Pumpkin tart

We start by washing, cleaning and grating the pumpkin. We mix them with a little salt and let them leave the water.

Grate the cheese, cut the sausage and beat the eggs with a fork just enough to mix the egg whites with the yolk.

Put the oil in a pan on the fire and heat the chopped onion, add the salami / sausage and the crushed garlic. Stir a few times and add the drained zucchini left and squeezed in your hands.

Let it cook a little, stirring for about 10 minutes from time to time so that it doesn't stick.

Cover the bowl with a lid and let it simmer and cool a little.

In a bowl, knead the flour with butter, salt, nutmeg, egg and water until we have a bound dough, not very large that we can spread. Form a ball of dough out of the dough and spread it to cover a tart tray with a diameter of 20 cm.

Put the dough in the tray, lift the dough slightly on the edges, push the dough with a fork and cut with a knife to form the future slices.

Bake in the hot oven for 10 minutes.

Until the dough is cooked, mix the zucchini with grated cheese and beaten eggs.

After ten minutes in the oven, the dough will be ready, take it out and pour the pumpkin mixture over it. Level, and put tomatoes and olives on top.

Bake again for about 30 minutes.


Serve hot or cold with vegetable salad or garlic sauce.
