Although I rarely cook soups and broths, I have always liked some such recipes. Today I will tell you the recipe for bean soup with smoked ciolan, a very tasty and filling recipe. Cover the beans with water and let them soak overnight. The next day it is boiled together with the ciolan until the meat starts to come off the bone. We throw the first water after which we debone the ciolan and put the pieces to boil together with the beans and the large chopped vegetables leaving only the whole onion. After it is almost ready, remove the vegetables, strain them and add them together with the tomato paste, hot pepper paste (optional), paprika and spices. Leave it to boil until the beans reach the desired consistency.
If time is pressing and you do not want to give up the short holiday in the country, you can use instead of the usual pot a minimal pot (cucta) that shortens the cooking time to about half an hour.

Take the foam from above and add the carrots, onions, parsnips and parsley cut into small cubes and let the vegetables boil.

Put 2 lg of oil and 1 lg of paprika in a pan. We do not leave it on the fire until we momogenize the composition, then we extinguish it with broth and water from the soup, after which we pour it over the soup.

Stir and set aside. We cut the tarragon leaves into small pieces and throw them in the pot. Optionally you can put dried dill leaves (I like it that way). Garlic passed through the garlic press.
