I have a girlfriend who is gluten intolerant. So I made gluten-free muffins: X, using rice flour. You can also use special flour that is commercially available.

RECIPE PREPARATION Gluten-free muffins:

Mix eggs with sugar at high speed, add oil and continue until they become foam and change color, add mashed banana and yogurt, mix well and gradually add rice flour and baking powder. The composition is put in forms, clean a banana and cut into slices, put in each muffin, put in the oven at 180 ° for 20 minutes.

When they are cold, they can be powdered with sugar or decorated with cocoa icing.

During this period, I want to test as many gluten-free, lactose-free recipes, sometimes without eggs or other allergens. Due to my food allergies, the options for what I can eat have been reduced, unfortunately. Especially since wheat flour and egg are the most common ingredients, especially cakes.

So today I said try a cake. It's easy to make and delicious. You can enjoy it as a dessert, snack or even as a breakfast accompanied by a tea. It's a simple recipe that you probably knew from childhood. I love the cake. It reminds me of my routine before I go to school. Sometimes before leaving home we would eat a slice of cocoa cake and drink a cup of tea.

I think everyone has eaten or made a cake so far. I prefer the classic one, with cocoa and raisins. What kind of cake do you prefer?

I decided to try a healthy and allergen-free version. I replaced the eggs with banana, but if you want you can use homemade or organic eggs. It's very good anyway. In the recipe I used soy milk, but you can also use cow's milk if you do not have an allergy or intolerance to it. It will definitely give a great taste.

Like the utensils, you won't need anything special, just what you already have in your kitchen:

  • A form of cake
  • Minimum 2 plastic bowls
  • Flour sieve, cocoa, baking powder
  • Silicone / rubber spatula
  • At least a saucepan to melt the coconut butter and heat the milk.

ingredients

  • 3 eggs or 2 tablespoons ground flax seeds, soaked in 2 tablespoons water and half a crushed banana
  • 200 ml maple syrup, or 250 ml if you want it to be sweeter
  • 200 ml coconut butter
  • 200 ml soy milk
  • lemon peel to taste
  • 50 gr raisins
  • 10 gr cocoa
  • 300 gr flour & # 8211 mix Schar & # 8211 Gluten Free, Universal
  • 7 gr baking powder

Method of preparation

  1. Mix the dry ingredients in a bowl (flour and baking powder)
  2. If you use flax seeds, mix them with lukewarm water and let them soak for about 5 minutes. They will have a viscous consistency. Mix with the rest of the wet ingredients instead of eggs. Half a banana replaces an egg
  3. Mix the wet ingredients in a bowl (eggs (or if you don't use eggs, flax seeds and ground banana) and maple syrup)
  4. Melt the coconut butter in a bain marie
  5. Heat the milk so that when we mix it with the coconut butter, it does not harden from the too cold temperature of the milk.
  6. Coconut butter and soy milk are mixed with wet ingredients
  7. Gradually add over the wet ingredients, the flour mixed with baking powder and mix
  8. Add raisins and lemon peel to the composition
  9. We prepare the cake tray, you can use vegetable oil or coconut oil, to make it easier to remove from the form
  10. Pour half of the composition into the pan
  11. In the other half of the composition add cocoa, mix and pour into the pan over the rest of the dough.

Baking time: about 50 minutes

Baking temperature: for gas ovens, between stage 1 and 2, for electric ovens at 170 °C

Gluten-free white bread

For people with gluten intolerance, making bread at home is an important part, from looking for the best ingredients to the actual preparation. Fortunately, there are also gluten-free bread recipes that do not require kneading, so the cooking time is reduced!

For the vegan version, you can use chickpea flour!

Ingredient:

  • 2 egg whites
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 6 teaspoons oil
  • 1 teaspoon white gluten-free flour
  • 2 teaspoons gluten-free dry yeast.

Preparation method:

Grease a loaf of bread with a little oil and line with baking paper.

In a bowl, mix the egg whites with the sugar, salt, 3 teaspoons of oil, vinegar and water. Mix well until you get a homogeneous composition.

Add flour and yeast and mix well. Then incorporate the rest of the oil, using a spatula, to chew lightly.

When the composition is homogeneous, pour it into the pan and leave it to rise for an hour.

When the composition has doubled in volume, place the tray in the preheated oven. Bake the bread for an hour.

After removing the bread from the oven, let it cool completely before slicing it. In this way, the crispy crust is formed from above.
