They are very tasty and easy to make, especially when we do not know what to cook and when we do not have much time. We all love Easter. In our house, they are a place of honor and I prepare them quite often, in different variants, especially chicken pasta and red sosde. Now I wanted to show you a simple pasta recipe, very tasty and easy to make, even for beginners. You don't need many ingredients and you already have most of them in the kitchen.
For pasta, I used a bag of branded pens Antonio di Vaio. They contain durum wheat and have a high protein level of over 12%. All these benefits come to meet people who are attentive to their diet and who want a balanced lifestyle. In addition, they behave perfectly when cooked, keep their shape and have a very good taste. In addition to pens, Antonio di Vaio also sells spaghetti, fusilli, tagliatelle and farfalle. You can use any of them to prepare pasta with ham and mushrooms, I chose penne because they are short pasta and retain the sauce very well.
As I mentioned, you don't need many ingredients for this sauce. First of all you need pressed ham. Try to get a good quality one, with as few unnatural ingredients as possible. You can use any kind of ham you like, I used a turkey one, but it can also be chicken or pork. For mushrooms, I used fresh mushrooms, but there can be other varieties, even wild mushrooms. If necessary, canned mushrooms are also good. If you want to make fasting pasta, you just have to omit the ham. Easter will be just as tasty.
And because there are penne with ham and mushrooms, but they also have a tomato sauce, I would use 2 types of tomatoes. Tomato in broth and mashed tomatoes. You can also use Tomato juice or just 2 cans of tomatoes in broth. We like pasta with more sauce, so we always put more tomatoes, but you adapt them to your taste. The sauce is more than enough for 500g of pasta, so for a large and hungry family. If you stay, you can freeze them in pans and defrost them if necessary. Pasta penne with mushrooms and tomato sauce-Ingredients
350g tomato sauce with basil-Delikat
250 g paste penne
400 g fresh mushrooms
2 cloves of garlic
2-3 tablespoons of olive oil

In a pot, boil water for pasta.
When it starts to boil, add the pasta, salt to taste and cook for 10-12 minutes or according to the instructions on the package.
While the pasta is boiling, prepare the mushroom sauce.
We cut the cleaned mushrooms into slices and sautéed them in olive oil in which we put two cloves of finely chopped garlic. When the mushrooms are ready we add the tomato sauce with basil from Delikat season with salt and pepper (if you want it to be sweeter you can add and a teaspoon of sugar), boil 3-4 min, then add the cooked pasta and mix gently until the sauce covers all the pasta.
If the sauce is too thick, add a little of the water in which the pasta was boiled and keep it on the fire for another 2 minutes.
Serve hot sprinkled with grated Parmesan cheese. If you prepare them on a fasting day, then give up Parmesan.
How to prepare minced meat sauce with tomatoes for pasta?
I chose a roomy pan that I incised very well, without oil. I said that if we have fatty meat (pork) we don't need extra oil. If we use lean meat we will have to put 1-2 tablespoons of oil in the pan. I put the minced meat in the hot pan and sautéed it for about 6-8 minutes on high heat, always opening the lumps with a spatula. I waited until the meat was lightly browned and developed a pleasant aroma. I still haven't added salt and pepper!
For best results, choose a large pan or fry the meat in several rounds. We don't want her to sit on the pile and foam, to whiten.
I reduced the flame to medium and added chopped onion and crushed garlic over the meat. I now added salt, freshly ground black pepper as well as basil and oregano (I had dried). If you have mushrooms or diced bacon, you can now put them in the pan to harden a bit.
I left everything to harden for 2-3 minutes and poured the glass of red wine. What flavors! I increased the flame a little to accelerate the evaporation of alcohol and I added canned tomatoes. I rinsed the can with 200 ml of warm water and poured it over the sauce. You need some liquid to boil the minced meat.

How much is a minced meat sauce boiled with tomatoes and garlic for pasta?
If the classic bolognese sauce is boiled for 3-4 hours on low heat (being from beef), this pork or chicken sauce boils in 40-50 minutes, also over low heat, stirring occasionally in it. Be careful, sprinkle! I cover the pan with a splash lid. The sauce should drop and bind and the meat should be tender, easy to chew. If we pull the spatula with the spatula, there must be lines left. If they are covered immediately, it means that the sauce is too liquid and that it still needs to be shaken and concentrated. For me it lasted approx. 50 minutes.
Bridge: if the tomatoes are very sour you can correct the acidity of the sauce now, at the end, by adding a pinch of sugar. Immediately the thing changes and the sauce is perfectly balanced.
We don't make pasta with sauce puddles! A thin sauce does not even adhere to the surface of the pasta.
Of course, while the sauce is boiling, we have time to take care of the pasta. About halfway through the cooking time of the sauce (after about 30 minutes) I boiled a pot with 3 & # 8211 4 L of water and 2 teaspoons of salt. Pasta needs salt during cooking to have a pleasant taste. I chose some pens that I boiled exactly as it says on the package (it said 11 minutes to me). Timing is crucial when making pasta and it is very important that the sauce is ready before pasta, not the other way around! The sauce can be reheated at any time while the cooked pasta is NOT!
Another bridge: keep 1-2 tablespoons of the water in which the pasta was boiled to match the final consistency of the preparation.
I drained the cooked pasta al dente (not & # 8222all dente & # 8221 or & # 8222aldente & # 8221 as I saw it written around us) and passed them directly into the pan with the hot sauce (pulled from the fire!).
I gently shake the pan (you can mix gently with a spatula) so that all the pasta is well covered by the sauce. There are days when I need quick food recipes. Often I only have 30-40 minutes to cook, eat and move on. On very busy days, these simple pasta recipes help me quickly get rid of cooking worries and make a quick and delicious lunch for me and my son.

It may not look extremely appetizing (it really doesn't look appetizing, that's the truth), but the mushroom sauce with cream is one of my favorites. I would eat it the next day (I eat once every 6 months, there are too many things I would eat the next day), empty, with polenta, pasta, meat, fresh pita, baked peppers , with broccoli or Telemea cheese. The best possible mushroom sauce with cream is, for me, the mushroom sauce. As I don't always have fresh or at least frozen mushrooms, but I always have dried mushrooms in the house, I cheat and make mushroom sauce and dried and rehydrated mushrooms.
How did I proceed? First I put a handful of dried mushrooms in lukewarm water.
I chopped two sprigs of green onion and one of garlic. I soaked them in a thick-bottomed pot with a little oil over low heat.
I peeled 7-800 grams of mushrooms. In the sense that I rubbed them lightly with a dry cloth and an unused dish sponge.
I cut the mushrooms. One part in lamle, one part in quarters. While the slices soften and seem to dissolve in the sauce, the quarters help me see that it is a sauce made from mushrooms. I put the mushrooms in the pot, over the onion and garlic soaked well.
I poured the rehydrated mushrooms, along with the water from them (which I passed through a strainer) into the pot, over the mushroom.
I let it boil, I put a third of the contents of the pot in the blender and mixed on high speed. I put 150 grams of cream, 100 milliliters of cold water and two yolks over the blender sauce and mixed again.
I poured the sauce from the blender into the pot over the mushrooms left there. I let it simmer for 10 minutes, seasoned with salt and pepper, stirred and turned off the heat.
I grated a little nutmeg in the sauce and added a handful of green onions, whole green garlic and parsley leaves to the mixture. I put a lid on the pot.
That was about it.
Pasta with mushrooms in sour cream sauce
For those who love pasta, it is an easy recipe to make, in a short time and with a very tasty finish.
500 gr pleurotus mushrooms or mushrooms
400 gr wide cut
2 green onion threads
4-5 cloves of garlic
200 gr sour cream
200 gr milk
1 tablespoon starch or wheat flour
salt, pepper, olive oil
Boil the pasta according to the instructions on the bag.
Finely chop the onion and garlic and fry in 2 tablespoons of olive oil. Wash the mushrooms, cut them into strips and put them in the pan over the onion and garlic.
Let it cook well until the water left decreases, add salt.
Separately mix the starch with the cream and milk and add to the mushrooms. Let it simmer for a few more minutes, stirring constantly.
Drain the pasta and serve with the mushroom sauce. Sprinkle cheese (preferably Parmesan) on top.
