We wash the zucchini, cut off the ends and cut it into slices of about 1 cm. Put them with salt and lemon juice and leave them in the fridge for 20 minutes. Drain the leftover juice and fry them in a grill pan greased with a little olive oil. Tomatoes are cut into thin slices, as well as mozzarella.
Assembly: 1 slice of grilled zucchini, 1 slice of mozzarella, 1 slice of red, a little pesto sauce, 1 slice of zucchini, 1 slice of red, a little pesto sauce, and on top a tuft of field salad.
After they are all ready, sprinkle them with a little olive oil, salt and freshly ground pepper.
