Ghebele are mushrooms that grow in autumn, on the wood of conifers or deciduous trees. They are very tasty, but must be cooked well, because they contain certain toxic substances required, by boiling they are completely destroyed.

I cooked them in two ways:

Wash, cut and boil the gheb for about 10 minutes, then drain well. Finely chop the onion and carrot and fry in oil.

Then add the mushrooms and leave to harden for about 5 minutes, stirring constantly. Add salt, pepper and paprika, then add a glass of water and simmer for about 15 minutes, stirring occasionally. Add more water if they drop too much. At the end, mix a tablespoon of flour with water in a plate, taking care not to make lumps. Add over mushrooms and simmer until thickened. Then add salt, if necessary, and at the end add the finely chopped green parsley.

Chop an onion - scales, and harden in oil (olive or sunflower). Then add the mushrooms, one at a time, stirring constantly. They will leave water and will decrease, given the fact that the ghebele, like the mushrooms, contain 80% water. Leave for about 20 minutes, stirring constantly, until the water drops completely. Then add salt to taste, pepper and paprika. Peel the garlic (about 4 cloves) and chop the green parsley. Crush the garlic, mix in a cup with a little salt and oil, and, after turning off the heat, place over the mushrooms, stirring well. At the end, add chopped green parsley.

Serve with polenta.

If you don't want to puree, you can boil the potatoes in their skins, leave them to cool, then cut them into thin slices and place the layer of potatoes with the hardened mushrooms.

For this recipe I prepared a little couscous that I boiled in salted water and homemade vegeta. Then I pan-fried, in a little oil, mushrooms with onion and garlic. We also added dehydrated tomatoes, because we really like them, but also raw zucchini. A combination of very tasty ingredients came out. And the couscous added at the end gave more satiety. But you could add rice instead of couscous, or even pasta.

It is a very consistent salad recipe that can even be the basis of the package from work.

Mushroom dish with zucchini and couscous

INGREDIENTS

  • 200 gr couscous
  • 250 ml of water
  • 1 teaspoon homemade vegeta
  • salt and pepper
  • 500 gr mushroom mushrooms
  • 1 onion
  • 3 cloves of garlic
  • 50 ml oil
  • 5-6 pcs. dehydrated tomatoes
  • 1 raw zucchini
  • parsley and green dill

METHOD OF PREPARATION

We start by boiling water in which we add homemade vegetables, a pinch of salt and a pinch of pepper. Let the water boil for 1 minute, to give off the aroma of dried vegetables. Then pour it over the couscous and cover the bowl.

While the couscous is hydrated, we prepare the other ingredients.

Heat the oil in a deep frying pan. Finely chop the finely chopped onion and garlic, then add the sliced ​​mushrooms. Let the mushrooms penetrate and leave their juice in the pan, then add the dehydrated tomatoes, cut smaller. We will not add salt anymore, because the tomatoes are quite salty. When the tomatoes penetrate, add the zucchini cut into quarters, then sliced ​​thinner.

At the end, when the zucchini penetrates a little, add the hydrated couscous and mix the ingredients lightly.

I haven't added any other spices, but you can add whatever spices you prefer. I seasoned the mushroom dish with zucchini and couscous, at the end, with green parsley and a few sprigs of green dill.


Fasting food with pleurotus mushrooms: PREPARATION

This is how we prepare a fasting dish with pleurotus mushrooms. They can be stored in the fridge, in a paper or plastic bag for up to a week. For starters, cut the mushrooms into large pieces. Peel a squash, grate it and slice it. Garlic is cleaned, washed and finely chopped.
Put the oil in a large diameter pan. When the oil is hot, add the butter. Then add the mushrooms and lightly fry for 5 minutes, stirring constantly with a wooden spoon. Add the previously prepared onion and garlic, then simmer for about 5 minutes.

While mixing, add the white wine. In the near future, this fasting dish with pleurotus mushrooms will be ready. After mixing well, season with salt, a mixture of white, green, black pepper and paprika according to preference. Allow the mixture to simmer for about 3 minutes.

Meanwhile, wash the parsley, finely chop and add to the prepared mixture. Bring to a simmer for about 1 minute. Serve with wholemeal bread toast. The ingredients are required for 4 servings, and the cooking time is 30 minutes. Good appetite!

Ingredients

  • 1 onion (75 g)
  • 1 teaspoon salt (25 g)
  • 5 cups mushrooms (500 g)
  • 1/2 cup almonds (50 g)
