28-Year-Old Bronx-Born Pastry Chef Heading to Noma

Malcolm Livingston II heads to Copenhagen after his tenure with wd~50.

Malcolm Livingston II, the 28-year-old pastry chef who has spent the last five years at wd~50 and is a veteran of both Per Se and Le Cirque, has been named the next pastry chef of Noma in Copenhagen, reports The New York Times.

Livingston will move to Denmark soon after wd~50 closes at the end of November, while Noma’s previous pastry chef, Rosio Sánchez, will leave to open a taqueria in Copenhagen.

Not long after his arrival, Livingston will join his new team in the temporary departure to Japan for the Noma pop-up at the Mandarin Oriental Tokyo, during which time the team will explore Japanese ingredients.

“When we announced that we were hiring, we had over 50 applications, which is pleasantly surprising,” René Redzepi told The New York Times.

“Several of them were very capable, but Malcolm was always in the back of my mind. The wd~50 school of pastry has been, to my knowledge, nearly without equal for the past decade or so. The pastry chefs that have come out of that kitchen have influenced methods and ideas in kitchens around the world.”
