Ingredients

  • ½ bag of defrosted hash browns
  • 1/2 Teaspoon pepper
  • 8 Ounces potato starch
  • 1/2 Teaspoon cayenne pepper
  • 1/2 Tablespoon smoked paprika
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon onion powder
  • Salt to taste
  • 4 eggs, beaten
  • 3/4 Pounds bacon, cooked and chopped
  • 5 jalapenos, sliced thin
  • 1 1/2 Pound jalapeno Jack cheese, shredded

For the Crème Fraiche

  • 1 cup whipping cream
  • 2 Tablespoons buttermilk

Sriracha

  • 8 jalapenos, seeded
  • 5 red bell peppers, seeded
  • 3/4 Cups garlic cloves
  • 1 3/4 Cup cider vinegar
  • 1/3 Cup honey
  • 3/4 Cups tomato paste
  • 1 Tablespoon kosher salt

This classic lasagna uses rows of tater tots instead of noodles, because life is short and sometimes the best way to commemorate an occasion is with a ridiculous, what-was-I-thinking? treat.

The West Coast is home to all kinds of incredible breakfast taco joints, but they're stupid-easy to make at home, too&mdashespecially if you use microwaved tater tots as a shortcut.

Imagine cheesy garlic bread, only made out of tots. Then stop dreaming and start preheating the oven, because you KNOW this needs to happen, ASAP.

You know how you secretly plot which nacho chip you're going to grab next, just to ensure you get the maximum toppings-to-chip ratio? This version ensures there's never a dull bite, because even a plain tot is still a delicious tot.


Preparation

Preparation of scrambled eggs:

Over medium-low heat, melt the butter in a medium-sized nonstick skillet. Coat the pan evenly with butter.

Whisk the eggs, making sure not to overbeat them, just so they are incorporated.

Add eggs to center of the pan.

Wait until the edges of the eggs just begin to set. Bring a spatula around the edges of the pan to create large, soft curds. Do not agitate aggressively. Instead, gently push and fold the eggs.

Cook for about 2-3 minutes. Remove eggs from heat and serve with waffle.

Preparation of waffle:

In an even layer, pile a handful of tater tots across the entire waffle iron. Sprinkle with salt.


Just like chips or popcorn, you can add seasonings to tater tots. Cook them first, and then toss them with seasoned salt, or dip packets like onion dip seasoning, barbecue spice, or curry powder. Sesame seeds and nori would be tasty as well. If you go the curry powder route, we𠆝 recommend sprinkling it on almost-done tater tots and then letting them finish together for another minute or two.

For the ultimate high-low snack, you could also take a cue from the classic potato chip, sour cream (or crème fra໬he), and caviar pairing and swap in tater tots for the chips.


Tater Tot Waffle Breakfast

A few weeks ago on a Sunday morning, I woke up with a serious hankering for hash browns but I also didn’t really feel like going out for breakfast. Luckily, we had some tater tots in the freezer so I started brainstorming how to make this into a Sunday breakfast for Derek and I. I remembered seeing on one of my favorite blogs, using a waffle iron to make hash browns. I wondered if this would work for tots? I had to at least try! You guys, it was so tasty!

Get your tots out ahead of time so that they can thaw. You’ll want them soft enough so that they can be squished in the waffle iron.

Start by preheating your waffle iron. Each iron is different, but ours has a light that comes in when it’s ready to use.

Now cook your bacon over medium heat in a nonstick skillet until it’s browned, about 10 minutes. Scoop the pieces of bacon on a paper towel-lined plan and reserve about a tablespoon of the grease in the pan. Put your skillet back on the heat.

Once your iron is ready to go, coat it liberally with cooking spray. Now spread half of the tots out on the waffle iron making sure they are touching each other.

Then put the top lid of the iron down and press. This will make your waffle nice and crunchy. Let that cook for about 3 minutes.

While the waffle (totffle?) is cooking, start on your eggs. Crack your eggs in the pan with the bacon grease.

I like my eggs with a runny egg but the whites completely done and slightly crispy edge. To do this, cook on one side for about 4 minutes. Then turn the heat to low and cover with a lid.

Open your waffle iron and check your first waffle. If it’s crispy, it’s done. If not, it may need another minute or two. Carefully lift the waffle out of the iron with a couple of forks onto the plate you’ll be serving it on. Now make your second waffle.

Once the second waffle is done, put it on second place and top each one with an egg and divide the chopped bacon between them.

Top with ketchup or Sriracha if desired and enjoy! The tot waffle is crisp on the outside but soft on the inside and the gooey egg adds some nice richness. Yum!

This meal is perfect for a Sunday morning brunch or for an easy weeknight meal.


This recipe is best made with a basic waffle iron or waffle maker and not a Belgian waffle iron. The large Belgian waffle iron is harder to fill with the tater tots and won't crisp them the way you really want. Below are some good options if you haven't invested in a waffle maker yet for your own kitchen.

Preheat the waffle maker according to manufacturer directions.

Once hot, spray lightly with non-stick cooking spray.

Lay the tater tots onto the bottom of the waffle maker in a single layer making sure you cover most of the base.

Sprinkle lightly with salt and pepper, or chosen spice blend.

Press down the waffle iron and cook for 3 minutes.

Check and press the waffle maker don more so the tater tots stick together.

Continue cooking for 7 to 8 minutes until they are at your desired crispness.

Carefully remove from the waffle maker and season additionally, if desired.

Repeat as many times as needed.

Cut into sticks, or serve whole with your favorite dipping sauce.
