We clean and wash the vegetables well, finely chop the onion and put the carrot on the small grater.
Heat the onion over low heat until it becomes glassy then add the carrots and leave them together for 3-4 minutes, stirring occasionally.
Meanwhile, pour the beans in a strainer and leave it under running cold water so that it is well washed.
After the vegetables are well cooked, add the beans, tomato paste and season with salt and pepper.
Leave them together on medium heat for about 25 minutes.
At the end, add the finely chopped parsley and tarragon.
