Today we made the specialty of our house, smoked pork ribs, baked in wine and garlic. The ribs, pork spare ribbs as they are called by those from overseas, where they are very popular, are a delicacy that puffs can't resist.

After several attempts at recipes, trying to come up with something like the ribs from Ruby Tuesday, I finally discovered how they turn out the most delicious. In fact, the real name of the recipe is "better costs than Ruby" :-)

- 2 heads of garlic (1 head for each "string" of ribs)

- sesame oil (it's ok and sunflower)

We put the ribs in the smoker for an hour - an hour and a half. The smoked ribs have a super flavor and the smoker smashes them properly, so that the meat becomes reddish.

After removing them from the smoker, let them cool and place them in the tray in which we are going to prepare the ribs, in a special bag for cooking. We use some supersized turkey bags, taken from the States, but if you put fewer ribs, it's ok and the "magic" Maggi bag for chickens.

We grind 2 heads of garlic in a mortar. In a bowl put the garlic paste, oils, salt and pepper, basil, thyme, soy sauce, hot paprika and mix to blend well. We add a little wine so that the mixture becomes more liquid and we can easily pour everything into the bag.

Pour the mixture into the bag, spread evenly over the ribs, and pour the rest of the wine (about a liter). We squeeze the bag in our mouths and let the tray cool for 2 hours, so that it soaks.

After 2 hours we bring the tray from the cold and using a toothpick we drill holes in the bag, as often as possible so that it has steam where it can come out.

Put the tray in the oven heated to 180 degrees. After an hour we take out the tray and cut the top of the bag with scissors, taking care not to cut the edges - we do not want to pour the liquid mixture from the bag into the tray, because it will burn on the tray and will be difficult to clean.

Put the tray back in the oven for 45 minutes, so that it browns on top.

The result is difficult to describe in words. The red and tender meat falls off the bone on its own. They melt in your mouth.
