Tons of white parties will be underway (since wearing the color is officially allowed now) as well as BBQs, picnics, and lazy Sundays at the beach. But this is just the beginning. Summer is several months long — just think about all of the opportunities to have a good time and how you can do it successfully and easily.

We’re rolling out a slew of great ideas and fresh content that will ensure you have your best summer yet.

Chef Elle shares recipes to say goodbye to summer and hello to fall

Impress your guests with fall-themed breakfast recipes on a chilly weekend morning! Chef Elle Green shares recipes for Grits Sausage Gravy and Gluten-Free Peach Cobbler: Grits (yields 6-8 servings)
2 cups chicken stock
1 ½ cups milk
1 ½ cups heavy cream
1 cup grits
sea salt

Special Tool: food processor

Set a medium heavy pot over medium-high heat and add stock, milk and cream. Once boiling, reduce heat to medium-low. Stirring constantly, add grits and cook approximately 20 minutes. Line a standard loaf baking pan with parchment paper. Fill pan with grits. Cover with plastic film and freeze for 2 hours or refrigerate overnight. When ready to serve, place the oven rack near the top element. Preheat oven to 425 degrees Fahrenheit. Remove grits from pan and cut into even slices. Lightly brush with oil and transfer to a parchment lined baking sheet, baking 12 to 15 minutes.

Easy Solutions: To dress these grits up, add your favorite cheese or even diced jalapenos.

8 ounces ground turkey thigh meat
¾ teaspoon sea salt
½ teaspoon baking soda
1 ¾ teaspoon dried parsley
1 ¼ teaspoon dried sage
½ teaspoon dried thyme
1 teaspoon onion powder
½ teaspoon garlic powder
2 teaspoons red pepper flakes
2 tablespoons grapeseed oil

Mushroom Gravy
4 ounces cremini mushrooms, quartered
1 tablespoon gluten-free flour
6 ounces chicken stock
½ teaspoon red pepper
2 teaspoons dried parsley
sea salt
black pepper

Mix turkey and spices together and set aside. Set a medium skillet over medium heat and add oil and ground turkey. Using a spoon, break meat into bite-size pieces. Once the meat is slightly pink, stir in mushrooms and cook an additional 3 to 5 minutes. Stir in flour. After a minute or so, stir in stock, red pepper, and parsley, and cook until the gravy thickens. Taste and sprinkle in sea salt and black pepper.

Gluten-free Fruit Crisp (serves 6)
4 peaches, pitted and diced
16 ounces peach preserves
½ teaspoon lemon zest
3 tablespoons gluten-free oat flour
½ cup pecans, ground
3 tablespoons pecans, chopped
3 tablespoons butter, softened
1 ½ tablespoon granulated sugar

Special Tool: rasp or grater

Preheat oven to 375 degrees Fahrenheit. Take the first 6 ingredients and add to a medium bowl, stirring well. In a separate bowl, combine ground pecans, chopped pecans, sugar, and softened butter, and set aside. Spoon equal amounts of the peach mixture into 5 ounce ramekins. Cut butter into small pieces and place on top. Transfer ramekins to a parchment lined baking sheet and bake 20 to 25 minutes or until topping is bubbling and browned.

Easy Solutions: If serving this dessert to an adult only crowd, add Riesling. This recipe is also versatile.

These baked peaches are roasted low and slow to bring out all their natural sweetness. That means, even if your peaches aren't perfectly ripe, they'll still be super delicious.

We love ice-cream, and we love it even more when it's super easy to make and requires basically zero effort. So say hello to this banana ice cream, which uses only three ingredients, and tastes SOOO good.

This vegan banana bread is hands down one of our favourite things to make. Mixed with raspberries and topped with a vegan spread frosting, it's seriously tasty.

Sunshine Salad

Oranges help to brighten up this tasty veggie salad. It is quick and easy to make. Top it off with your favorite vinaigrette.


5 cups spinach leaves (packed, washed, and dried well)
1/2 red onion (sliced thin)
1/2 red pepper (sliced)
1 cucumber (whole, sliced)
2 orange (peeled and chopped into bite-size pieces)
1/3 cup vinaigrette dressing ("lite", around 15 calories per tablespoon or less)

California Avocado Super Summer Wrap

Fresh avocado doubles for dressing and filling complementing blueberries, carrots, arugula and chicken in this appetizing summer wrap.


1 ripe avocado (seeded, peeled, and cut into chunks)
1/2 cup plain nonfat Greek yogurt
1 teaspoon lime juice
1/2 cup blueberries
1/2 cup carrots (grated)
1/4 cup red onion (chopped)
2 cups fresh arugula (chopped)
12 ounces cooked chicken breast (cubed)
4 8" whole wheat tortillas


  1. Mash half the avocado chunks with yogurt and lime juice in a medium bowl.
  2. Add remaining filling ingredients, including the rest of the avocado chunks mix gently.
  3. Top each tortilla with 1/4 of filling mixture.
  4. Roll tuck in ends. Slice in half diagonally, securing with toothpicks, if needed.

Summer Breeze Smoothies

1 cup plain yogurt (non-fat)
6 strawberries (medium)
1 cup pineapple (crushed, canned in juice)
1 banana (medium)
1 teaspoon vanilla extract
4 ice cubes

Fruit Kabobs with Yogurt Dip

Fruit kabobs make a colorful and fun snack that kids can help prepare.


1 cup watermelon (chunks)
1 cup pineapple (chunks)
1 cup grapes, red seedless
1 cup strawberries (stemmed)
2 kiwi (peeled and cut in quarters)
bamboo skewers (6 inches long)
1 cup yogurt, light strawberry


  1. Place fruit chunks on bamboo skewers. Place fruit kabobs on platter.
  2. Place light strawberry yogurt in bowl. Serve kabobs with yogurt on the side.

Peach Crisp

The perfect dessert when peaches are in season. Simple to prepare but absolutely scrumptious.


4 peaches (4 cups sliced)
2 tablespoons margarine
3/4 cup quick-cooking oats
1/2 cup sugar
1/4 cup flour
2 teaspoons cinnamon
1 teaspoon lemon juice


  1. Preheat the oven to 375 degrees F.
  2. Slice the peaches.
  3. Spread the peach slices on the bottom of the baking pan.
  4. Melt the margarine in a saucepan.
  5. In a small bowl, mix everything but the peaches. Stir until the mix is well blended.
  6. Sprinkle the oat mix on top of the peaches.
  7. Bake for 20 minutes.

Somali Summer Salad

A delicious summer salad to serve when summer vegetables are at their peak. Great with grilled meat, fish, and tofu.


3 tablespoons olive oil
1 tablespoon lemon juice
3 apples
2 green peppers
3 tomatoes
2 cucumbers
salt and pepper (optional)


  1. In a large bowl, combine oil and lemon juice.
  2. Dice all the fruits and vegetables and then add to the bowl.
  3. Add salt and pepper to taste (optional).
  4. Serve chilled.
  5. Best served within 24 hours.

Squash Salsa

Summer squash is the secret ingredient in this fun summer salsa. Enjoy with your favorite whole grains.


1 can black beans (rinsed)
6 tomatoes, seeded and diced (medium)
1/2 green pepper, seeded and diced
1 medium red onion (minced)
1 summer squash, medium (peeled, seeds removed, diced)
2 tablespoons red wine vinegar
1 teaspoon Adobo seasoning (combination or garlic, coriander, salt, and cumin)
lemon or lime juice (2 Tablespoons, optional)
4 tablespoons mozzarella cheese, part skim
fresh cilantro or dried parsley (optional)


  1. Combine all ingredients except cheese. Let sit for 30 minutes.
  2. Spoon over tortilla chips, cooked rice, or noodles.
  3. Top with grated, part-skim mozzarella cheese. Serve hot or cold!

Toss this fruit salad together in a flash. Doubles and triples easily for a large group.


1 cup strawberries (diced, fresh or frozen)
1 cup watermelon (cubed)
1 cup pineapple chunks, fresh or canned packed in natural juice (do not drain)

Farmers Market Gazpacho

Garlic, cumin, and lemon juice give a zesty flavor to this cold, blended vegetable soup. Cilantro added at the end leaves a refreshing pop of flavor.


2 cucumbers (diced into 1/4 inch pieces)
3 red bell peppers (seeded and diced into 1/4 inch pieces)
3 green peppers (seeded and diced into 1/4 inch pieces)
4 celery stalks (diced into 1/4 inch pieces)
2 tomatoes (diced into 1/4 inch pieces)
1 onion (medium, diced into 1/4 inch pieces)
2 lemons
2 cups tomato juice, low-sodium
3 garlic cloves (fresh minced)
1 tablespoon cumin (ground)
1 cup cilantro (fresh chopped)
salt and pepper (to taste, optional)


  1. Combine all ingredients except salt, pepper, and lemons in a bowl.
  2. Remove 2 cups of the mixture and reserve.
  3. Using a blender or food processor, puree the remaining mixture in the bowl.
  4. Add 2 cups of reserved mixture to the pureed mixture.
  5. Season with salt, pepper (optional) and the juice from the lemons.
  6. Cover mixture and refrigerate for at least 2 hours before serving.
  7. Serve cold, garnished with chopped cilantro.

In 2-quart baking dish, toss 4 cups chopped strawberries, 3 cups chopped pineapple, 1/2 cup sugar, 3 tablespoons cornstarch and 1/4 teaspoon salt. Top with 1 cup each granola and sweetened shredded coconut and 2 tablespoons melted butter bake at 350°F 35 minutes, or until bubbling. Serves 8

Bonus idea: Swap in 1 cup each blueberries and raspberries for half the strawberries.

Toss 1 1/2 cups chopped strawberries and 1 tablespoon balsamic vinegar in bowl sandwich berries and 4 (1/4-inch-thick) slices fresh mozzarella cheese between 8 (1/2-inch-thick) slices challah bread, making 4 sandwiches. Grill on medium, 4 minute per side or until cheese melts. Serves 4

Trim stems off 1 pound of strawberries hollow out centers using small knife. Fill with 1/2 cup plain nonfat Greek yogurt. Roll yogurt ends in mix of 3 tablespoons packed light brown sugar and 1 slice pound cake, toasted and finely crumbled. Serves 8

Mix 1 1/2 cups finely chopped strawberries, 1 cup finely chopped bell peppers, 1/2 cup finely chopped red onion, 1/4 cup lime juice, 2 tablespoons minced jalapeño and 1/2 teaspoon salt. Serve with tortilla chips. Serves 8

Puree 2 pounds strawberries, quartered 2 cup water 1/2 cup sugar and 2 tablespoons lime juice in blender until smooth. Strain into pitcher through fine-mesh sieve, pressing and stirring with spatula (discard solids). Serve immediately over ice, or cover and refrigerate up to 1 day. Serves 8

Say I Do Star Gabriele Bertaccini's Go-To Recipes Celebrate Summer All Year


Cooking often means making the most of the produce you have available. And one knows that better than Gabriele Bertaccini, celebrity chef and one-third of Netflix's Say I Do's terrific trio.

"Since I was a kid, my Italian summer meals were dictated by the seasonality of the fruits and vegetables that my grandmother's orto–her garden–would give birth to," the 34-year-old, who was born and raised in Florence, Italy, explained to E! News. "Since the beginning of my early years in the kitchen, my philosophy hasn't changed: pristine ingredients and simple execution. So whatever occasion brings you behind the stove, remember that keeping things as simple as possible is the key to any successful dish."

Here, Bertaccini—he's been cooking since he was 13—shared three staple recipes that are guaranteed to brighten up your plate all year long. Scroll ahead to see what he recommends you start cooking up to make summer last forever.

Ricotta and Spinach Fiorentina Gnocchi
Serves: 4

"One of my childhood favorites," he said. "My mother prepared this every Sunday for family gatherings. Also called Gnudi alla Fiorentina, my clients love this dish."

1 cup spinach
1 1⁄2 cups ricotta cheese
1 shallot, finely chopped
1⁄4 cup flour
3 egg yolks
1/8 cup parmesan cheese
3⁄4 cups red tomatoes, peeled and finely cut
1 yellow onion, chopped
Basil leaves
2 garlic cloves, chopped
6 tbsp. butter
Extra virgin olive oil
Nutmeg powder, to taste
Salt and pepper, to taste

What to do:
Finely chop up onion and garlic and brown in a saucepan with extra virgin olive oil. Add in the tomatoes, previously peeled and finely cut add the basil and cook for 40 minutes.

Finely chop the shallot and lightly brown in a pan with oil. Add the spinach, which should have been boiled then cooled down in water and ice, squeezed, and finely chopped with a knife.

Turn off the stove. Add the ricotta cheese, which will have previously been dried up in the oven at 110 degrees for one and a half hours. Add the egg yolks, flour and parmesan. Season with nutmeg, salt, and pepper. Mix. Prepare small gnocchi balls with the mixture.

Fill a saucepan with water. Add salt and bring to the boil. Cook the gnocchi for three minutes, drain and place them in a pan with melted butter. To serve, place the tomato sauce gently on the plate and add the gnocchi.

Charred Radicchio Bread Panzanella Salad
Serves: 4

"In Italy, we never throw anything away, let alone bread," explained Bertaccini. "Stale loafs are kept aside and used in many different dishes including a Tuscan favorite: Panzanella. This bread salad could be your main course or maybe just an opening for a two-course lunch. Simple, versatile and meant to be prepared in front of your guests with ease. Pour yourself a glass of rose and you're set."

6 oz. country-style bread, torn into bite-size pieces (about 4 cups)
1 tablespoon finely grated lemon zest
1⁄2 cup olive oil, divided
Kosher salt and freshly ground black pepper
1 small shallot, finely chopped
2 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
1 small head radicchio, cut in wedges and quickly charred in a hot skillet
1 small fennel bulb, thinly sliced
1 cup fresh flat-leaf parsley leaves with tender stems
1⁄2 cup green olives, pitted, halved
3 oz. aged sheep's-milk cheese (such as Manchego), shaved 3 oz.
Hard salami, thinly sliced

What to do:
Preheat oven to 400 degrees. Toss bread with lemon zest and 1⁄4 cup oil on a rimmed baking sheet. Season with salt and pepper. Bake for 8-10 minutes, tossing occasionally, until crisp on the outside but still chewy in the center. Let cool.

Whisk shallot, lemon juice, vinegar and oregano in a large bowl. Season with salt and pepper. Whisk in remaining 1⁄4 cup oil.

Add charred radicchio, fennel, parsley, olives, cheese, salami and bread to dressing. Toss to combine.

Tip: Salad can be dressed the night before. Cover and chill.

Budino Alla Polenta Con Marmmelata (Polenta Custard with Marmalade)
Serves: 8

"There is nothing more simply indulgent than eating this very light dessert," he raved. "A staple for intimate, fun and casual dinner parties with our clients."

1⁄2 cup coarse-grind polenta
1⁄3 cup granulated sugar
1⁄4 cup (packed) dark brown sugar
1⁄4 teaspoon kosher salt
1 tablespoon unsalted butter
1 large egg yolk
1⁄4 cup heavy cream

Marmellata and Assembly
3⁄4 cup granulated sugar
1 tablespoon fresh lemon juice
1⁄4 teaspoon kosher salt
4 ripe plums, cut into 1⁄2-inch pieces
1 pint vanilla ice cream

Bring 2 cups water to a boil in a medium saucepan. Whisking constantly, gradually add polenta. Whisk until smooth. Reduce heat to low and cook polenta for three minutes, whisking and breaking up any lumps, until thickened. Whisk in granulated sugar, brown sugar, and salt (mixture will loosen) and cook for 20-25 minutes, whisking often until mixture thickens again and polenta is tender. Remove from heat and whisk in butter.

Whisk egg yolk and cream in a small bowl to combine then vigorously whisk into polenta. Transfer mixture to a large bowl and cover with plastic wrap, pressing directly onto surface. Let cool.
