Beat the eggs vigorously in a deeper bowl with the salt. Then sift the flour and baking powder, mix gently until incorporated.
Add the oil, mix gently, then the lukewarm milk, little by little, continuing to homogenize all the ingredients, until you get a thicker dough.
Cut the mozzarella into cubes, peel the olives and chop finely.
In the above dough, put the mozzarella pieces, olives and bacon cubes, season with pepper and mix gently with a spatula until all the ingredients are incorporated.
The cake form is lined with parchment paper or a little butter and flour, then pour the appetizer cake composition, level and bake in the preheated oven for approx. 45 minutes at 180 degrees. After passing the toothpick test, take it out of the oven and sprinkle the grated Parmesan cheese while the cake is hot.
Leave to cool in the form, then serve simply or with a flavored sauce.
