When it comes to culinary preferences, my husband is crazy about tomato soup. I find it boring and I'm always looking to do it differently, to cheer it up, to like it too, to eat both. This time, it is with the addition of beets.
- 500 gr beetroot
- 1 liter of mashed tomatoes
- 1 carrot
- a piece of celery
- 2 chicken cubes
- the juice of half a lemon
- green parsley
- feta cheese
Preparation time: less than 30 minutes
RECIPE PREPARATION Beet soup with tomatoes, croutons and feta cheese:
I dissolved the 2 chicken cubes in 750 ml of water and boiled them. I added diced beets, carrots and celery and cooked for 15 minutes. Meanwhile, I baked the croutons in the bread, butter and nutmeg cubes and cut the cheese into cubes. When the vegetables were cooked, I added the mashed tomatoes and boiled for another 5 minutes, then I passed everything in the blender. I boiled it for a boil, I added lemon juice, I added salt and pepper. I put them in bowls, sprinkled croutons, cheese cubes and parsley and quickly took pictures, because my husband couldn't wait for so much appetite.
the recipe I was inspired by was without carrots and celery, but I thought of an extra flavor
in the original recipe there were only 200 ml of mashed tomatoes, but after I put 500 ml it still seemed a little, so I added another 500 ml
