  4. Bake in the preheated oven until the chops are tender, about 45 minutes.

These were great *IF* you like horseradish...a definite prerequisite! I also added various spices to the chops before I piled the crumb topping on--salt, pepper, cayenne, oregano, garlic powder and basil. Just eyeballed the spices and added per my own taste. I also baked them atop slices of onions which baked up crisp tender with a wonderful flavor from the juices/spices. Finally, I started to put the chops under the broiler for a few minutes after they were done to crisp up the crumb mixture since it seemed a little 'wet' and I was SO glad I tasted it first! Where this dish is lacking in presentation, it definitely makes up for in flavor. This is an easy, quick and delicious weeknight meal with the perfect amount of horseradish and tender, succulent meat to boot.-07 Jul 2010

When my family moved to the USA school for me was about learning the language and keeping up with the curriculum. Learning the culture and traditions of American school was also a big part of my school days. One new experience that particularly sticks out is Valentine’s Day traditions.

During those years (mid 80s) the holiday was not as big in Mexico as it is now. While I did know that it was a day for celebrating love and friendship to me it was an adult day. In the states I learned it was celebrated by everyone.

Once February began the red and pink holiday decorations hung from my elementary school’s ceilings, walls, windows and doors. To me it was as though the world had turned into one giant red construction paper heart. My first American Valentine’s Day my teacher sent home a letter explaining that there would be a party and how I needed to prepare for it. Basically I needed to bring a treat and Valentine’s Day cards to exchange with my classmates.

I still remember going with my parents and siblings to pick out our cards. I walked the special holiday isle setup by the store. There I took my time deciding what type of card I wanted to give my classmates. It was fun looking through the cards but the decision was difficult. Thoughts like if I pick this one they’ll think I’m immature, and this one is too girly, raced through my head. Thankfully there were boxes with mixed cards and messages. Phew!

Every year it was the same. We went to the store and after making my decision I walked with the box in hand towards the shopping cart. We’d make our way home were I’d lay belly down on the carpet writing out my list. At the top of the list came the names of my best friends, then good friends and so on working my way down to the classmates I didn’t particularly like. I would fill in each classmate’s name and some also received special friendship messages.

At the classroom’s Valentine’s Day party we were served heart candy with sweet and funny messages, chocolates, cookies and cupcakes. This too was when classmates would exchange the colorful cards. Envelopes in hand we shuffled through the classroom handing them out. Everyone received a card and candy from me. It didn’t matter if I didn’t consider them a friend. Leaving anyone off the list was not something I had the heart to do. Wether the kid liked me or not also didn’t matter. What mattered to me was that I knew I wasn’t treating anyone differently. Being the new kid and being treated differently was something I understood well.

All these years later the memories I recall are happy ones. Back then worries of fitting in were my concern now I see how silly and innocent it all was. As the years went by I very much looked forward to school Valentine’s Day activities and celebrations. Well, high school was another matter but we’ll talk about that another time.

Speaking of memories, yesterday I remembered these pork chops are one of my husband’s favorite meals. In fact the recipe is his and one he taught me. I shared it a couple of years ago and wanted to share it again with the recipe print-out option. Also because it is a great recipe and one that deserves attention. I don’t know what has happened to me since we were on vacation in Aruba (what feels like a hundred years ago), but I seem fixated on one food, and one food only: Meat. Yeah, I hardly know me either. How could this have happened? The former vegetarian? The person who considers meat a side dish, and nothing else? She who could live by quiche alone? This road I’m walking down scares me. How long until I start craving Bistro Burgers? Gnawing on the bones of demolished lamb chops, then vacuuming them of their marrow? I’ve always seen carnivorous cravings as a slippery slope.

But the truth is a little more earnest: I’ve been striving for more balance in my meals. I’m considering meals that have an element from all food groups in it what this means is that I’m trying to pair pasta and other carbs with not just vegetables, but something with protein, in hope that it will keep us satiated longer.

Of course, having been a vegetarian for more than 15 years, I know very little about cooking meat. I have never made a hamburger or steak. I’ve never roasted a whole chicken. I’ve used my broiler less than ten times, ever. And I have never breaded anything. Or, I hadn’t before Monday night, with Alex’s help, and wow, was it ever better than I had expected.

I’m sure it has a lot to do with the fact that the Crunchy Baked Pork Chop recipe came from the latest issue of Cook’s Illustrated–which my sister bestowed me with a two-year (yay!) subscription to for Hanukah–and CI can do absolutely no wrong. Starting with a super-moist bread made them even thicker and crunchier than I thought possible, and thickly coating pork chops that been swaddled in a Dijon-egg white mixture, I think I have seen the breading light. Because they’re brined first, they have none of that white meat cardboard effect I cannot and will not get past.

This isn’t exactly the quickest way to make pork chops–the frying pan or broiler are best for that–but if you’ve got a little extra time, I think you’ll be impressed. Bowled over, even. Just don’t forget to serve them with some vegetables and a salad some days, I’m certain they are the only things between me and this guy.

CI notes: This recipe was developed using natural pork, but enhanced pork (injected with a salt solution) will work as well. If using enhanced pork, eliminate the brining in step 1. The bread crumb mixture can be prepared through step 2 up to 3 days in advance. The breaded chops can be frozen for up to 1 week. They don’t need to be thawed before baking simply increase the cooking time in step 5 to 35 to 40 minutes.

4 boneless center-cut pork chops, 6 to 8 ounces each, 3/4 to 1 inch thick, trimmed of excess fat
4 slices hearty white sandwich bread, torn into 1-inch pieces
1 small shallot, minced (about 2 tablespoons)
3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)
2 tablespoons vegetable oil
Ground black pepper
2 tablespoons grated Parmesan cheese
1/2 teaspoon minced fresh thyme leaves
2 tablespoons minced fresh parsley leaves
1/4 cup plus 6 tablespoons unbleached all-purpose flour
3 large egg whites
3 tablespoons Dijon mustard
Lemon wedges

1. Adjust oven rack to middle position and heat oven to 350 degrees. Dissolve 1/4 cup salt in 1 quart water in medium container or gallon-sized zipper-lock bag. Submerge chops, cover with plastic wrap, and refrigerate 30 minutes. Rinse chops under cold water and dry thoroughly with paper towels.

2. Meanwhile, pulse bread in food processor until coarsely ground, about eight 1-second pulses (you should have about 3 1/2 cups crumbs). Transfer crumbs to rimmed baking sheet and add shallot, garlic, oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss until crumbs are evenly coated with oil. Bake until deep golden brown and dry, about 15 minutes, stirring twice during baking time. (Do not turn off oven.) Cool to room temperature. Toss crumbs with Parmesan, thyme, and parsley.

3. Place 1/4 cup flour in pie plate. In second pie plate, whisk egg whites and mustard until combined add remaining 6 tablespoons flour and whisk until almost smooth, with pea-sized lumps remaining.

4. Increase oven temperature to 425 degrees. Spray wire rack with nonstick cooking spray and place in rimmed baking sheet. Season chops with pepper. Dredge 1 pork chop in flour shake off excess. Using tongs, coat with egg mixture let excess drip off. Coat all sides of chop with bread crumb mixture, pressing gently so that thick layer of crumbs adheres to chop. Transfer breaded chop to wire rack. Repeat with remaining 3 chops.

5. Bake until instant-read thermometer inserted into center of chops registers 150 degrees, 17 to 25 minutes. Let rest on rack 5 minutes before serving with lemon wedges.

I recommend boneless, thick-cut pork chops for this recipe. At least 1&Prime thick is ideal. Boneless will mean they will cook up quickly, but thick-cut will make sure they don&rsquot cook up so quickly that they dry out.

That said, you can definitely use bone-in pork chops- they just will take longer to cook in the oven (as a bonus, bone-in meat is often much juicier, like with this bone-in BBQ chicken recipe). They are also larger, so you&rsquoll definitely need a large skillet, or you may need to sear in two batches and transfer to a baking dish.

If you use thin-cut pork chops for this, I recommend skipping baking them in the oven all together and instead finishing cooking them in a covered skillet on the stovetop. Reduce the seasoning as well.
