Potato pie with cheese

We clean the potatoes, wash them and boil them whole with a pinch of salt. When they are well penetrated, we drain them and let them cool.

Cold, we put them on the grater with large mesh.

Also on the large grater we put the cheese and mozzarella.

We wash the green onion and cut it into rounds, we chop the green parsley finely.

In a bowl, mix the grated potatoes with the green onions, parsley, then add the grated cheese, including the Parmesan cheese.

Sprinkle salt and pepper to taste, but also paprika. Mix well.

The composition obtained is divided into about 3 equal parts. If you want to make small pies, then divide it into several parts.

Take a non-stick pan with a diameter of 20 cm, put a tablespoon of oil.

Heat it well, put it aside, put the first part of the composition and press it well with a spatula.

Put the pan with the pie on the fire, let the fire be suitable, leave it until it browns (lift it slightly with a spatula to see when it is browned).

We turn it over on a plate with the uncooked side down, then we put it back in the pan, also with the uncooked side down and let it brown.

We take it out on a plate when it's ready.

Do the same with the other two pies, but be careful to put a tablespoon of oil on each pie.

Serve hot, with strips of Parmesan cheese on top and a salad next to it.
