  • for 2 servings
  • 600 g pumpkin pie
  • 3-4 onion salads
  • 2 sweet red peppers
  • a tablespoon of honey or maple syrup
  • 2-3 tablespoons olive oil
  • juice from a lemon
  • 4-5 cloves of garlic
  • 1 teaspoon cumin seeds (optional)
  • salt
  • pepper
  • green parsley

How to prepare fasting salad with lentils and pumpkin

Peel a squash, grate it and cut it into 1 cm slices.
Peel the onion and cut it into quarters. Wash the peppers and cut them into strips. Peel the garlic.
Drain the lentils, rinse under running cold water and drain in a sieve.

Place slices of pumpkin, onion, pepper and garlic on a tray lined with baking paper and sprinkle with half of the dressing consisting of lemon juice, oil, honey, salt and pepper.

Place the tray in the preheated oven at 220 degrees C for 20 minutes or until the vegetables begin to brown slightly and the pumpkin penetrates easily with a fork.
Remove the tray from the oven, leave to cool then add well drained lentils, the remaining dressing and chopped parsley.
Mix lightly and lentil salad with baked pumpkin can be eaten.

Ingredients

  • 1 pumpkin, 1 ½ kg
  • 100 g lentils
  • 2 potatoes
  • ½ celery, small

  • A piece of pumpkin, about 300 grams, cut into pieces.
  • 2 carrots without skin and cut into pieces.
  • 250 grams of potatoes peeled and cut into pieces.
  • A medium sweet yellow potato peeled and cut into pieces.

On fasting days over the year, when you don't know what to cook anymore, try these salads and a delicious soup, which is very easy to prepare. You don't need complicated ingredients, and the result will be just right.

Baked pumpkin and couscous salad

Ingredients (4 servings)

1 pumpkin butternut squash

1 tablespoon cumin seeds (cumin)

5 sprigs of green thyme

4 tablespoons olive oil

2 tablespoons pumpkin seeds

How to prepare salad with baked pumpkin and couscous

Preheat the oven to 190 degrees Celsius. Peel a squash, grate it and chop the hot peppers into a baking tray.

Sprinkle cumin seeds over the pumpkin and place the thyme sprigs, then mix them with 2 tablespoons of olive oil. Add sea salt to taste and bake in the oven for 45-50 minutes, until the pumpkin is cooked and lightly browned, and halfway through the time, turn the pumpkin pieces on the other side.

Put the couscous in a bowl and pour enough boiling water over it, so that there is about 1 centimeter of water left over the couscous. Cover the bowl and let it soak for 10 minutes.

Fry the pumpkin seeds in a dry pan. Uncover the couscous dish and loosen it with a fork, squeeze the peel and lemon juice over it and mix, then add the baked pumpkin and 2 tablespoons of oil. Serve the salad and finally sprinkle the fried pumpkin seeds.

Tabbouleh salad with lentils and beets

Ingredients (4 servings)

1 link parsley (plus several leaves, for decoration)

2 beets, cleaned and cut into quarters

1 red apple, without spine, sliced

1 teaspoon ground cumin

4 tablespoons olive oil

400 g canned chickpeas, drained and washed

400 g canned green lentils, drained

Put the greens (parsley, mint, chives), radishes and beets in a food processor and mix until chopped and you get small pieces. Add the rest of the ingredients, adding the lemon juice little by little, to taste (you may not need to use it all), but do not mix in the food processor. Season with salt to taste, then place the salad on a large plate, decorated with a few parsley leaves, and serve immediately.

Soup with baked peppers and tomatoes

Ingredients (2 servings)

400 g tomatoes, cut in half

1 red onion, cut into 4

2 red bell peppers (or 2 red capsicums), chopped

2 tablespoons olive oil

2 cloves garlic, peeled

a few sprigs of thyme

2 tablespoons ricotta, optional (if you are fasting, give up ricotta cheese)

basil leaves to taste

1 tablespoon mix of seeds, fried

How is it prepared soup with baked peppers and tomatoes

Heat the oven over high heat. Put the tomatoes, onions and bell peppers in a baking tray, mix them with oil and season to taste. Add the garlic and thyme sprigs, then bake for 25-30 minutes, until all the vegetables have softened and caramelized a little.

Remove the garlic from the peel in the pan, unfold the thyme leaves and discard the peels and twigs. Add the vinegar to the pan and then mix everything with a blender or a vertical blender, adding enough water until the soup reaches the desired consistency (you can pour 150 ml).

Reheat the soup if necessary, taste and season, then pour it into bowls and put in each a tablespoon of ricotta (if desired), a few basil leaves and seeds and sprinkle each portion with a little oil. Serve the soup with bread to taste.


  • 480 g lentils (boiled)
  • 1 large tomato
  • 100 g tuna in oil
  • 100 g olives
  • 1 small onion (or one green)
  • 3-4 tablespoons olive oil
  • juice from a small lemon
  • salt pepper

I had two cans of lentils so I drained them well of the juice and added over them: finely chopped onion and diced tomatoes, olives, drained tuna oil, salt, pepper, lemon juice and olive oil.

I mixed lightly and decorated with lemon slices. Very simple and tasty. Good job and good appetite!
