  • 1 teaspoon vanilla extract
  • 160g porridge oats
  • 250g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 130g raisins
  • 130g dried cranberries

  1. Beat butter, sugars, eggs and vanilla for 5 minutes.
  2. In another bowl, combine oats, flour, bicarb, baking powder and salt. Add to butter mixture a third at a time. Mix in raisins and craisins.
  3. Drop by spoonfuls onto greased baking trays and bake for 12-14 minutes at 180 C / Gas 4. These freeze very well. Enjoy!!

EUREKA! I've found it! The PERFECT cookie. It doesn't get better than this. I tweaked it a bit by using traditional old-fashioned oats instead of quick oats (all I had on hand). I added one extra cup of oats (3 c. total), a dash of cinnamon, and a 1/2 bag of white chocolate chips (they were in the pantry!) to the printed recipe. This is truly the BEST cookie I have ever had. Perfect texture, sweetness, and flavor. My kids are loving them and they usually don't like oatmeal cookies. We will make this one again and again. Thanks for sharing!-12 Nov 2005

Yummy! this could use some pecans/walnuts in it too though. also, I recommend mixing the(c)raisins with the flour mix before adding it to the wet mix to make it easier on mixing-02 Aug 2003

This is wonderful! I make these all the time and everyone loves them!! They always end up asking for the recipe to make for themselves. There is a different texture to them, depending if you use margerine or butter. With margerine I find them to be more thick. But using butter is definately my choice. I find that it gives them a better flavor. Personally, I don't add the raisins but just add more craisins to it. Even fussy kids who don't like raisins love them!   • 1¼ cups whole-wheat flour

  • ½ cup unsweetened applesauce
  • ¼ cup raisins
  • ¼ cup unsweetened dried cranberries

  • 1/2 pound unsalted butter (2 sticks)

Let all the ingredients come to room temperature before you begin.

Using the paddle attachment of a stand mixer, cream the butter, brown sugar, and the salt on low speed.

Add the eggs, vanilla and milk and mix until blended.

Sift the flour, baking soda, and baking powder together into a separate bowl.

Combine the oats with the dry ingredients.

Add the dry ingredients to wet ingredients and mix until they're combined.

Mix the cranberries into the dough.

Prepare your baking sheet pan by greasing it with butter or shortening or lining it with parchment paper. Or, use a silicone baking mat which is a favorite technique.

Using a 1-oz scoop or the equivalent, drop 1-oz balls of dough onto your sheet pan, leaving enough room between them to allow for them to spread.

Bake 10-12 minutes or until the edges and bottoms of the cookies are beginning to look golden brown.

When the cookies are cool enough to handle but still warm, remove them from the pan and cool them on a wire rack. You can eat them as soon as they're cool enough that they won't burn your mouth. Or if you'll be storing them, make sure they've cooled thoroughly first.

It’s been a while since I did a food post (probably disappointing to all of you who followed me just for the recipes), so for the first of the year, here’s another Joanne Chang cookie recipe, Oatmeal&ndashRaisin&ndashCranberry Cookies, from Baking with Less Sugar (Chronicle Books, 2015 p.&ndash50). This one differs from the standard oatmeal-raisin cookie recipe in more ways than the obvious: these cookies are soft, moist, and tender rather than the chewy toffee-like Default Recipe. There is only 75 g of sugar, so they’re noticeably less sweet than the old standby, even with sweetened dried cranberries added to the mix. There is, however, a substantial amount of fat, between the half-pound (225 g) of butter, two eggs, one egg yolk, and 75 g of walnuts — and unusually, the butter is melted rather than being creamed with the sugar. For additional flavor, I used black walnuts rather than English.

Of course I couldn’t resist eating some of the cookie dough before baking. The dough is really quite liquid, almost a batter, when fresh unlike some other cookie recipes, you can’t skip the overnight rest in the refrigerator, because you won’t be able to form the cookies properly until the butter resolidifies. I used a #30 disher to get approximately 50-gram dough balls, which made 13 cookies (but my assumption is that I actually should have gotten 18 if I hadn’t eaten any of the dough). Chang calls for squashing the dough balls with the palm of one’s hand onto the (parchment-lined) baking sheet, as she does in most of her other cookie recipes these cookies do not spread much, even after 16 minutes in a 350°F (175°C) oven, so the amount of squashing on the way in will determine the diameter of the baked cookie.

Since I just made these cookies on Sunday, and today is a public holiday (I’ll actually be at a hockey game in Detroit as this post goes up) I don’t have any comments from co-workers yet. I might actually not bring these in to work at all: there aren’t very many, they aren’t super-high-cal, and I could stand to have a dessert at home that isn’t chocolate. (No, seriously, sometimes I really would like to have something other than chocolate. Only sometimes, not all the time!)


  • Oatmeal cranberry chocolate chip: Leave out the walnuts and add ½ cup semi sweet chocolate chips to the cookie dough before adding the cranberries.
  • Oatmeal cranberry orange cookies: Leave out the vanilla and walnuts and add one teaspoon orange zest to the cookie dough after adding the egg.
  • Cranberry white chocolate oatmeal cookies: Leave out the walnuts and add ½ cup white chocolate chips to the cookie dough while adding the cranberries.
  • Oatmeal cranberry pecan cookies: Use ½ cup chopped pecans instead of walnuts.
  • Cranberry coconut oatmeal cookies: Leave out the walnuts and add ½ cup unsweetened shredded coconut to the cookie dough.

I struck the jackpot with this recipe. These cranberry oatmeal cookies really do taste like they have been baked!

My friend Stacey came over to sample my efforts, and she seconded my assertion that these tasted just like soft chewy baked oatmeal cookies. Trust me, serve these to any of your raw skeptics out there and they will never know the difference.

These oatmeal cookies are raw, vegan, gluten free, dairy free, egg free, soy free, and refined-sugar-free bites of heaven.

Tweak To Taste

I have made these cranberry oatmeal cookies rich and decadent! That’s what I love about them. If you like your oatmeal cookies less sweet, omit the optional sweetener and reduce the lemon zest.

The best thing about raw cookie dough is that is tastes the same before and after you put in the dehydrator. So, tweak your “batter” to taste to ensure you get it juuuuust right and you know exactly how your cookies are going to taste.

My money’s on this blend with the sweetener.

Make smaller cookies so they dehydrate faster!

You could also make smaller cookies. The hardest thing about these cookies is waiting 12 hours to eat them. I licked the mixing bowl clean!

How to make these oatmeal cookies without a dehydrator

If you don’t have a dehydrator, you can make these oatmeal cookies in a conventional oven.

Preheat your oven to 300°F (150°C), place the cookies inside, close the oven door, turn the oven off, and allow the oven to cool completely with the cookies inside.

The cookies should have a nice chewy texture with this method.

Repeat this process for a harder oatmeal cookie.

Sweet, Chewy Oatmeal Raisin and Cranberry Cookies

Sweet and chewy, not just another Oatmeal Raisin Cookie!

Ingredients

  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 1 cup Rolled Oats, Regular Oatmeal - Not Steel Cut
  • ½ cups Butter, Softened
  • ½ cups Granulated Sugar
  • ½ cups Light Brown Sugar, Packed
  • 1 whole Large Egg
  • 1-½ teaspoon Vanilla Extract
  • ½ cups Each Of Raisins, Golden Raisins And Cranberries

Preparation

Preheat oven to 350°F. Arrange racks in the upper and lower thirds of the oven. Combine flour, baking powder, salt, cinnamon, and oatmeal in a large bowl. Mix well.

On medium speed, beat the butter and sugars in the bowl of a standing mixer fitted with the paddle attachment until well combined, 1–2 minutes. Beat in the egg and vanilla. Wipe down the bowl occasionally with a rubber spatula.

Mix the flour in on low speed, add the raisins and cranberries, and then mix until evenly distributed. Using a tablespoon measure or medium ice cream scoop, drop dough on cooking sheets lined with parchment paper about 3 inches apart. Press down slightly to flatten.

Bake for 10–12 minutes. Cool on racks. Store in an airtight container.

Note: This recipe can be doubled—easily. Also, you could throw some nuts in there as well, it’s up to you. Just cut back a bit on the fruit mixture—you want 1 ½ cups of any fruit/nut combo.

It needs to be buttery with the perfect balance of sweetness. I reach for a ratio of more brown sugar to sugar since brown sugar creates a chewier texture while sugar gives those coveted crisp edges. You need both to create the perfect balance!

I use rolled oats because they hold up better in these cookies than quick-cooking 5-minute oats. But you can use either one in these oatmeal cookies! I also reach for sweetened dried cranberries, like Craisins, because of their sweet chewy texture pairs well with the hearty oatmeal.
