a crockpot and cook on low for 6-8 hours and then shred with forks.

  • Let it cook another hour after adding sauce: Warmed sauce is infinitely more delicious that cold bottled sauce and the meat will stay moist in the slow cooker with the added sauce.

How To Make BBQ Beef Sandwiches

Prep &ndash Start by placing the thawed roast into the slow cooker. Next, you&rsquoll pour the entire bottle of bbq sauce over the meat. Then, take the empty bbq sauce bottle and fill it with water. Give it a good shake to get the remaining sauce and then empty it out over the roast. Finally, add enough water into the crock pot until the meat is almost covered.

Cook &ndash I prefer to cook the beef on low for about 6-8 hours. If you don&rsquot have that much time, you can cook it on high for about 4-6 hours.

Almost Done &ndash About 30 minutes before you&rsquore ready to eat, take the meat out and shred it with meat claws or a couple of forks. Put the shredded meat back into the slow cooker and then let it cook uncovered for the last 30 minutes. This will allow some of the liquid burn off.

Serve &ndash Remove the meat and serve it on toasted buns and slather it with more bbq sauce or top it with some Coleslaw. You could skip the buns and add some sliced potatoes or veggies to the crock pot if you&rsquod like. Either way, you&rsquoll love it!
