Cudduraci are traditional Italian Easter biscuits from the southern region of Calabria. They are flavoured with lemon and vanilla, shaped as braids and decorated with coloured sprinkles.

  • 400g plain flour
  • 180g caster sugar
  • 16g baking powder
  • 1 pinch salt
  • 2 eggs, lightly beaten
  • 60g butter, melted
  • 1 teaspoon vanilla extract
  • 1 lemon, zested
  • milk, as needed
  • 1 egg, for brushing
  • coloured sprinkles for decorating

  1. Mix flour, sugar, baking powder and salt together in a large bowl. Make a well in the middle.
  2. Add beaten eggs, melted butter, vanilla extract and lemon zest. Knead quickly to form a ball. If too dry, add a bit of milk to make a smooth dough. Wrap in cling film and refrigerate for 30 minutes.
  3. Preheat the oven to 180 C/ Gas 4. Line a baking tray with parchment paper.
  4. On a lightly floured surface, roll out the dough to 1/2cm thick. Cut 3 long strips and twist into braids, about 5 to 7cm long. Place on prepared baking tray leaving a little space between each one.
  5. Brush the biscuits with beaten egg and bake in preheated oven for about 15 or 16 minutes, until lightly golden. You can decorate them with sprinkles if you like.
  6. Remove from the oven, cool on a wire rack and serve.

Tip

Work the dough as little as possible to keep the texture of the finished biscuits crunchy, not chewy.

The cuddura, ‘Kulloura’ in Greek (meaning ‘crown’) is a sweet cookie which may be found on every Sicilian table during Easter lunch.

Originally the cookies were produced by shepherds, brought with them during their travels through the countryside and the crown shape made them easy to hang on their arms. Also, young girls used to offer heart-shaped cuddura as a love message for their boyfriends.

Every time I see a pack of coloured sugar sprinkles, my childhood memories come back. During Easter time my mother used to spend one whole day in the kitchen, usually with a couple of friends, baking the cudduri.

While children were running around the kitchen table, dozens of eggs were hard boiled, pounds of dough kneaded just by one of them, without weighing ingredients, using just experience. The other women's duty was to cut different shapes out of the dough, while children’s job was to decorate the cudduri with the sugar sprinkles.

It was more than a tradition, it was a ritual. Every year the same one, comforting as all known things.

The cuddura was the Easter present for children, relatives, friends and a lot of cuddure were received! A real exchange and a way to discuss about the taste, shapes, decorations and thing about new variations. to come back to bake the cudduri in the same way next year!


600gr flour
15gr beer yeast
200gr sugar
100gr lard
half glass of aniseed liqueur
1 lemon
14 eggs

Making it

Combine a little flour with the beer yeast which has been dissolved in a few spoons of hot water. Allow the mixture to rise.

Take the remaining flour and pour it onto a work surface to form a mountain or volcano.

Add into the middle 4 eggs, the liqueur, sugar, lard, a pinch of salt and the yeast mixture.

Work the dough with vigour as the pasta should be solid but elastic.

When done, make small ciambelle shapes, or long breads, around 10 centimetres in length. The mixture should make ten pieces. On each, place an egg.

Place all on a floured oven tray and allow to rise for a couple of hours after which cook in a hot oven.

When I was younger, I used to spend my Sundays visiting my great Italian grandmothers. The tenement apartment house of dad’s mom’s mother was always the first stop, and no matter what time of year and no matter what time we arrived, she always had something waiting for us to enjoy. Sometimes is was as simple as a bowl of ditalini in chicken broth or a slice of store-bought pound cake. But on those special days, we would walk into her kitchen to the sights and/or smells of her infamous egg biscuits. Now, I write infamous not because they were foul-tasting or burnt to a crisp rather, the infamy comes from the fact that nobody in my family knows how to recreate them exactly like grandma. I have two very different recipes in my possession, with varying proportions and ingredients, and my aunt has three. Never mind that the variations are so significant (the inclusion of orange juice in one is just one example), it is impossible to know the true recipe because my great grandma didn’t measure her ingredients. Even when baking, an art much like a science, she “eyeballed” everything. Despite the fact that her recipes have measurements, I never saw her measure anything, besides maybe with the occasional coffee cup. This recipe is a combination of all my grandmothers' egg biscuits. Although it still does not produce an exact replica of those of mia nonna, they are certainly delicious.

Combine flour, baking powder, and salt in a bowl.

Cream together shortening and white sugar in a bowl until creamy. Add 1 egg at a time, mixing well after each. Add 2 teaspoons anise extract and vanilla extract. Slowly add milk and mix until all ingredients are blended. Slowly add flour mixture, and mix until thick but creamy. Place dough in the refrigerator for 30 minutes to overnight.

Preheat the oven to 375 degrees F (190 degrees C).

Coat a work surface and hands with flour. Take a quarter-sized piece of dough and roll into a long narrow sausage shape. Form into desired shapes, such as "s" shapes, twists, candy canes, letters, etc. Cookies will puff up when baked, so be sure each cookie is only about the width of a pinky finger. Place cookies on a baking sheet about 1 1/2 inches apart.

Bake in the preheated oven until light golden in color and golden brown on the bottom, 12 to 15 minutes. Let cool completely, about 1 hour.

Place confectioners' sugar in a bowl and add 2 teaspoons anise extract. Mix in milk 1 tablespoon at a time until icing is smooth and creamy and not too drippy. Coat cooled cookies with icing and top with sprinkles.

This Easter bread is well preserved for over a week if not in contact with the air.

The best way is to put it in food paper or in a plastic bag so that, as the days pass, they become softer.
