An easy to make cottage pie thats great for getting your five a day, easy to cook and can be re-heated, made vegetarian or vegan, and can be frozen. You can make it vegan by using margarine and soya milk for the mash.

  • 1 broccoli, cut into florets
  • 1 cauliflower, cut into florets
  • 1 leek, sliced
  • 2 packs baby carrots, sliced
  • 4 to 8 potatoes, peeled and cut into chunks
  • 200ml milk
  • 1 teaspoon butter
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 peppers, chopped
  • 500g lean mince or steak mince
  • 1 OXO® cube
  • 1 pinch black pepper
  • 1 pinch mixed herbs

  1. Boil or steam the broccoli, cauliflower, leek and carrots for 15 to 25 minutes, depending on how soft you like your veg.
  2. Separately, boil the potatoes until soft. Drain and mash with milk and butter.
  3. Meanwhile, add the olive oil to a frying pan. Fry the onion for 5 minutes till soft. Add the chopped peppers and mince and cook till brown (you can skip the mince if you want a vegetarian cottage pie, or add a tin of lentils or beans).
  4. Crumble in the OXO® cube and stir into the mince (use a vegetable stock cube if making a vegetarian pie).
  5. Add the mince mixture along with the steamed veg into a pie dish. Spoon over the creamy mashed potato and spread it out to the sides of the dish. Add a pinch of mixed herbs and black pepper on the top for show.
  6. Bake in a 180 C / Gas 4 oven until hot and bubbly.

Tip

Add vegetables that need using up, such as mushrooms, cabbage, peas, sweetcorn, spinach, lentils or remove the mince and make it vegetarian.

Made a delicious vegan version - used a vegetable stock cube, and replaced the milk and butter in the mashed potato with red palm and canola oil (also added some spring onions and rosemary). Wasn't clear on where I should add the veg stock, so I poured about 150ml over the vegetables before layering on the mashed potato. I omitted the mince (of course!) and also left out the carrots as I didn't have any. It was really lovely, even my meat-eating mum couldn't get enough - will definitely make again!-12 Feb 2012

A Quick Word On The Mashed Potatoes

I decided to put Greek yogurt in my potatoes to lean towards healthy while still being creamy-tangy (gah, so good).

That being said, if you want this to be a completely vegan shepherd’s pie, just use olive oil instead of butter and maybe a splash of non-dairy milk in your potatoes and you will be golden. And if you’re gluten free? I have a hack for you involving mashed potatoes – check the recipe notes.

If you’re really looking ahead, I’ll also say that Shepherd’s Pie is a perfect after-Thanksgiving recipe, because guess what you have a lot of in your fridge after Thanksgiving? Leftover mashed potatoes. This is an amazing way to use up some of those holiday potato leftovers.

Important to note that this vegetarian shepherd’s pie is a total comfort food meets real food situation, so it’s going to require pajamas or sweats. A big fluffy sweater would be okay, too. Blanket, slippers, and candle are all optional. But a big appetite will be necessary. I know you can deliver.

Nothing says cosy comfort food quite like a cottage pie and this vegetarian version is the perfect option for your meat free Monday! Inexpensive to make, rich and utterly moreish it&rsquos the perfect dish to enjoy during those cooler nights.

  • Extra virgin olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 carrot, peeled and finely diced
  • 1 Tbsp dried mixed herbs
  • 2 Tbsp flour
  • 400g tinned tomatoes
  • 2x 400g tinned lentils, drained
  • ½ cup vegetable stock
  • 2-3 large orange kumara, peeled and cut into chunks
  • 25g butter
  • Grated cheese to finish, if desired

Method

  1. Preheat your oven to 190 degrees Celsius fan bake. In a heavy based pan, bring a generous drizzle of olive oil to a medium heat. Once hot, sauté the onion, garlic, carrot and dried herbs for 4-5 minutes or until the vegetables have begun to soften.
  2. Stir the flour into the vegetable mixture, then add the tinned tomatoes, lentils, and vegetable stock. Bring to a simmer, then cook for 5-10 minutes or until the liquid has reduced slightly and the sauce has thickened. Season to taste with salt and pepper.
  3. While the lentils are cooking, boil the kumara pieces in salted water until tender when tested with a knife. Drain, then mash with the butter and season with salt and pepper to taste.
  4. Once the lentil sauce has reduced, transfer to an ovenproof baking or pie dish. Carefully top with the mashed kumara and use a spoon to spread over the entirety of the lentil mixture.
  5. Top with grated cheese if desired, then place into the oven and bake for 15-20 minutes or until golden and bubbling. Leave to cool for 5 minutes, then serve and enjoy.
Our top tip

Prepare this recipe in advance for a quick weeknight option. Simply cool the cottage pie after step four, then cover and keep refrigerated for up to 4 days. Bake for 30-40 minutes from chilled.

This delicious cottage pie can easily be made vegan &ndash just omit the butter and grated cheese.


Method

To make the filling, heat the oil in a frying pan over a medium heat. Add the leeks and fry for 4–5 minutes, or until beginning to soften.

Add the carrots, mushrooms and garlic and continue to cook, stirring regularly, for 4–5 minutes.

Add the sage, thyme, lentils, tomatoes, stock and red wine and stir together until well combined. Bring the mixture to the boil, then reduce the heat until it is simmering and continue to simmer for 18–20 minutes while you make the topping.

Preheat the oven to 200C/180C Fan/Gas 6.

To make the topping, bring a large saucepan of water to the boil (there’s no need to add salt). Add the sweet potato and potato and boil for 10–12 minutes. Add the cauliflower and boil for a further 8–10 minutes, or until tender.

Drain the vegetables well and return them to the pan. Add the butter, season well with salt and pepper, then mash until smooth. Set aside and keep warm.

Stir the Worcestershire sauce (if using), soy sauce, chilli flakes (if using) and sugar (if using) into the filling mixture, which should have thickened during cooking. Continue to simmer for a further 1–2 minutes, adding a little water if the mixture is too dry (simmer for longer if the mixture is too watery). Season with salt and pepper.

Transfer the filling mixture to an ovenproof baking dish, then spoon over the topping and spread into an even layer. If you like a crispy topping, create peaks in the mash using a fork. Sprinkle over the Parmesan, if using.

Bake the shepherd’s pie in the oven for 18–20 minutes, or until the topping is golden brown and the filling is bubbling.

  • 6 tbsp. milk
  • 110 g./1 stick butter (cubed)
  • 1 vegetable oil
  • 115 g./1 cup onion (chopped)

How to get your kids to eat vegetables

  1. You must eat vegetables too! That’s right Mums and Dads! If your little child sees you eating vegetables at every meal, they will be more inclined to eat them too! Everyone eats the same dinner!
  2. Pack the veggies in where possible This dish is packed full of vegetables in a yummy sauce (which kids love) and topped with crispy potato. I loaded it with 10 different vegetables too so every single bite contains goodness. The vegetables also break down slightly in the cooking too which makes it super easy for little mouths to manage and great for picky eaters!
  3. Only cook ONE dinner! If you are looking at this recipe thinking ‘not a chance will my child eat that’, think again. This is dinner. You took the time out of your day to make this dinner and you are not going to make another dinner. This is what is on offer end of story! If your child is hungry they will eat, albeit eventually. This means no toast, yogurt before bed or bribery! Take a deep, deep breath! It will get easier I promise!
  4. Encourage ONE bite! Encourage your child to eat one little bite. This can take time and a lot of patience, but I have turned my 12 year asparagus hating son, into an asparagus lover by just doing this alone. It doesn’t matter how old the child, it works (and is even good on Daddy too).

Note: if your child is losing weight, or doesn’t care if they don’t eat anything for days on end and you feel the problem is getting worse, it is time to seek the help of a dietitian.

Grilled Shrimp Tacos With Sriracha Mayo Slaw

1. Preheat the oven to 375°F.

2. In a blender, cover the mushrooms with 2 1/2 cups of boiling water.

3. Trim, wash, and slice the leeks (3/4-inch thick). Scrub the carrots, rutabaga, and celery root and chop to roughly the same size.

4. Drizzle 2 tablespoons of oil into a large casserole pan on medium heat, strip in the roasemary, fry for 1 minute to crisp up, then remove to a plate with a slotted spoon. Add the cumin seed and the prepped veggies to the rosemary-flavored oil, season with sea salt and black pepper, and cook for 30 minutes, stirring regularly.

5. Meanwhile, peel and roughly chop the potatoes, cook in a pan of boiling salted water for 15 minutes, or until tender, and drain well. Mash with the butter and milk and season to taste.

6. Quarter the onion and add to the porcini in the blender. Also add in Marmite and tomato paste and blend until smooth. Pour mixture into the vegetable pan and cook for 20 minutes, or until dark and caramelized, stirring regularly and scraping up any sticky bits from the bottom of the pan.

7. Add the lentils (including the juices) into the vegetable pan, bring to a boil, then season to taste.

8. Spoon the mashed potatoes on top of the vegetable mix, place on a baking sheet, and bake for 30 minutes, or until lightly golden and bubbling at the edges. Sprinkle over the crispy rosemary. Serve with simple steamed seasonal greens.


Method

To make this cottage pie, place a large non-stick saucepan or flameproof casserole dish over a medium heat. Add the mince and cook it with the onions, celery and carrots for 10 minutes until lightly coloured. Use a couple of wooden spoons to break up the meat as it cooks.

Stir in the tomatoes, tomato purée, beef stock, Worcestershire sauce and mixed herbs. Season with a good pinch of salt and plenty of freshly ground black pepper. Bring to the boil, then reduce the heat, cover loosely and simmer gently for 40 minutes, stirring occasionally until the mince is tender.

About 20 minutes before the meat is ready, make the potato topping. Peel the potatoes and cut them into rough 4cm chunks. Put them in a large saucepan and cover with cold water. Bring to the boil, then turn down the heat slightly and simmer for 18–20 minutes or until the potatoes are very tender. Heat the oil in a non-stick frying pan and fry the leeks for 5 minutes until softened but not coloured, stirring often. Drain the potatoes, then tip them back into the pan, season to taste and mash with the crème fraiche until smooth. Stir in the sautéed leeks and set aside.

Preheat the oven to 220°C/425°C/Gas Mark 7. When the beef has been simmering for 40 minutes, mix the cornflour with the cold water to make a smooth paste. Stir this into the beef and cook for another 1–2 minutes or until the sauce is thickened, stirring often.

Pour the beef mixture into a 2-litre shallow ovenproof dish. Using a large spoon, top the beef with the mashed potatoes and leeks. Spoon the mixture all around the edge of the dish before heading into the middle, then fluff up with a fork.

Bake for 30 minutes until the topping is golden and the filling is bubbling. If making this ahead of time, let the pie cool, then cover and put in the fridge.
