  • 8 tablespoons plain flour
  • 1/8 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons treacle
  • 2 tablespoons milk
  • 4 tablespoons chopped pecans
  • 4 tablespoons dark rum, divided

  1. Soak cherries, mango, cranberries, currants and citron in 4 tablespoons rum for at least 24 hours. Cover tightly, and store at room temperature.
  2. Preheat oven to 170 C / Gas mark 3. Butter a 15cm (6 in) round tin, and line with baking parchment.
  3. In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. Whisk together flour, bicarbonate of soda, salt and cinnamon; mix into butter and sugar in three batches, alternating with treacle and milk. Stir in soaked fruit and chopped nuts. Scrape batter into prepared tin.
  4. Bake in preheated oven for 40 to 45 minutes. Cool in the tin for 10 minutes, then sprinkle with 2 tablespoons rum.
  5. Cut out one piece of parchment and one piece muslin or cheesecloth, each large enough to wrap around the cake. Moisten muslin with 1 tablespoon rum. Arrange muslin on top of parchment, and turn cake out onto it. Sprinkle top and sides of cake with remaining rum. Wrap the muslin closely to the surface of the cake, then wrap with paper. Place in an airtight tin, and age for 7 to 10 weeks. If storing longer, douse with additional rum for every 10 weeks of storage.

  • 250g (9oz) light muscovado sugar

  • 1 tbsp black treacle
  • 75g (3oz) blanched almonds, chopped
  • 75g (3oz) self-raising flour
  • 175g (6oz) plain flour
  • 1½ tsp mixed spice

  • About 3tbsp apricot jam, sieved and warmed
  • Icing sugar
  • 675g shop-bought almond paste
  • Packet royal icing mix to cover 23cm/9in cake

Cherries

I use canned cherries because it makes the process easier, and because they are available throughout the whole year unlike fresh cherries. Also, the juice from the can adds more cherry flavor, and the cherries are already pitted and soft, so they don’t need to be cooked. I like to use sour cherries, but sweet cherries work too.


Chef Sian Jamaican Black Cake Recipe (Caribbean Christmas Cake)

If you know anything at all about West-Indian Caribbean culture you already know that Jamaican Black Cake is a must have at Christmas time. If you didn’t know before now, a Caribbean Christmas dinner invite will almost certainly net you a slice of the most alcoholic cake you will ever eat.

A cousin of the British Plum Pudding this decadent, expensive treat is made using an array of wine-soaked dried fruits, eggs, butter, brown sugar, and other natural ingredients. As with all recipes, there are slight variations across cultures but the base ingredients and the preparations are almost identical. After baking, the cake is ‘wined’ (I opt for a combo of wine and premium overproof rum) with another helping or 2 of port wine, before serving. This means that you MUST bake your cake at least a few days before Christmas to allow proper time for ‘wining’. Some folks opt for icing/frosting the cake. Other enjoy it as is.

If you are not an experienced baker, this is not a cake for experiments. It requires a good deal of costly ingredients, time, and technique. As I have learned, shortcuts, like boiling and blending the fruits and beating the eggs whole, WILL ruin the texture and flavor of your cake. There is a reason I don’t bake them.

The following recipe is the same 6-generation old recipe my mother uses to prepare the cakes we sell at Sian’s Cooking. It is a fairly authentic representation of a Jamaican Black Cake. In the last year or so mincemeat has become increasingly hard to find. If you cannot find it, it is fine to do without.

Ingredients

  • *2 lb. wine soaked fruits* see notes
  • 1 C. dark rum
  • 1 C. Port wine
  • 1 lb. dark brown sugar
  • ½ C. molasses
  • 1 lb. butter
  • 12 eggs, separated
  • 1 14 – 16 oz. jar Mincemeat
  • 2 tsp vanilla
  • 2 C. flour
  • 4 tsp baking powder
  • 2 tsp cinnamon.

Instructions

Combine fruits with rum and wine in blender or food processor and grind into a paste. If using a blender, you may need to divide into 2 or 3 batches.

Preheat oven to 300° Using a mixer cream butter, sugar, molasses and egg yolks together. In a separate glass bowl, beat egg whites until foamy. Fold (slowly beat in) egg whites into butter mixture. After egg whites are fully combined, add fruits 1 cup at a time until completely mixed in. add mincemeat to mixture. Slowly add dry ingredients to mixture. Mix should be dark brown. If not add ¼ C. molasses or ½ tsp of browning, if available. Butter and flour 3 – 9” cake pans you may line the buttered pans with parchment paper instead of flouring. Pour batter into cake pans. Fill almost to the top. Cakes will not rise very much. Bake for 1 hour. After 1 hour increase temperature to 350° and bake for another 30 minutes. After 30 minutes insert toothpick or clean knife into the center of the cake and remove. If knife comes out clean. Remove cakes from oven and place on cooling racks. Sprinkle hot cakes with wine or rum. Cool for about 2 hours and sprinkle with rum again. Cover cakes and allow to cool overnight (at least 8 hours) before icing or serving.


What is the Japanese Strawberry Shortcake?

The concept of Japanese Strawberry Shortcake may have been originated in the US with some adaptation. Instead of sweet biscuits, a Japanese strawberry shortcake is made of 2-3 layers of sponge cake, with fresh strawberry slices, whipped cream filling, and whipped cream frosting.

This cake might seem rather simple, yet when all the components are prepared perfectly, it comes together as an amazing dessert.

The majority of recipes for Japanese strawberry shortcakes are very similar, so what makes them different? It all comes down to the various techniques you use when making it. I want to thank my dear friend Naomi for spending hours in my kitchen testing different variations of strawberry shortcake recipes with me. We spent days testing and made so many cakes, and we decided this is by far the best one.

Because this recipe requires detailed explanations, it was impossible for Mr. JOC to take step-by-step pictures AND film the video at the same time. Therefore, we decided to focus on the step by step pictures this time because I can’t explain everything in our short video. We’ll add a video for this recipe in the future.

Components of Japanese Strawberry Shortcake

This recipe is probably the longest recipe ever on my blog, with close to 50 steps. I know it’s a bit of an overkill but I really think these step-by-step pictures are helpful and I can explain the step a little more in detail along the way.

Japanese strawberry shortcake consists of 3 components: sponge cake, whipped cream, and strawberries. It’s simple as that. However, to create the perfect sponge cake and whipped cream involves many techniques.

And to make a really good shortcake, precise measurement (please use a kitchen scale and thermometer!) really helps, especially if you don’t bake often.

Sponge Cake

Japanese sponge cake is very moist, airy, light, and it’s not overly sweet. Personally I think this is the most important part of the cake.

The sponge cake is a genoise cake , made by beating air into the eggs to make it rise rather than using a chemical leavening agent like baking soda or baking powder.

The dimensions of the sponge cake we need to consider include sweetness, elasticity, and texture.

The sponge cake cannot be too sweet or else it overpowers the whipped cream and the tartness of the strawberry. The sweetness has to be perfectly balanced with the rest of the cake.

When you bite into the sponge cake, it needs to have some elasticity and firmness of bite. Once again, if it’s too hard or too soft, it ruins the cake.

Lastly and probably the most critical is the texture of the sponge cake. The size of the bubbles within the sponge needs to be consistent. It should not be too rough on the tongue yet it does need some structure so you can feel them. This is probably the part I tested the most to achieve the perfect result.

Freshly Whipped Cream

To make fresh whipped cream is not too difficult. Before you begin whipping cream, make sure to chill your bowl and the heavy cream so that the cream will stay cold longer during the whipping process. Basically, cream whips better when it’s cold. The temperature affects how long it requires to whip, how light and fluffy it will get, and how long it is likely to stay that way (more science here ).

My friend and I have tested the different amounts of sugar and we concluded that 8% of sugar to heavy whipping cream ratio gives perfect sweetness for the cake.

Fresh Strawberries

Fresh strawberries might not be the easiest ingredient to purchase depends on where you live. I know I’m spoiled in California where we literally have strawberries all year round. When you select the strawberries, make sure they are equal in size and not too large so they’ll be more visually appealing.

Last note, since we do not wash the strawberries but clean them with a damp cloth (to prevent them from going bad and adding moisture to the cream.), I do recommend buying organic ones.

Japanese Strawberry Shortcake for the Holidays

After several recipe testings, I am really happy with my results. My friends and family who enjoyed the cake agreed as well. Since then, I’ve served the Japanese strawberry shortcake several times over the holidays and it’s been a huge hit.

The flavor and texture of strawberry shortcake get even better if you let it rest overnight, so it is also a great make-ahead treat.

Method

Heat the oven to 150C/130C Fan/Gas2. Grease a 20cm/8inch round or an 18cm/7inch square cake tin and line the bottom and sides with baking parchment.

Sieve the flour, salt, mixed spice and cinnamon into a bowl.

Cream the butter and the sugar in a large mixing bowl and then mix in the sugar, treacle, marmalade and vanilla essence until light and fluffy.

Mix the eggs a little at a time into the mixture adding a tablespoon of flour mixture with the last amount.

Fold in the remaining flour mixture until well mixed and then mix in the dried fruit, mixed peel, glace cherries and the almonds.

Turn the mixture into the prepared tin and make a slight hollow in the centre.

Bake in the oven for 3 hours and then test with a skewer. If not ready bake for up to another hour testing every 20 minutes until the skewer comes out clean. You may need to cover the top with a piece of foil if it begins to look too dark.

Remove from the oven and leave to cool in the tin for 15 minutes. Turn out on to a wire rack and leave to cool.

Once cool, make a few holes in the cake with a skewer and pour over 3-4 tbsp of brandy. Let the brandy soak into the cake. Store the cake wrapped in foil and in an airtight tin or plastic container, holes side up. For a rich and moist cake, spoon over a few tablespoons of brandy every week until you are ready to ice and decorate your cake.

To decorate the cake, place the cake on a foil board or cake plate. Dust your hands and the work surface with a little icing sugar and knead the marzipan until soft. Roll out half the marzipan to fit the top of the cake and roll out the rest in strips to fit around the sides of the cake.

Brush the cake all over with the warmed apricot jam and then place the marzipan on top and around the cake. Cover the cake with a clean tea towel and then leave in a cool place to dry for at least one day.

To make the icing, lightly whisk the egg whites adding the sugar at intervals. Beat well until the icing reaches soft peaks. Add the glycerine if using and the lemon juice. Spread icing all over cake either flat iced using a clean ruler or by forming soft peaks. Decorate with Christmas ornaments.
