Msmens are pies or rather pancakes because Moroccans call them crepes feuilletees but I would rather call them pies. Anyway, we would call them msmens butter, Moroccan pancakes made of durum wheat flour that are spread in a thin / transparent sheet and then folded several times, being sprinkled with a mixture of oil and butter. They are absolutely wonderful, especially for breakfast, but they can also be served as an appetizer with different fillings. If you do not have durum wheat flour, you can also use white flour but I recommend you put a teaspoon of vinegar in the dough so that the dough is elastic and easy to spread.
- 500 gr durum wheat flour
- 100 gr white flour
- 400 ml of warm water
- 16 gr fresh yeast
- 200 gr oil
- 200 gr sour cream

METHOD OF PREPARATION Msmens RECIPE - Moroccan pies in layers (video recipe):
Knead a dough made of wheat flour, white flour, water, yeast, a dough like bread and knead for 15-20 minutes. Let it rest for 20-30 minutes and then divide the dough into balls of equal size that are greased with oil and let it rest for another 5 minutes.
Then take each ball and spread the dough as thin as possible. Sprinkle in 4 (SEE VIDEO) sprinkle with durum wheat flour at each slicing and grease with oil mixed with butter. Once folded, the pies must be square or rectangular. Let it rest again for 5 minutes, meanwhile finish folding the other pies. After they have rested, spread the pies again just enough to increase their diameter and fry them in a non-stick pan, preferably in a pancake pan. Brown well on both sides, taking care not to burn. Serve hot or cold with olive oil, honey or melted cheese.
