Until recently, I didn't like pasta, but I started easily and diversified, and now they are really "dear" to me, but as we well know, it wasn't the pasta itself that changed my mind, but the sauces, and this pesto sauce is one one of my favorites!

  • 50 gr capers
  • 2 pieces of garlic
  • 3 cups fresh basil leaves (basil in our country)
  • 1 cup parsley
  • 2 tablespoons squeezed lemon juice
  • half a cup of grated Parmesan cheese
  • a quarter cup of olive oil
  • salt

Servings: 2

Preparation time: less than 15 minutes

RECIPE PREPARATION Pesto sauce:

Heat the capers in a warm pot, preferably not to stick, then put them in a blender with the rest of the ingredients and mix well until it becomes a cream. The sauce can be stored in the refrigerator for several weeks, provided that in the jar in which you keep it, it is covered with oil.

To make pasta with pesto sauce, measure a full spoonful of the sauce for each serving of pasta. When you use it after a while, put the sauce in a saucepan with a little water, mix and then pour over the pasta.

Homemade pesto sauce

About how well-known Italian cuisine is and about how appreciated its rich flavors are, we could write a few good pages, but today we limit ourselves to revealing how you can prepare at home one of the most beloved Italian sauces.

The pesto alla Genovese basil sauce was named after its place of origin, namely Genoa, the capital of Liguria. Coming from the city between the mountains and the sea, the strong and unmistakable aroma of this dish fully conveys the uniqueness of the landscape, the fresh and vibrant atmosphere that enlivens this place.

As amazing as the taste of the pesto sauce is, the simpler the way you can prepare it. The ingredients used are few, but their impeccable quality must be a decisive criterion in their choice.

So, you will need:

  • 175 gr pine seeds
  • 30 gr fresh basil leaves
  • 70 ml of olive oil
  • 40 gr parmesan race
  • 1 clove of garlic
  • 1 pinch of salt

The basil leaves should be washed under running water and left to dry until they completely remove moisture, because the water drained from the leaves can alter the consistency of the sauce obtained.

All the ingredients are placed one by one, one at a time and without a quarrel, in the bowl of a kitchen blender and ground at the lowest speed.

The order in which they are added to the grind is as follows: flax seeds, salt, garlic, basil, oil and parmesan.

The ideal texture of the pesto sauce is obtained by maintaining the low speed and the relatively short grinding time of the ingredients.

Italians love this pesto sauce in combination with pasta, beef or bruschetta.

We also recommend that you prepare it periodically so that you have it at hand whenever you want to add to your meals a drop of the incredible diversity and creativity of Italian cuisine.

Sos chimichurri

This chimichurri sauce is of Uruguayan / Argentine origin suitable for various dishes, both cold and hot.

You will find variants and variants of this sauce, each boasting that his or her is the best, the most authentic or even original. But there are varieties depending on the area or country, as with our stuffed cabbage rolls. Some make it with white wine vinegar, others with red wine vinegar or mixed with apple cider vinegar, some actually grind the ingredients and crush them, others only touch them with a knife and look on the internet you will find variants and variants which more than which.

The first interaction was in 2012-2013 in Miami at Lola Restaurant & Grill, in an authentic Argentine restaurant. There I ate for the first time a high quality beef, beautifully marbled and with a phenomenal taste cooked on a charcoal grill, placed in front of customers.

I could talk a lot and well about this sauce and I think there is nothing I would not associate it with. From vegetables to meat, fish and even pasta. It is generally used for grilled meat, but along the way I also associated it with bean hummus or in chicken salad.

It is a cold sauce, made from 100% vegetable ingredients, also suitable for those who are vegetarians.

Stay tuned for the list of ingredients, the easy way to prepare and it will definitely enter your menu!

Ingredient:

  • 3 parsley bindings
  • 1 tablespoon dried oregano tip
  • 1 clove of garlic
  • 1/2 yellow onion
  • 150 ml extra virgin olive oil
  • 1/2 red hot pepper
  • 40-50 ml of white wine vinegar, depending on taste
  • 1/2 teaspoon hot pepper flakes
  • Salt to taste

Method of preparation:

Peel the onion, garlic and finely chop them.

Remove the seeds from the hot pepper and chop finely.

It is very important that the ingredients are cut from the knife and the knife is well sharpened. Do not put them on the grater because the taste will be distorted!

Put in a large bowl of oregano with vinegar to hydrate.

Add the rest of the ingredients and mix well. It can be used immediately after homogenization, but it is much better after a few hours, when the tastes combine.

That was simple, fast and tasty. And from here I can only wish you good luck and good appetite!

Vegan basil pesto

Pesto sauce is part of Italian cuisine, known as "Pesto alla Genovese", it is the most known and appreciated Italian sauce. We find it in many recipes and it is tastier than the one we find in stores.

I don't know if you've ever wondered how fast and easy pesto is made. All we need is a food processor, or a vertical mixer, fresh basil leaves and flax seeds (we usually have the rest of the ingredients at home). We mix them all and in less than 10 minutes we get a tasty and flavorful pesto sauce. The only drawback is that fresh basil is quite difficult to find, so if you are a pesto fan, the easiest way is to plant your own basil, either in the garden or in planters. It is very easy to take care of and in this way you will always have fresh bucs for aromatic dishes.

If you can't find fresh basil, another option would be Rocket pesto.

INGREDIENT:

  • 50 g basil leaves
  • 25 g pine nuts
  • 1 clove of garlic
  • 1 tablespoon inactive yeast
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • salt

METHOD OF PREPARATION:

1. Wash the basil leaves and put them in the food processor. We can also use a vertical mixer.

2. Add the pine nuts, a clove of garlic, inactive yeast, olive oil, lemon juice and salt to taste. Mix very well, until all the ingredients are crushed and get a creamy texture.

Store the pesto sauce in the fridge in a jar covered with a tablespoon of olive oil, otherwise it will oxidize. Or if you want to do more, you can keep it in the freezer for a longer time, put in bags.

Asian-inspired pesto: with arugula, pistachio and saffron

  • 1/4 orange, preferably organic
  • a few strands of saffron
  • 50 g of fresh arugula
  • 1 clove of garlic
  • 100 g of raw and unsalted peeled pistachios
  • 4 tablespoons grated cheese (Comté type)
  • 5 tablespoons olive oil
  • Salt and pepper.

Method of preparation: Put the orange peel on the small grater, then squeeze the juice and dissolve the saffron in it. Rinse and drain the arugula leaves, then cut them coarsely. Peel a squash, grate it and squeeze the garlic. With a blender, mix the pistachios, cheese, garlic and arugula well. When the composition is almost homogeneous, gradually incorporate the olive oil and orange juice with saffron. Turn off the blender, add the orange peel, season to taste and mix everything again.
