  • Biscuit Base
  • 125g gluten-free flour
  • 75g desiccated coconut
  • 125g butter, melted
  • 100g caster sugar
  • 1 heaped tablespoon unsweetened cocoa powder
  • Icing
  • 120g icing sugar
  • 1 heaped tablespoon unsweetened cocoa powder
  • hot water as needed

  1. Preheat oven to 180 C / Gas 4.
  2. For the base: Mix together flour, coconut, butter, sugar and cocoa powder. Press into a baking tray. Bake in preheated oven for 10 minutes. Let cool.
  3. Meanwhile, make the icing. Mix together icing sugar and cocoa with just enough water to make a drizzly icing. Drizzle, then spread over the biscuit base. Let set, then slice and hide.

Wow - just made this and it's just lovely! Soo easy too. I didn't even bother to ice them and they're still yummy.-01 Aug 2011

Follwed the instructions to the letter, no mention of baking tin size, used gluten free flour as I am coeliac, was like a greasy biscuit, had to put the lot in the bin- yuk. Had to give one star as that is the minimum!-16 Sep 2012
