Ingredients

  • 2 tablespoons coarsely chopped fresh rosemary
  • 1 tablespoon coarsely chopped fresh thyme
  • 8 whole allspice, crushed
  • 2 (12-ounce) pork tenderloins
  • 5 tablespoons Dijon mustard, divided
  • 1/2 cup low-salt chicken broth
  • 2 tablespoons chopped fresh tarragon

Recipe Preparation

  • Mix wine, garlic, oil, rosemary, thyme, and allspice in large resealable plastic bag. Add pork and turn to coat. Marinate at least 30 minutes and up to 1 hour, turning bag occasionally.

  • Preheat oven to 375°F. Remove pork from marinade and place on rack on rimmed baking sheet; discard marinade. Spread 3 tablespoons mustard all over pork. Roast until thermometer inserted into thickest part of pork registers 145°F, about 25 minutes. Transfer pork to platter and let stand 10 minutes.

  • Meanwhile, boil cream, broth, tarragon, and remaining 2 tablespoons mustard in heavy medium saucepan until reduced to 1 cup, whisking occasionally, about 10 minutes. Season sauce to taste with pepper.

This Pork Loin Tarragon starts with a bone in pork loin roast, cooked on the stove-top with a wine, mustard and tarragon gravy.

If you are a fan of my Pork Loin with Wine and Herb Gravy, I know you will love this one as well. It's similar, but different :) The main difference is the use of tarragon and mustard in the wine gravy, which is a treat if you are a tarragon lover, like me!

Also different with this one is that it starts with a bone-in, centre-cut pork loin roast. I find these roasts on sale often and can never resist popping one in the freezer. It's not always easy to find nice ways to cook them up though, which is why I love this recipe.

Even though this one starts with a bone-in roast, I will often remove the meat from the bone and thinly slice it, as I've done here. Alternately though, as this is a bone-in roast, you can cut it into wide "chops" from your roast and serve drizzled with the delicious gravy. This method of cooking the pork ensures a lovely, tender piece of pork whichever way your decide to serve it.


Crisp roast pork with honey mustard gravy

Heat oven to 240C/220C fan/gas 9. Pat the pork all over with kitchen paper. Lightly rub all over with oil and sprinkle liberally with salt. Cook for 20 mins, turn down the oven to 190C/170C fan/gas 5, then cook for 30 mins per 500g (about 2 hrs). Remove from the tin, place on a serving plate and loosely cover with foil.

Pour off excess fat from the tin. Add stock to the tin, then stir to incorporate meat juices and sticky bits at the bottom. Pour through a sieve into a small pan. Add mustard, honey and thyme, plus juices from the resting meat. Stir and simmer for 5 mins until starting to turn syrupy. Serve alongside the pork.

USE UP PORK LEFTOVERS

Cook 125g egg noodles according to pack instructions. Heat 750ml chicken stock with knob of fresh root ginger, 1 sliced garlic clove, pinch caster sugar and 2 tbsp soy. Stir in 1 halved pak choi, then cook for 2 mins. Stir through leftover pork slices and noodles. Serve.

Trim the pork of excess fat and remove the silver skin. Cut into 3/4-inch slices and set aside.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shallot and mushrooms and cook, stirring, until mushrooms are tender. Remove the mushrooms to a plate and set aside. Add the remaining tablespoon of butter to the skillet along with the olive oil.

Cook the pork medallions for about 10 minutes, turning to brown both sides, or until cooked through. Sprinkle with salt and pepper and remove to a warm plate keep warm.

Add wine or apple juice to the skillet. Stir in the cream and mustard bring to a boil. Boil, stirring, for about 2 minutes. Add the mushrooms to the cream mixture and cook for 1 minute longer.

Arrange pork medallions on a serving platter and spoon mushroom sauce over all. Sprinkle with rosemary leaves, if desired.

Serve with noodles, rice, or potatoes along with a tossed salad or steamed vegetables.

This is a true Italian pizza recipe that we acquired from our dear friend and great chef, Silvano, who lives in Monza, Italy.

4-5 thin slices of the very best prosciutto
Fresh mozzarella
Great olive oil
Chopped romaine lettuce
pizza crust (not cooked)

Directions

Place pizza dough on a pizza spatula. Sprinkle a small amount of olive oil on the crust. Place slices of fresh mozzarella on the pizza dough. Layer the prosciutto over the mozzarella. Add a couple handfuls of the romaine lettuce. Bake in the oven at 500 degrees farenheit for about 7 minutes (watch constantly so that you don't overcook). Pull the pizza out of the oven and add a little more lettuce on top and sprinkle some more olive oil.

Voila - enjoy a wonderful and unique pizza. It is awesome and your guests will rave about it (I promise).

Hand mix the ingredients into a ball and let the ball sit in an oiled glass bowl to rise for about a half hour (minimum). Take the dough, cut it in half and spread it out to make two round pizzas. I do this one at a time. Preheat oven to 500 degrees farenheit.
