Method

How to make grape jam

Peel the apples, core them and cut them into chunks.

Transfer them to a saucepan with the grapes and lemon juice and cook for about 30 minutes.

Put the juice back into the pot with the grappa and cook for another 40 minutes.

Caramelized grape skewers

The skewers of caramelized grapes I'm a quick and easy dessert to prepare, the only difficulty? Do not let the caramel before completely coating the fruit. Preparing it and bringing it to the table will be child's play and you can enjoy it even for a birthday buffet, one snack fanciful or a picnic of late summer, also like aperitif paired with cheeses and cured meats.

To prepare the skewers of caramelized grapes first wash, shell and dry 2 clusters: 1 of White grapes and 1 of pink grapes. Put the berries on wooden skewers, alternating them with about 100 g of walnut kernels.

Pour 300 g of caster sugar with 4-5 tablespoons of water and 4-5 drops of lemon juice. Caramelize the sugar over high heat, without stirring.

When the caramel begins to take on a golden color, remove it from the heat and, with the help of a spoon, pour it on fruit skewers to completely coat the grapes.

To present the sweet Cut a large grapefruit in half horizontally. Arrange one half on a serving plate, with the cut side down, and insert the skewers of caramelized grapes as you finish them. Let them cool well before serving.


Preparation

First we wash and clean the grapes, shell the berries, peel them and remove all the seeds.

After which we leave the grapes to macerate in a bowl with the sugar, the lemon juice and the vanilla pod (which we will have previously cut in half lengthwise) for 12 hours in a sufficiently cool place.

Then pour everything into a jam saucepan: bring everything to a boil, skim and let it boil for another ten minutes.
The jam is now ready and we can pour it still hot (without filling to the brim) in airtight jars that we will have previously sterilized and warmed.
We close the caps and leave them upside down until completely cooled.

Grape jam with the Thermomix

Now like most recipes, even the one for grape jam has its equivalent for preparation with the Thermomix.
The ingredients are obviously the same and the preparation requires a few simple steps: wash the berries and remove the seeds, then put everything in the jug and blend for 3 seconds at speed 5.
Now add the sugar and the lemon and cook for 45 minutes at 100 degrees anticlockwise at speed 2. If the jam is too liquid, we can continue cooking at the & quotVaroma & quot; temperature for the time necessary for the thickening.

Grape jam according to the Abruzzo recipe

An ancient Abruzzese custom instead it reports the recipe strictly with black grape with small grains, also called strawberry grape.
In addition to the classic ingredients (grapes, sugar, lemon juice and cinnamon) the recipe also adds 2-3 squares of dark chocolate.
We wash and dry the grapes, after which we put all the whole grains in a large pot and crush some of them to form some liquid at the bottom of the pot.
Let it heat for a few minutes and then pour two ladles of berries into the mill at a time: we pass until all the liquid and the pulp come out but be careful not to crush too many seeds otherwise it would be too bitter.
Once all the berries have been passed, put the liquid obtained in a large pot and add the sugar, cinnamon, lemon zest and bring everything to a boil. We remind you to remove the cinnamon after only a few minutes, otherwise our jam would soak too much.
The trick of tradition dictates that you do not start mixing immediately after pouring the sugar but only once everything has started to boil, to then have to mix as little as possible.
Then let it boil for two hours and only at the end add the dark chocolate squares. Once melted, our jam will be ready.


How to prepare grape jam

1) Prepare the fruit. Wash the clusters of grape remove the stalks, shell the berries and dry them carefully, passing them one by one with a fine cloth. Mash them well in a bowl and then pass them through a fine sieve to recover all the juice, the pulp eliminates the peel and seeds.

2) Cook the jam. Collect the juice and pulp in a thick-bottomed steel pot and put it on the stove for 5 minutes, stirring the mixture with a wooden spoon. Pour it up sugar and the lemon juice filtered bring to a boil, stirring occasionally and skimming as needed with a slotted spoon. Cook 35-40 minutes or until the mixture hardens.

3) Check the cooking. Pour a little of the mixture onto an inclined saucer, if the jam runs with difficulty, then it is ready.

4) Fill the jam and preserve. At this point, pour the hot jam into the glass jars that you sterilized together with the screw caps. Close hermetically the next day, putting a disc of greaseproof paper soaked in 90% alcohol. Then, store the jars of your grape jam in a cool, dry pantry.

1) The preservation of the jam depends on the amount of sugar used in cooking. If the grapes are very sweet, you can decide to halve the sugar doses, but consume the jam within 1-2 months. If you use all the recommended amount of sugar, you can also keep it for 4-6 months.

Preparation

For a very good grape jam, you will have to start with fruit cleaning. Take the grapes and rinse them under tap water. Then shell the berries one by one and crush them in a container, so as to remove all the seeds with a teaspoon. But leave the skins, which will give flavor and texture to yours marmalade.

Now put the pressed berries in a saucepan, add it sugar and cook over very low heat, continuing to stir until the sugar has dissolved completely. When the marmalade will come to a boil, lower the heat and cover the saucepan with a lid.
Don't forget to mix it every now and then, to prevent the marmalade stick to the bottom or burn.
In all, it will have to cook for about an hour, although the cooking time will depend on how thick you want your jam to be.

While the jam is cooking, sterilize the glass jars and then put the marmalade still hot inside and close them. Boil them for another thirty minutes and then your jam will be ready to be stored and enjoyed.

The strawberry grape, what they call here in Ticino American grape, it's very special. and before 2016 I didn't like it! So soft and slimy the pulp. no no, that flavor that is not of grapes!
