Baked meatballs

We clean the onion, wash it and put it on the mincer, or on the grater.

we clean the garlic, wash it and grind it.

soak the bread in a little water.

we clean the potato, wash it and put it on the grater with small meshes.

we put the minced meat in a bowl.

over we put onion, garlic, potatoes and bread soaked and crushed.

chop the green parsley and add.

season with salt and pepper.

finally we add the 2 eggs.

mix all the ingredients very well with your hands.

we take an oven tray and place some baking paper on it.

form meatballs and place them in the pan.

put the tray in the hot oven.

leave the meatballs for about 35-40 minutes, then turn them over.

we leave them for a while until they are ready.

take them out and leave them to cool, then serve.

* you can also not return them, because they are good anyway ...


Baked meatballs

I really like meatballs, but we all know that they are not the healthiest meat in the world: minced meat fried in hot oil. Tasty (if done well) but unhealthy. We can change that. I mean, we can make them tasty but a little healthier. Do you know how? Simple: heat the oven well and use it instead of the oil bath. There it is:

You need a tray (plus one if you choose to make the garnish I show you here, namely the potato coins, cut as thin as possible, sprinkle with a little olive oil and sprinkle with currant or thyme), baking sheet and raw material. . I used minced chicken. I mixed a kilogram of chicken with two tablespoons of breadcrumbs, two eggs, a handful of finely chopped parsley leaves, a few finely chopped dill leaves and these, a little salt, a little ground coriander, a clove of finely chopped garlic .

I formed the meatballs and put them on the baking sheet. I put the tray in the hot oven (200 degrees Celsius) and reduced the temperature to 180 degrees. I left the meatballs in the oven for 18 minutes.

Halfway through, I put the potato coins in the oven.

I made a fine yogurt sauce (three tablespoons) beaten with a tablespoon of extra virgin olive oil and a pinch of chopped dill.

I put the sauce over the meatballs.

Baked vegetable meatballs

Heat 3-4 tablespoons of vegetable oil in a pan. Cook the grated carrots for 3 minutes.

Peel and finely chop an onion.

Add finely chopped onion over carrot. Stir and cook for another 3 minutes on medium to low heat.

Add 150 g of round grain rice washed well in cold water.

Stir and add 500 ml of hot vegetable soup.

Stir, put the lid on. Allow the rice to swell over low heat for 10 minutes.

Take the lid off, turn off the heat and season with salt and pepper. Stir and allow to cool.

In a saucepan, boil 3 peeled potatoes. Add a teaspoon of salt to the water. Boil for 30 minutes.

After they have boiled, let the potatoes cool a little. Peel the potatoes.

Crush the potatoes with a fork in a large bowl.

Wash and put on the large grater 3 pumpkins.

Put the grated zucchini in a strainer, add a teaspoon of salt and mix well. Press lightly with a spoon and let it drain for 30 minutes.

Add the drained zucchini over the mashed potatoes.
Add the rice composition. Add 40 g of breadcrumbs, ground cumin and salt.

Wash and finely chop a bunch of chopped dill. Add to the composition.

Mix with your hands until completely homogenous.

Form small balls with the help of your hands.

Pass each ball through the breadcrumbs.

Place the balls on a baking tray lined with baking paper and flatten them lightly with your fingers (optional).

Put the tray in the preheated oven at 190 degrees for 30 minutes.
Remove from the oven and let the vegetable meatballs cool slightly.

Soybean grain meatballs

Crispy soy meatballs are always welcome! We can serve them with any garnish, or even on a plate of appetizers. We can also add them to the holiday menu along with other vegan dishes.

They are very tasty and filling and in addition they have a slightly smoky aroma and a copper color. It is very easy to prepare, either in the pan or in the oven, as you like best. For some time now, I only make them in the oven, they seem much tastier and healthier, plus they are not oily at all.

INGREDIENT:

  • 2 medium potatoes
  • 200 g soybeans
  • 40 -50 ml of tomato juice
  • 2 tablespoons breadcrumbs
  • 2 tablespoons wheat flour
  • 4-5 cloves of garlic
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • coriander
  • dill / green parsley
  • salt pepper

METHOD OF PREPARATION:

1. Wash the potatoes with their skins and boil them. When they are ready, we clean them and put them through the large grater.

2. We cook the cooked soybeans with a vertical mixer, or we can give them to the robot.

3. Mix the soy with the grated potatoes, add the tomato juice, breadcrumbs, wheat flour, olive oil, a pinch of coriander, smoked paprika, salt, pepper, dill or finely chopped green parsley and garlic cloves. through the press. Mix very well with a spoon or even by hand.

4. We form round balls that we can bake in the pan or in the oven. I prefer them in the oven, so we place the balls on a tray lined with baking paper. And put them in the oven (preheated to 180 g) for 30-35 min.

We can serve soy meatballs with any garnish we want, or simply with a vegetable salad.

Ingredients

  • 2 tablespoons breadcrumbs

Baked chicken meatballs with sauce of your choice. Much healthier than fried but just as delicious. Easy and fast to prepare.

Chicken breast is a pretty fair meat, but well cooked we get some extraordinary dishes from it. I recommend that you do not use pre-chopped chicken for this recipe, but that you choose chicken breast that you can mince at home.

The meatballs will be much tastier and you will be sure that you know what you are eating. You can juggle the rest of the ingredients and you can put in meatballs any kind of spices you like or you can replace the ingredients you don't like. Whatever you put, you will get some delicious, fragrant and light chicken meatballs.

Baked beef meatballs

Gone are the days when I fried meatballs in oil and perfumed my whole house with the smell of frying. It took me a while to find the best recipe for baked meatballs. Sometimes I came out raw, other times too dry, but now they were perfect :).

Ingredient:

  • 400g minced beef
  • a slice and a half of bread
  • 1 or
  • 1 small onion
  • 2-3 cloves of garlic
  • 2 teaspoons tomato paste
  • 1/2 teaspoon paprika
  • 1 tablespoon finely chopped green parsley
  • salt
  • pepper

Method of preparation:

  1. I soaked the bread in water. I used a slice and a half of bread the size of toast slices.
  2. I mixed the meat with the egg, finely chopped onion, well-squeezed bread, crushed garlic, tomato paste and spices. I mixed well by hand until the ingredients were homogeneous.
  3. I greased my hands with oil and formed the meatballs a little smaller than the ping pong balls (about a tablespoon of composition) which I flattened slightly. I never make them round.
  4. I placed the meatballs in a large tray lined with baking paper. I put them in the preheated oven at 180 degrees Celsius for 15-20 minutes. I put them on the penultimate top shelf of the electric oven.

I got about 20 pieces.

I think so, but it's best to check them and make sure the meat isn't raw.

It should be specified that at 180 degrees the oven must be set with ventilation, otherwise they do not come out crispy at all
