    Cook quinoa per package instructions.

    Combine in a large bowl: cooked quinoa, shredded chicken, mandarin orange slices, chopped cilantro, and olive oil.

    Zest the lime over the bowl and mix.

    Juice the lime, add to the bowl, and mix.

    Add salt and pepper to taste.

Chicken Salad With Citrus and Chile Oil

With plenty of protein, a double punch of acid from citrus and vinegar, and a garlicky chili oil, this salad is made for dinner. While your chicken is getting toasty in the oven, make your chile crisp-inspired dressing with garlic, paprika, cracked coriander, and red pepper flakes. If you have leftovers (or want to make extra for a bit of meal prep), keep all of your ingredients separate in the fridge so that they stay fresher for longer. This recipe is part of the 2021 Feel Good Food Plan, our eight-day dinner plan for starting the year off right.


Recipe Summary

  • ½ cup orange juice
  • ¼ cup lime juice
  • 2 shallots, minced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon white sugar
  • 4 (4 ounce) skinless, boneless chicken breast halves
  • 8 cups torn romaine lettuce
  • 2 oranges - peeled, segmented, and chopped
  • 2 stalks celery, sliced
  • 4 green onions, chopped

In a mixing bowl, whisk together orange juice, lime juice, shallots, garlic, chili powder, cumin, and sugar. Pour 1/2 of this mixture into a large, resealable plastic bag, and add the chicken breasts. Seal, and refrigerate for at least 2 hours. Refrigerate the remaining dressing.

Preheat an outdoor grill for medium-high heat. In a large salad bowl, toss romaine lettuce with oranges, celery, and green onions. Set aside.

Lightly oil grate, and place chicken on grill. Discard the marinade from the chicken. Cook for 6 to 8 minutes each side, or until juices run clear when pierced with a fork. Remove chicken from grill, and slice into thin strips.

Substitutions that might make you happy:

  • use chickpeas instead of chicken
  • use a different grain, or cook your own
  • use a different dressing – something lemony, herby, more or less sweet, whatever you like
  • add capers for extra briney-ness
  • add roasted vegetables of any sort – sweet potato, bell peppers, zucchini
  • add cheese
  • add nuts or seeds

Whether you go my direction with the quinoa / chicken / artichokes / Greek dressing, or go your own way with a spin-off of this combination, you will be eating well.

Chicken Quinoa Salad

Once cooked, quinoa tastes and has the texture of teeny tiny pasta. There as so many recipes in which you could exchange quinoa for the rice or pasta.

Many years ago, the first time I tried quinoa, I was at a luncheon held at a hotel, we were served quinoa as a side dish to the usual boring chicken. I was so delighted by the unusual side dish I asked every waiter and waitress what it was, none knew . The wait staff got so tired of me asking what is was, they sent the chef out to me. He was very kind, told me it was quinoa and wrote the recipe down for me. One day soon I will share that recipe with you.

Quinoa, is known as a superfood and is gluten free. There are many health benefits to eating this ancient grain. Quinoa was discovered by the Incas, they described it as the mother of all grains. There are hundreds of types of quinoa, although the most common types found in grocery stores are the white, black and red colored. See more info on the health benefits of quinoa here.

Just last night I made one of my stand by I don’t know what to make for dinner, dinners, but I swapped out the white rice for…you guessed it, quinoa. Handsome loved it! The great thing about this recipe last night I served it warm, right off the stove, and today I ate it cold right out of the refrigerator, no really, I was standing with the refrigerator door open eating it out of the tupperware, and it was delicious!
