Meatballs in cheese sauce

I chose to make sausage meatballs because they are much tastier. I bought the meat already prepared and made small meatballs, which I fried in hot oil. When they browned, I drained them well of oil and placed them in a plate.

Then we start preparing the cheese sauce:

Wash the pepper, cut it in half lengthwise, remove the spine, ribs and seeds and cut it into small cubes.

Peel an onion, wash it and finely chop it.

In a pan, put a little oil and sauté the onion with the pepper. Add a few tablespoons of water and leave to harden over medium heat until the water has evaporated.

Then add the cheese, sour cream and at the end, the Parmesan cheese mixing gently. Let it simmer for 2-3 minutes.

Add the meatballs to the cheese sauce and mix, leaving everything on low heat for 1-2 minutes. Season with salt and pepper.

Serve hot sprinkled with freshly chopped parsley.

Spicy meatballs in sauce, under the lid of mashed potatoes

Usually when I make meatballs, I make a lot and eat hot with mustard, then for the ones that remain I make a sauce, but this time I made it like a pudding, with mashed potatoes. They are very good!

  • For meatballs:
  • 1 Kg minced meat mixture: pork + beef + chicken
  • 2 onions
  • 6 cloves garlic
  • 1 carrot
  • 4 potatoes
  • 2 eggs
  • salt
  • pepper
  • thyme
  • frying oil
  • For the sauce:
  • 1 jar zacusca (400 gr)
  • 3 tablespoons wasted juice
  • 1 teaspoon sugar
  • For puree:
  • 1 Kg of potatoes
  • 30 gr butter
  • 150 ml of milk
  • the water
  • salt
  • chopped basil
  • 4 cloves of garlic
  • 150 gr smoked Delaco cheese

First we prepare the meatballs.

We clean the vegetables and wash them, then we pass the onion and the garlic through the mincer or robot and we mix them with the minced meat.

We pass through the mincer and the potatoes with the carrot, we squeeze them well by the juice they leave and we mix them with the minced meat.

Add salt, pepper, thyme and two whole eggs and mix.

Form round and small meatballs and fry them in hot oil on all sides, then take them out in a sieve or absorbent towels to remove the oil.

Meanwhile, we prepare the puree.

We clean the potatoes, wash them and boil them in salted water.

When they start to crumble, drain them and pass them together with the cleaned and pressed garlic, the chopped basil. Add the butter and dilute with hot milk.


For the sauce, mix the zacusca with the tomato juice and sugar.

In a heat-resistant form, place the meatballs, then add the sauce and cover with the mashed potatoes.

Bake for 15 minutes at 180 degrees, then remove and grate the cheese on top, then put back in the oven for 5 minutes.


Meatballs with tomato sauce

What do I like most about this recipe, besides the special, normal taste? The fact that the diners have the impression that it is a sophisticated recipe, which is difficult and will praise you for your qualities as a housewife. What they don't know is that you need a maximum of 30 minutes to make this complete meal: meatballs + sauce + garnish.

I chose to make different meatballs, from chicken (minced chicken breast and not ready-made chicken, in which I don't want to think about what is minced at the slaughterhouse), with parmesan and a lot of basil. Tomato sauce is the classic recipe of the famous Grandma Sia.

Ingredient:
& # 8211 500 gr minced chicken
& # 8211 ½ freshly grated parmesan cup
& # 8211 ½ cana pesmet
& # 8211 one or
& # 8211 a handful of basil leaves
& # 8211 a small white onion, finely chopped
& # 8211 2 cloves of garlic
& # 8211 salt, pepper to taste

Preheat the oven to 200 degrees. Mix the minced meat with the breadcrumbs and parmesan, knead well, then add the rest of the ingredients: egg, finely chopped basil, crushed garlic, onion. Then season to taste. We shape the meatballs and place them in a large tray, lined with baking paper. Bake for 20 minutes, until lightly browned.

Don't worry if the chicken meatballs seem dry, they will be much better after boiling a little in the tomato sauce.

Ingredients for the sauce:
& # 8211 4-5 tablespoons oil
& # 8211 1 ½ tablespoon of flour
& # 8211 500 ml of homemade broth
& # 8211 2-3 tablespoons of sugar
& # 8211 salt, pepper to taste

Mix the oil with the flour, in a saucepan, without putting them on the fire. Stir until we no longer have lumps of flour, only then we put the pan on the fire. We do not have to fry the flour as for rantas, but at the first boil, when the composition makes balloons, we remove from the heat and add all the broth and sugar. Put the pan on the fire again and let it boil a little, until it starts to thicken. Add the meatballs and let them boil for a few more minutes with the sauce.

I served the meatballs with magic cous-cous, ready in 5 minutes, bought from Carrefour (their own brand, but very good). But you can also serve it with mashed potatoes, white or sweet potatoes, natural or fried potatoes, rice, etc. You're welcome!

Meatballs with BROCCOLI and CHEESE

If you want to Incorporate more vegetables into your diet you can try these broccoli meatballs. The network is as simple as possible, and the result - a quick, tasty, healthy snack or garnish.

It is the kind of food that even the most demanding can like the kids. Broccoli becomes delicious in combination with cheese and eggs.

Broccoli meatballs and cheese

Broccoli is part of the cruciferous family, along with cabbage and cauliflower. This category of vegetables is known for their beneficial effects on health, due to the content of important bioactive compounds, such as glucosinolates, phenols, vitamin C. and mining.

Diets rich in broccoli can play a role in preventing chronic diseases, such as diseases cardiovascular and cancers (especially breast cancer and the of the prostate).

Eating broccoli can give us more protection against diseases associated with oxidative stress due to its antioxidant effects.

Meatballs with broccoli - recipe

ingredients

• 450 g of broccoli
• 3 eggs
• 200 g cheese (cheese, telemea, cottage cheese, curd, etc.)
• 3 cloves of garlic
• 200 g of breadcrumbs
• 2 teaspoons of spices
• ¼ teaspoon of salt

Turn on the oven and let it heat up to 190 degrees Celsius. Unwrap the broccoli in the bunches, wash them, drain the water and place them in the large bowl of the food processor with the S blade.

Add the broken eggs, grated or crushed cheese, salt and spices and beat a few times, until the broccoli is finely chopped and a bound composition results. If it is too soft, add more breadcrumbs.

Put a little oil in the pan, grease it well and place baking paper. To shape the meatballs, you can use the ice cream cup, or you can make them with your hands. Place the meatballs in the pan and flatten them with the back of a fork.

Bake the meatballs for 20-25 minutes, or until golden on the surface. Allow to cool slightly before serving. They can be eaten with tomato sauce, yogurt, rice, puree or vegetable / green salads.

Meatballs with ricotta in tomato sauce with fennel

I saw one evening, but unfortunately not completely on a culinary show, an uncle cook making meatballs with ricotta cheese.

Unfortunately, I didn't see the complete recipe, I only remembered from everything that was on the show, that being with cheese, it's good to have the meatballs cooked in sauce and not fried because the cheese would melt and something we don't want would come out. I created the recipe in my style, Chiftelute with ricotta in tomato sauce, with the flavors that I like and I recommend this dish because it is very tasty.

750 gr minced meat (beef + pork)

10 cm finely chopped fennel

cumin seeds and ground

half a vanilla bean

I put in a pan over low heat the finely chopped fennel with the garlic, a little oil, turmeric, cumin, cardamom, chilly, vanilla pods and I let them cook lightly.

I then added the tomato puree and water and let the sauce boil slightly.
